Easy Cheese Stuffed Mushrooms image

These cheese and garlic stuffed mushrooms are simple to put together and easily adapt to your favorite cheeses. We love using a sharp cheddar, but mozzarella, Swiss, Gruyere cheese, or even creamier cheeses like feta, goat, and brie will all work. Of course, a combination of cheeses is a great idea, too!

Yield Makes 20 stuffed mushroom caps

Number Of Ingredients 10

20 white button or cremini mushrooms (about 10 ounces)
1 tablespoon olive oil
1 tablespoon butter
1/2 cup chopped onion (half medium onion)
2 tablespoons minced garlic (4 to 5 cloves)
2 teaspoons chopped fresh rosemary or thyme, see notes for parsley
2 ounces shredded cheese like sharp cheddar, mozzarella, Swiss or a combination
3 tablespoons breadcrumbs (use panko or regular breadcrumbs)
Salt and fresh ground black pepper
1 tablespoon chopped fresh parsley or chives for serving, optional

Steps:

  • Heat oven to 375° degrees Fahrenheit.
  • Using a damp paper towel, brush all dirt from the mushrooms. Remove the mushroom stems. Cut away and discard any hard bits of the stems, then finely mince them.
  • Add the mushroom caps to a rimmed baking sheet or sizeable oven-safe skillet that fits the mushrooms in one layer. Toss them with a tablespoon of olive oil and lightly season with fresh ground black pepper. Arrange them cavity-side-up so that they are ready to be stuffed.
  • Melt butter in a skillet over medium heat. Add the onions, chopped mushroom stalks, and a pinch of salt. Cook, occasionally stirring, until the onions smell sweet and are soft, about 5 minutes.
  • Add the garlic and herbs, then cook for another minute or until the garlic is fragrant. Before the garlic begins to brown, scrape the mixture into a bowl and set it aside to cool.
  • Add the breadcrumbs to the same skillet. Place it over medium-low heat, and then cook, stirring, until they are lightly toasted; about one minute.
  • Stir the cheese into the onions and garlic mixture, then divide the filling between the mushroom caps. Sprinkle the toasted breadcrumbs on top.
  • Bake the mushrooms until the cheese has melted and the mushrooms have softened; 15 to 20 minutes.
  • Serve with chopped fresh herbs and freshly ground black pepper on top.

10-12 button mushrooms cleaned and stems removed
1/4 cup bleu cheese crumbles
2 teaspoons Fiore Tuscan Herb Olive Oil
2 teaspoons chopped fresh Italian parsley
1 teaspoon chopped fresh oregano
3 basil leaves, chopped
1/4 teaspoon sea salt
1/8 teaspoon cracked black pepper

Steps:

  • Preheat oven 350 degrees Clean and remove stems from mushrooms. Place on a pan and bake 5 minutes. Meanwhile, prepare the filling. Mix the cheese and olive oil. Chop fresh parsley, oregano and basil. Mix herbs with the cheese and season with salt and pepper. Remove the mushrooms from the oven and drain excess liquid from the mushrooms and pan. Stuff each mushroom with about 1 to 1 1/2 teaspoons of the filling. Return to the oven and bake 10 minutes. Serve immediately.

  • Preheat broiler. Remove stems from mushrooms; chop stems. Cook and stir stems and onions in butter in small skillet on medium heat until tender.
  • Add blue cheese and cream cheese; mix well. Spoon evenly into mushroom caps; place on rack of broiler pan.
  • Broil 2 to 3 min. or until golden brown. Serve warm.

I accidentally came up with this recipe when one of my vegetarian friends showed up to my all meat BBQ. Ever since then it has been a hit at every party and the most requested appetizer! If you double the recipe it can make about 100 stuffed mushrooms. Best served warm!

2 tablespoons olive oil
2 cups shredded hash brown potatoes
1 cup chopped fresh spinach
⅓ cup sour cream
¼ cup shredded sharp Cheddar cheese
¼ cup crumbled blue cheese
2 tablespoons diced jalapeno peppers, or more to taste
1 teaspoon dried minced onion
¾ teaspoon garlic powder
½ teaspoon onion powder
½ teaspoon sea salt
2 tablespoons shredded sharp Cheddar cheese, or more to taste

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Line a rimmed baking sheet with parchment paper.
  • Clean mushrooms and brush with olive oil.

This is my version of stuffed mushrooms. I went looking for a recipe and couldn't find anything that fit the occasion. You can always leave the Blue Cheese out, just add a bit more cream cheese. Ive never measured before, so if something is off, please let me know!

3 (8 ounce) containers button mushrooms
4 slices bacon
1/4 cup yellow onion, finely minced
1 garlic clove, minced
3/4 cup seasoned bread crumbs
5 ounces cream cheese, softened
3 ounces blue cheese
4 green onions, sliced thin

Steps:

  • Clean mushrooms and remove the stems from the caps, set stems aside and place mushroom caps top side down.
  • Chop Bacon into 1/4 inch by 1/4 inch squares and place in saute pan. Cook until crispy. Remove bacon and set aside.
  • Chop the stems finely,and add to the bacon fat along with the onion and garlic. Saute until the mushrooms release their liquid and the bottom of the pan is dry.
  • Add breadcrumbs and stir to combine. Remove from heat and let cool.
  • In a seperate bowl cream cheeses and green onions.
  • Add the mushroom mixture and mix well.
  • To stuff mushrooms I place the mix into a large plastic zip top bag, and cut off the corner. Sqeeze enough mix into the caps to fill the hole and make a rounded top.
  • Bake in a 350 degree oven for 15 minutes.

1/2 pound sliced baby portobello mushrooms
1 tablespoon Worcestershire sauce

1 beef tenderloin roast (4 pounds)
3/4 cup crumbled blue cheese, divided
1-1/2 cups french-fried onions
Additional French-fried onions, optional

Steps:

  • Preheat oven to 425°. In a small skillet, heat butter over medium-high heat. Add mushrooms and Worcestershire sauce; cook and stir until mushrooms are tender, 6-8 minutes. In a small bowl, mix mustard, pepper, oil and salt., Cut lengthwise through the center of roast to within 1/2 in. of bottom. Open roast and cut lengthwise through the center of each half to within 1/2 in. of bottom. Open roast flat; cover with plastic wrap. Pound with a meat mallet to 3/4-in. thickness. , Remove plastic. Spread mushrooms down center of roast to within 1/2 in. of ends; top with 1/2 cup cheese and onions. Starting at a long side, roll up jelly-roll style; tie at 1-1/2-in. intervals with kitchen string. Steps:

  • Put mushroom stems in a food processor and process until well minced.
  • Add to the softened bleu cheese.

  • Place on baking sheet and bake at 350 for 20- 30 minutes.
