BLACK CHERRY POPSICLES



Black Cherry Popsicles image

These popsicles are easy to make as well as healthy. They contain fresh, raw black cherries and only two other ingredients: lime juice is added as a flavor enhancer, and honey for a touch of sweetness. Kids of all ages will enjoy these refreshing, fuschia gems! (Note: Cooking time includes time needed for the popsicles to freeze solid).

Yield 4 Popsicles (4-inch tall x 1/2-inch diamater)

Number Of Ingredients 3

2 cups black cherries, pitted
2 tablespoons lime juice
2 tablespoons honey

Steps:

  • Place all ingredients in a 5-quart food processor. Using a chopping blade, pulse until mixture is coarsely chopped. Then process continuously until smooth and frothy.
  • Using a wire mesh sieve, strain mixture to separate any cherry skins or chunks to reach a smoother consistency.
  • Pour mixture into popsicle mold and freeze for 3-5 hours or until frozen solid.
  • To release popsicles, carefully run warm water only over the bottom of the mold. Gently twist and pull the popsicles out of the mold.
  • Enjoy!

  • Place a large mixing bowl in the fridge to chill to use the next day for the whipped cream. If you forget, no worries - just make sure the cream is very cold.
  • Add the cherries and 1/4 cup coconut water or filtered water to a blender. Blend until pureed and no chunks remain. Set aside.
  • Remove the chilled mixing bowl from the refrigerator. Using a mixer on low speed, whip the cream, vanilla and raw honey for about 30 seconds, then increase speed to medium for about 1 to 1 1/2 minutes, or until the cream has become thick and fluffy and looks like whipped cream.
