1 cup sugar
1/4 cup canola oil
2 large eggs
1 teaspoon vanilla extract
1/2 cup all-purpose flour
2 tablespoons baking cocoa
1/2 teaspoon salt
1/2 cup chopped black walnuts

Steps:

  • In a small bowl, beat sugar and oil until blended. Beat in eggs and vanilla. Combine the flour, cocoa and salt; gradually add to sugar mixture and mix well. Stir in walnuts. , Pour into a greased 8-in. square baking pan. Bake at 350° for 30-35 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack.

10 ml vegetable oil, for brushing
30 g flour, for sprinkling
55 g chocolate, broken into pieces
70 g butter
180 g caster sugar
70 g self raising flour
1 pinch salt
2 eggs
1/2 teaspoon vanilla extract
55 g walnuts

Steps:

  • Pour a few drops of oil into a square cake tin.Sprinkle the tin with a little flour. Set aside.Put the chocolate and butter into a heatproof bowl.Put a little water in a saucepan and heat gently until it simmers. Stand the bowl over the water making sure it does not touch the hot water.Turn the heat down to medium. Using a wooden spoon,stir the chocolate and butter until it has melted. Remove the pan and stir in the sugar ,keep on stirring ocasionally.Set aside.
  • Sieve the flour and salt together into a large mixing bowl. Break the egg into a small mixing bowl.Pick out any pieces of egg shell that have fallen into the bowl. Beat the egg lightly with a fork until the yolk and the white are mixed together.Add the vanilla extract and set aside.
  • On a chopping board,roughly chop the walnuts using a kitchen knife.Set aside.
  • Add the chocolate mixture,beaten eggs and walnuts to the flour.Mix well until smooth,using a wooden spoon.Spoon the mixture into the prepared tin and level the surface with a palette knife.
  • Place the tin in the oven and bake for 35-40 minutes or until the brownies are well risen.Wearing oven gloves, take the tin out of the oven. Leave the brownies in the tin for about 5-10 minutes or until almost cold. Using a kitchen knife, carefully cut the brownies into 12 bars.Carefully remove the brownies from the baking tin using a palette knife.

One of my favourites when I went to Grandmama's home for the holidays. She always had a tiny glass of wine waiting for me along with these brownies. Grandmama has passed now and I don't get back to France as often as I wish now, so in tribute to her " Pour que tu saches. 2 cups brown sugar, packed
3/4 cup butter, softened
4 ounces baking chocolate, softened in microwave
4 eggs
1 teaspoon vanilla extract
1 cup all-purpose flour, sifted with
1/2 teaspoon baking powder
1/2 teaspoon salt
1 cup black walnut, lightly toasted and chopped

Steps:

  • Heat oven to 325 degrees.
  • Lightly grease a loaf pan.
  • In a medium mixing bowl with an electric mixer, cream the sugar, butter and chocolate.
  • Beat in eggs, one at a time, add vanilla.
  • Hand stir in flour mixture then the nuts.
  • Pour mixture into loaf pan.
  • Bake for 30- 35 minutes.
  • Cool on wire rack.
  • Cut into slices then halves.

4 eggs
1 tablespoon vanilla
1 1/4 cups flour
1/2 teaspoon salt
1/8 teaspoon baking powder
1 cup hammons black walnut
1 cup hershey semi-sweet chocolate chips
1/4 cup hersheys semi-sweet chocolate chips
2 tablespoons milk
black walnut ice cream (optional)

Steps:

  • Preheat oven to 350°F.
  • Grease and flour a 10 1/2 x 15 1/2 x 1 inch jelly roll pan.
  • In a large mixing bowl, combine butter, cocoa, sugar, eggs and vanilla; blend well.
  • Stir together flour, salt and baking powder.
  • Stir into cocoa mixture until smooth.
  • Add black walnuts and mini kisses.
  • Spread evenly in the prepared pan and bake 25 minutes on middle oven rack.
  • Cool before cutting.
  • Optional: individually warm cut brownies slightly before serving.
  • Makes 3 to 5 dozen.
  • Topping: Melt mini kisses over low heat, stirring continually.
  • Stir in milk.
  • Drizzle over warm brownies just before serving.
  • If desired, top with black walnut ice cream.
