MICROWAVE PEANUT BRITTLE? NO KIDDING.
My sister sent this to me, she said it tastes just like our grandmother's recipe. I thought she was joking. Turns out it makes darn decent peanut brittle, though not as good as our grandmother's. And, in honor of my grandmother, I'll post her original recipe next.

Steps:
- MICROWAVE sugar and corn syrup in large microwaveable bowl on HIGH for 5 min., stirring after 3 min.
- Stir in peanuts. Microwave an additional 3-5 min. or until golden brown.
- ADD butter and vanilla; stir until butter is completely melted. Microwave 1 min.
- Stir in baking soda (mixture will foam).
- SPREAD mixture onto greased baking sheet or silicone sheet. Cool completely. Break into pieces.

- Spray a baking sheet and a wooden spoon with cooking spray.
- Mix sugar and corn syrup together in a microwaveable bowl safe for high temperatures.
- Heat sugar mixture in microwave on high for 5 minutes.
- Stir peanuts and butter into sugar mixture. Heat in microwave until mixture becomes a caramel color, 3 to 4 minutes.
- Mix baking soda and vanilla extract into syrup until smooth and foam has dissipated. Spread candy onto the prepared baking sheet using the sprayed wooden spoon. Work quickly; candy hardens fast. Let stand until cool. Break into pieces to serve.

BEST EVER MICROWAVE PEANUT BRITTLE
Note your microwave needs to be 750 to 950 watt. If your microwave is higher need to lower your cooking times and if your microwave is less you will need to increase your cooking time. I'm sorry I did not update this sooner.

- Add peanuts mix well and cook on high for 3 minutes.
- Add butter and vanilla and cook on high for 2 minutes.
- Add baking soda and mix well, mixture will foam.
- Spread on well butter foil.
- when completely cooled break in to pieces.
- Store in air tight container.
- NOTE: Any type of nut can be used in place of the peanuts.
EASY NO-FAIL MICROWAVE PEANUT BRITTLE
I have been making this since microwaves first came out, it's so easy and really a no-fail recipe, you may use other kinds of nuts if desired --- *warning* this is very habit-forming :)

- Microwave on high for 5 minutes.
- Stir in peanuts; microwave on high for 2-3 mins longer, or until peanuts and syrup are lightly browned.
- Add butter, vanilla and baking soda.
- Mix until light and foamy (be careful, syrup is HOT!).
- Pour quickly onto a buttered cookie sheet, and spread to desired thickness.

- Butter a cookie sheet. Combine sugar and corn syrup in a 2 quart glass bowl and microwave on high 4 minutes. Stir in peanuts and microwave on high 3 1/2 minutes more, then stir in butter and vanilla and microwave for 1 1/2 minutes.
- Stir in baking soda until light and foamy. Pour onto cookie sheet and spread thin. Cool completely and break into pieces and serve.

MICROWAVE PEANUT BRITTLE
This puts store bought peanut brittle to shame. I prefer to use the skinless peanuts because I think the skins are bitter. The amount listed below for the peanuts is if you're using Virginia peanuts. If you're using Spanish peanuts then reduce the amount of peanuts to 1 1/2 cups. Be sure to watch the candy carefully the first time you make it.

- Combine peanuts, sugar, corn syrup, and brown sugar in a large microwave safe bowl. Mixture will be quite gummy.
- Microwave on high power for 2 minutes and then stir.
- Continue microwaving the peanut brittle a couple minutes at a time until the peanuts are a nice roasted brown color. Be sure you're looking at the peanuts themselves and not the syrup surrounding them. The time this takes will vary according to your microwave. When the syrup starts to get really hot you may want to check every minute or less to prevent it from burning.
- After the peanuts are cooked quickly stir in the butter, vanilla, and baking soda.
- Pour the candy out on to a sheet of aluminum foil and spread it as thin as you can get it.
- Let the candy cool completely before breaking it into pieces.

- Grease a baking sheet, and set aside. In a glass bowl, combine peanuts, sugar, corn syrup, and salt. Cook in microwave for 6 to 7 minutes on High (700 W); mixture should be bubbly and peanuts browned. Stir in butter and vanilla; cook 2 to 3 minutes longer.
- Quickly stir in baking soda, just until mixture is foamy. Pour immediately onto greased baking sheet. Let cool 15 minutes, or until set. Break into pieces, and store in an airtight container.
