1-Hour Soft and Buttery Dinner Rolls image

My favorite 1-Hour Soft and Buttery Dinner Rolls recipe is easy to make by hand or with a stand mixer and absolutely heavenly served warm out of the oven.

Number Of Ingredients 8

1 cup water
2 tablespoons melted butter
1/2 cup milk
2 tablespoons honey
1 tablespoon active-dry yeast*
3 1/2 to 4 cups all-purpose flour
1 teaspoon fine sea salt
extra melted butter, for brushing on top

Steps:

  • Heat the oven to 400°F. Grease a 9 x 13-inch baking dish with cooking spray, and set aside.
  • In a microwave-safe bowl (or saucepan, see below), stir together the water and melted butter, then add in the milk and honey and stir until combined. Microwave the mixture for 1 minute and give it a stir. Continue microwaving the mixture in 15 second intervals, until it reaches 110°F. It will be warm but not hot to the touch. (*Alternately, you can heat the mixture over medium-low heat in a saucepan until it reaches 110°F.)
  • Pour the liquid mixture into the large bowl of a stand mixer. Sprinkle the yeast evenly on top, give it a quick stir with a fork to combine, and let the yeast activate for 5 minutes until it is foamy.
  • Add in 3 1/2 cups of flour (not all of the flour) and the salt.
  • (See alternate instructions in the notes below for how to knead the dough by hand.) Use the dough-hook to mix in the dry ingredients on medium-low speed until combined. If the dough is sticking to the sides of the bowl, add in 1/4 cup more flour at a time until the dough pulls away from the sides of the bowl and is only slightly sticky to the touch. (Only use up to 4 cups of flour total.) Continue mixing on low speed for 4-5 minutes until the dough is smooth. Then form the dough into a ball with your hands and transfer it to a greased bowl.
  • Cover the bowl with a damp towel or paper towel, and let it rise briefly for 15 minutes.
  • Gently punch the dough down and divide into 15 equal-sized pieces. Form each piece into a ball and place the dough balls in the greased baking dish. Cover the dish again with a damp towel or paper towel and let the dough balls rise for an additional 15-20 minutes.
  • Uncover and bake for 15 minutes, or until the rolls are lightly golden brown on top and cooked through.
  • Transfer the baking dish to a wire cooling rack and brush the tops of the rolls with melted butter.
  • Then serve warm and enjoy!

2 1/2 cups flour
1 package fast rising yeast
5 tablespoons instant nonfat dry milk powder
2 tablespoons sugar
1/2 teaspoon salt
3/4 cup very warm water
2 tablespoons olive oil
3 tablespoons melted butter

Steps:

  • In a food processor, mix together the flour, yeast, dry milk, sugar and salt.
  • Add water and oil and process until a thick sticky dough forms.
  • Let stand for 5 minutes.
  • Butter an 8" round cake pan.
  • Turn dough out gently onto a floured board.
  • With a floured knife, cut the dough into quarters.
  • Cut each quarter into quarters and shape the dough into balls, adding flour to prevent stickiness.
  • Place dough pieces close together into the prepared pan.
  • Cover and let rise in a warm place for 25 minutes or until rolls are puffy.
  • Preheat oven to 400°.
  • Drizzle the melted butter over the rolls.
  • Bake for 20 minutes or until golden.

FLUFFY ONE HOUR YEAST ROLLS

3 1/2-4 1/2 cups flour
3 tablespoons sugar
5 teaspoons yeast
1 teaspoon salt
1 cup milk
1/2 cup warm water
1/4 cup butter

Steps:

  • Preheat oven to 425.
  • In a large bowl combine 1/2 of the flour with sugar, yeast and salt. Stir until mixed. In microwave heat milk until just under the boiling point. Pour into dry mixture. Melt butter, combine with water and add to flour mixture; stir until combined. Add remaining flour while stirring until dough leaves the sides of bowl and forms a ball. Turn dough out on a lightly floured board and knead in enough remaining flour until dough is smooth and elastic.
  • Wash out bowl and grease inside with oil. Placedough in greased bowl to rise. Cover with plastic wrap and a towel. Run 2 inches of very warm water in sink. Place bowl in water to speed rising. Allow to rise for 15 minutes.
  • Divide and shape dough as desired. Cover and let rise another 15 minutes. Bake at 425 degrees for 12-15 minutes or until golden brown.

Number Of Ingredients 8

3 1/2 - 4 c bread or all purpose flour you might even have to use up to 4 1/2 cups(i use king arthur bread flour only)
1 Tbsp fast rise yeast (rapid rise)
1/4 c sugar
1 1/2 tsp salt
2/3 c milk (i use whole milk)
3/4 c water cold out of faucet
4 Tbsp butter diced into small cubes (salted or unsalted)
2 tsp lemon juice

Steps:

  • 1. Preheat oven to 180 degrees. In the bowl of an electric stand mixer whisk together 4 cups flour, sugar, yeast and salt.
  • 2. In a microwave safe bowl add milk, water and butter and heat in microwave on HIGH power until it reaches 115 degrees on a thermometer, about 1 minute 15 seconds. Stir to make sure butter is soft, you don't want it melted completely. Add lemon juice and give a light stir.
  • 3. Pour milk mixture into dry mixture in bowl of electric stand mixer along with lemon juice. Set mixer with dough hook attachment then set mixer on low speed and gradually increase speed to med. low and let mix 4-5 minutes until smooth and elastic add additional flour as necessary dough should be pillowy and soft and slightly stick to your hands but will come off of them clean..... not real sticky
  • 4. Cover bowl with plastic wrap or towel and let sit 5 minutes.
  • 5. line a 9x13 cake pan with parchment paper. Or you can butter the pan for a crunchier bottom on your roll.
  • 6. Remove dough to a floured surface and press into a rectangle about 3/4 to 1 inch thick. Use pizza cutter, dough blade or knife and cut into 2 inch squares or close to it. You can tell by the photo you will get all sizes that's one thing I love about these they are not perfect just awesome tasting!
  • 7. After you have cut your rolls place in pan you will have to just move them around until you get a good fit in the pan. Mist tops with water or wet hands and pat water onto tops of rolls.
  • 8. Place pan UNCOVERED in oven and turn it OFF (very important on both :) Set timer for 20 mins and let fast rise
  • 9. Remove from oven after the 20 minutes and just let them hang out on counter while you pre-heat oven to 375 degree.
  • 10. Bake rolls for 13-15 minutes until golden brown. Brush tops with melted butter and ENJOY!

1 package (1/4 ounce) active dry yeast
1-1/2 cups warm water (110° to 115°)
1 can (12 ounces) evaporated milk
2 eggs
1/3 cup sugar
1/4 cup butter, melted
2 teaspoons salt
8 to 8-1/2 cups all-purpose flour
Additional melted butter, optional

Steps:

  • In a large bowl, dissolve yeast in a warm water. Add milk, eggs, sugar, butter, salt and 4 cups flour until smooth. Add enough remaining flour to form a soft dough. Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1-1/2 hours. Punch dough down; divide into four portions. Shape each into eight rolls; place 20 rolls in a greased 13-in. x 9-in. baking pan. Place 12 rolls in a greased 8-in. square baking pan. Cover and let rise in a warm place until doubled, about 20-30 minutes. Bake at 375° for 15-20 minutes or until golden brown. Brush with butter if desired. Serve warm.
