1 tablespoon vegetable oil
1 onion, chopped
4 cups tortilla chips
6 large eggs
1 (15 ounce) can black beans, rinsed and drained
2 cups chipotle salsa
½ cup crumbled queso fresco
¼ cup diced red onion
1 avocado, sliced
2 tablespoons chopped fresh cilantro

Steps:

  • Heat oil in a large skillet over medium-high heat until it shimmers. Add chopped onion and cook until it softens slightly, about 5 minutes. Add tortilla chips. Add eggs to the pan and stir around with the chips until almost set, 3 to 4 minutes. Pour in black beans and salsa. Stir to combine and heat through, about 5 minutes.
  • Top chilaquiles with queso fresco, red onion, avocado, and cilantro. Serve immediately.

Sure, you can buy salsa in a jar, but our homemade version is bursting with the flavors of juicy tomatoes, crisp red onions, and the freshness of chopped cilantro. You could also use a pint of fresh, ripe cherry or grape tomatoes in place of the regular tomatoes. Just halve or quarter them before adding to the mix. If you like things spicy, sneak a minced jalapeño or serrano chile into this mix. A squeeze of fresh lime juice is a nice way to bring all the flavors together. Stir this salsa into ground meat for a chili starter, spoon it atop your plate of scrambled eggs, or use it to garnish every taco, burrito, and nacho before devouring.

19 oz Canned black beans rinsed and drained
14.5 oz Canned crushed tomatoes fire-roasted, drained
2 medium Fresh tomato(es) chopped
0.5 cup(s), sliced Uncooked red onion(s) chopped
0.25 cup(s) Cilantro chopped
0.5 tsp Table salt
8 medium Fat free flour tortilla(s)
1 spray(s) Cooking spray or enough to coat tortillas
2 tsp Chili powder

Steps:

  • Preheat oven to 375°F.
  • In a medium bowl, combine beans, tomatoes, onion, cilantro and salt; set aside. (Note: If you cannot find fire-roasted tomatoes, substitute any type of canned crushed tomatoes, with or without additional flavors.)
  • Slice tortillas into 8 triangles each. Place on 2 nonstick baking sheets and lightly coat with cooking spray; sprinkle with chili powder. Bake until crisp and golden, about 10 minutes. Yields 8 chips and about 1/2 cup of salsa per serving.

1 pound ripe tomatoes
1/2 cup red onion, minced
1/4 cup cilantro, finely chopped
1 jalapeño pepper
15-ounce can black beans (or 1 1/2 cups cooked or Instant Pot black beans)
1 lime (2 tablespoons juice)
1/2 teaspoon kosher salt, plus more to taste

Steps:

  • Dice the tomatoes. Mince the red onion. Finely chop the cilantro. Remove the ribs and seeds of the jalapeño pepper and finely chop it. Drain and rinse the black beans. Juice the lime.
  • In a bowl, add tomato, red onion, cilantro, jalapeño, black beans, lime juice, and kosher salt. Stir to combine, and add kosher salt to taste.

1 tablespoon canola oil
1 teaspoons chili powder
Salt and freshly ground black pepper
4 ears corn, shucked or 4 1/2 cups frozen or canned corn kernels
1 (28-ounce) can diced tomatoes, well drained
1 (15-ounce) can black beans, drained and rinsed
1/2 medium red onion, diced
1 jalapeno, seeds removed and diced
2 tablespoons chopped cilantro leaves
2 tablespoon lime juice
1 teaspoon, chopped garlic
15 corn tortillas
Canola oil spray

Steps:

  • For Salsa:
  • Set up grill or indoor grill pan over medium heat.
  • In a small bowl combine canola oil, chili powder, and salt and pepper, to taste. Brush corn with oil mixture. Place on hot grill and cook 10 minutes, turning frequently. Remove to a cutting board and let cool for a few minutes. When cool enough to handle, cut kernels from the cob.
  • In a large bowl combine tomatoes, beans, onion, jalapeno, cilantro, lime juice, garlic and grilled corn. Season with salt and pepper and mix well.
  • For Corn Chips:
  • Preheat oven to 400 degrees F.
  • Cut each tortilla into 8 triangular portions. Arrange in a single layer on sheet pans. Spray with canola oil cooking spray to help them crisp up, sprinkle with salt and bake until crisp and lightly browned about 10 minutes. Allow to cool and serve with salsa.
