Made in a flash, bake a big batch of these black bean tortilla chips with chia. Just two wholesome ingredients for a healthy on-the-go snack in 130kcal.

220 g of Dried Black Beans
1 tsp of Salt
30 g of Chia Seeds
0.5 tsp of Cumin Powder
0.5 tsp of Garlic Powder
2 tbsp of Extra Virgin Olive Oil
200 mL of Water
Sesame Seeds to taste
Ground Flaxseeds to taste
Pumpkin Seeds to taste

Steps:

  • In a powerful food processor, blitz the dried black beans for a few minutes until they turn into a fine flour.
  • In a mixing bowl, combine bean flour, salt, chia seeds, cumin powder, garlic powder, oil, and water. Stir until you have a dense dough and then leave it to set for 10 minutes.
  • Thinly roll out the bean dough in between two sheets of baking paper. Sprinkle the mixture with seeds and slice it into triangle shapes. Bake the chips for 30 minutes at 150°F (300°F), then flip them and toast them for a further 10 minutes. Allow the baked bean slab to cool down before cracking it into tortilla chips.

½ teaspoon salt

Steps:

  • Combine beans, water, lemon juice, garlic, cumin, chili powder, onion powder, and salt in a food processor; process until thick and smooth, adding more water if needed to reach desired thickness.
  • Chill for at least 1 hour before serving.

2 green onions, chopped
2 tablespoons mild green chilies, chopped

Steps:

  • Process all ingredients except green onions and chilies in a blender or food processor until smooth.

2 medium tomatoes

  • Spread 2 cans of refried bean dip in a 9" by 13" pan.
  • Blend together 1 cup of sour cream, 1 cup of mayonnaise, and 1 package of taco seasoning and spread on top of bean dip.
  • Sprinkle with 2 cups of shredded cheese.

2/3 cup water
1/3 cup quinoa, rinsed
1 can (15 ounces) black beans, rinsed and drained
1 jar (16 ounces) salsa, divided
1 cup crushed baked tortilla chip scoops
2 tablespoons reduced-sodium taco seasoning
8 whole wheat hamburger buns, split
8 lettuce leaves
8 slices tomato
8 slices red onion

Steps:

  • In a small saucepan, bring water to a boil. Add quinoa. Reduce heat; simmer, covered, 12-15 minutes or until liquid is absorbed. Remove from heat; fluff with a fork., In a large bowl, mash black beans. Add 1 cup salsa, tortilla chips, taco seasoning and cooked quinoa; mix well.
