COUNTRY HAM AND CHEESE BISCUIT BITES



Country Ham and Cheese Biscuit Bites image

2 1/4 cups self rising flour
1 tsp granulated garlic
1 tsp ground mustard
1/2 tsp onion powder
1/4 tsp cayenne
1/3 cup frozen unsalted butter (grated)
1 1/2 cup buttermilk (well shaken)
2 cups shredded sharp cheddar cheese
1 cup chopped fully cooked country ham
2 Tbsp chopped fresh chives (plus additional for garnishing)
2 Tbsp melted butter (to brush tops)
sweet hot mustard or maple syrup for serving

Steps:

  • Preheat oven to 400°F. Line 2 large baking sheets with parchment paper. Set aside.
  • In a medium size mixing bowl, use a whisk to sift together flour, garlic, mustard, onion powder and cayenne. Add grated butter, mixing until evenly distributed. To the bowl add buttermilk, mix well.
  • Once dough is formed, add cheese, ham and chives. Use a non stick spatula to gently mix through the dough until fully combined.
  • Drop by tablespoon onto pan, leaving 2 inches between. Brush tops with melted butter. Bake for 20-22 minutes or until lightly golden. (Adjust bake time according to size)
  • Brush again with melted butter and serve with sweet hot mustard or maple syrup, if desired.

2 cups Bisquick
3/4 cup milk
1 (4 ounce) can deviled ham
1/2 teaspoon horseradish (it says 4 teaspoon )
1/2 teaspoon Worcestershire sauce
1 teaspoon onion, minced
1 teaspoon mustard
3 tablespoons butter

Steps:

  • make biscuits
  • roll to 1/8 inch thick.
  • cut with 1 1/2 cutter.
  • spread filling on 1/2 biscuits
  • cut center out of top biscuits to make small hole.
  • brush with melted butter.
  • bake 450 degree oven for 12 minutes.

I started making these when I was first married, over 30 years ago. They are great appetizers for football or sporting event parties with many hungry people. I also make these for a quick dinner to serve with canned tomato soup.

10 slices ham (very thin slices)
6 ounces swiss cheese (10 1/2-inch cubes)
1 (6 ounce) package refrigerated biscuits

Steps:

  • Wrap each cube of cheese with one slice of ham.
  • Flatten a biscuit with palm of hand and wrap around the cheese and ham to enclose totally in a ball of dough.
  • Press edges of dough together securely and place seam side down on lightly greased cookie sheet.
  • Bake at 400 degrees for 8-10 minutes or until brown.
  • These can be made ahead and refrigerated until ready to bake, but baking time to should be increased for a couple of minutes, and they may need to be covered with foil to keep from excessive browning.
  • (You can also use smoked turkey instead of the ham, or vary the type of cheese.).
