VANILLA YOGURT RAISIN COOKIES

My newest love is vanilla yogurt covered raisins. This recipe was on the back of the bag I just bought.

Number Of Ingredients 10

1 1/4 cups flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup butter or 1/2 cup margarine, soft
1/3 cup brown sugar, packed
1/3 cup sugar
1 teaspoon vanilla
1 large egg
1 (8 ounce) package maria's yogurt-covered raisins (or Sun-maid)
1 cup pecans, chopped (optional)

Steps:

  • Heat oven to 350°F
  • Combine flour, baking soda and salt in small bowl.
  • Beat butter, brown sugar, sugar and vanilla in large bowl till creamy.
  • Add egg and beat well.
  • Gradually beat in flour mixture.
  • Stir in raisins and nuts.
  • Drop by tbsp on ungreased baking sheet.
  • Bake for 9-11 minutes till golden brown.
  • Cool on sheet 2 minutes.
  • Remove to wire rack.
  • Cool completely.
  • To make pan cookies: Spread dough in greased 9" square pan. Bake 350F 25-30 minutes.

These only require two ingredients and are so good for you. the perfect addition to any trail mix or as a movie night treat.

- thick real vanilla yogurt
- raisins

Steps:

  • Thicker brands of commercial yogurt dry best. you can individually dip them and put on the lightly oileddehydrator rack You can mic the two together and drop by spoonfuls onto a lightly oiled dehydrator rack. You can chop the raisins and mix with the yogurt and spread out onto lightly oiled Fruit Roll Sheet.
  • Dry in your dehydrator 8-16 hours at 135° until chewy. Remove from sheet while warm. Chill and store in refrigerator or freezer.
  • Optional: for fun sprinkle drops with chopped peanuts or coconut before drying.

1/3 cup sour cream or 1/3 cup yogurt
1 cup sugar
1 tablespoon light corn syrup
1 dash salt
1 tablespoon butter
1/2 teaspoon vanilla extract
2 cups nuts

Steps:

  • Combine sour cream / yogurt, sugar, corn syrup, and salt in a saucepan.
  • Bring to a boil. Reduce heat and stir constantly until mixture reaches soft ball stage.
  • Remove from heat and stir in butter and vanilla.
  • Stir in nuts.
  • Turn out onto wax paper and seperate with a fork. Allow to cool.

  • Place the nuts, oats, and flaxseed in the bowl of a food processor fitted with a steel blade, then blend until finely ground. Add the drained raisins, honey, vanilla extract, and salt. Pulse until a thick, sticky ball forms.
  • Remove the ball from the food processor, then roll into individual small balls, about 1 inch across. Sprinkle any desired toppings on individual plates, then roll the balls in the toppings to coat. Place balls on a parchment-lined baking sheet and freeze until no longer sticky. Transfer to an airtight container and store in the refrigerator or freezer.
