Cauliflower with Cheese Sauce image

This is an easy recipe for cauliflower cheese but it's pretty versatile. You can use the cheese sauce with any vegetables you have handy. I often put a layer of cooked kale or broccoli on the bottom, then arrange the cooked cauliflower florets on top. You can change the flavor of the sauce by adding different cheeses you might have in your fridge. It takes a bit of elbow work to make the sauce but it's worth it. This is delicious served with roast beef or lamb.

1 head cauliflower, broken into florets
¼ cup butter
¼ cup all-purpose flour
1 ¾ cups 1% milk
2 ounces Parmesan cheese, grated
salt and ground black pepper to taste
2 ounces mature Cheddar cheese, grated

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • Place cauliflower in a large pot and pour in enough water to cover; bring to a boil and cook until tender yet firm to the bite, 8 to 10 minutes. Drain and transfer to a baking dish.
  • Melt butter in a small saucepan over low heat. Add flour and mix using a whisk or wooden spoon until smooth and mixture pulls away from the side of the saucepan, 2 to 3 minutes. Pour in milk, a little at a time, and whisk continuously until sauce is thickened but still pourable, 3 to 4 minutes.
  • Stir Parmesan cheese into sauce until melted; season with salt and pepper. Pour sauce over all of the cauliflower. Sprinkle Cheddar cheese over the top.
  • Bake in the preheated oven until cheese is golden brown, 20 to 25 minutes.

A head of cauliflower becomes browned, nutty, and so tender it's scoopable when roasted whole. Serve it with a stirred-together fresh-herb sauce, fragrant with cilantro and parsley.

1 large head cauliflower
3/4 cup extra-virgin olive oil
Coarse salt and freshly ground pepper
1/2 cup packed chopped fresh flat-leaf parsley
1/2 cup packed chopped fresh cilantro leaves and stems
1/2 teaspoon minced garlic
1 1/2 teaspoons Dijon mustard
2 tablespoons sherry vinegar

Steps:

  • Preheat oven to 450 degrees. Place cauliflower on a parchment-lined rimmed baking sheet. Brush with 1/4 cup oil; season with salt and pepper. Pull short sides of parchment over cauliflower and fold one end over other a few times to seal. Fold long ends of parchment under cauliflower to create a packet. Roast until knife-tender, about 40 minutes. Tear open parchment at top; roast until golden brown, 15 to 20 minutes more.
  • Stir together parsley, cilantro, garlic, mustard, vinegar, and remaining 1/2 cup oil in a small bowl to combine. Season with salt and pepper. Serve cauliflower warm, with sauce alongside.

3 tablespoons chopped scallions
2 cloves garlic, chopped
1/3 cup chopped parsley
4 anchovy fillets, drained and chopped
1/4 cup lemon juice
1 tablespoon balsamic vinegar
1/3 cup extra-virgin olive oil
2 tablespoons drained capers
1 head cauliflower, trimmed and cut into flowerets
Salt and freshly ground black pepper

Steps:

  • Combine scallions, garlic, parsley, anchovies, lemon juice, balsamic vinegar and olive oil in a food processor or blender and process until finely minced (do not make a smooth puree). Stir in the capers and transfer to a serving bowl.
  • Steam cauliflower until crisp-tender, about five minutes. Season with salt and pepper and transfer to a serving dish. Serve the cauliflower warm or at room temperature with the green sauce on the side
