Mildly seasoned with fresh parsley and the flavors of garlic and onion, this stovetop side dish goes well with just about any main course.-Sandra Novotny, Windsor, Pennsylvania

1 tablespoon olive oil
1 can (14-1/2 ounces) sliced potatoes, drained
1 small onion, cut into thin wedges
2 teaspoons minced fresh parsley
1/2 teaspoon paprika
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
Pinch salt

Steps:

  • In a small skillet, heat oil over medium heat. Add potatoes and onion; cook and stir for 10 minutes or until lightly browned. Combine the parsley, paprika, garlic powder, onion powder and salt; sprinkle over potato mixture and toss to coat. Cook 5-10 minutes longer or until onion is tender.

BIRD'S SEASONED POTATOES



Bird's Seasoned Potatoes image

I've been making this recipe for years. It's very simple, flavorful, and great with ketchup. You can substitute the lard for an olive oil/butter mixture or just with vegetable oil. The taste will be significantly different, but still yummy. Amounts are estimated, so feel free to change to suit your taste. I posted this by request to the full recipe for my Recipe #330103.

2 tablespoons lard, more as needed (or bacon grease or goosefat)
6 medium red potatoes, washed and cubed 1 inch square
1 teaspoon paprika
1 teaspoon garlic powder
1/2 teaspoon kosher salt, ground
1/2 teaspoon onion powder
1/4 teaspoon black pepper
1 onion, chopped
1/2 green bell pepper (optional)
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
1/2 teaspoon dried marjoram

Steps:

  • Heat lard (or oil) in a large nonstick skillet over medium heat. Add potatoes, paprika, garlic powder, salt, onion powder, and black pepper. Toss to coat, cover, and let steam for 10-15 minutes or until potatoes are semi-soft, stirring occasionally.
  • Remove lid, add onion (bell pepper if using), and herbs. Toss to coat. increase heat to medium-high and cook an additional 10-15 minutes, turning occasionally until potatoes are cooked through and crispy browned on the outside. Serve with ketchup if desired.
  • OPTIONAL BAKE METHOD: Melt the fat, then mix all the ingredients together in a large bowl. Place onto a baking sheet in a single layer. Bake at 425°F for 45-60 minutes, turning/tossing occasionally.

12 to 14 small red potatoes
1/4 cup olive oil
1/4 cup butter, melted
1 teaspoon salt
1 teaspoon garlic powder
1 teaspoon dried basil
1/2 teaspoon dried thyme
1/2 teaspoon pepper

Steps:

  • Peel a strip from around each potato. Place potatoes in an ungreased 3-qt. baking dish. In a small bowl, combine the oil, butter and seasonings; drizzle over potatoes. , Bake, uncovered, at 350°, for 50-55 minutes or until tender, stirring every 15 minutes.

1/3 cup flour
1/3 cup parmesan cheese
1 teaspoon paprika
3 large potatoes
milk, enough for dipping
melted butter
16 ounces fat free sour cream or 16 ounces light sour cream
crumbled bacon (real or bits work fine too)
chives
1/2 teaspoon garlic powder

Steps:

  • In a large resealable plastic bag, combine flour, parmesan cheese and paprika.
  • Cut potatoes into thin wedges OR small bite size chunks.
  • Dip potato pieces in milk, then place in the bag of flour/cheese mixture.
  • Toss the bag to coat.
  • Place potatoes in a greased baking dish and drizzle with 2 tbsp of the melted butter.
  • Bake uncovered at 400 for 20 minutes.
  • Stir, turn potatoes, then drizzle with remaining butter and bake for an additional 20-25 minutes.
  • Serve with sour cream dip.

1 pound baby Yukon Gold potatoes, quartered
3 tablespoons fresh thyme leaves
3 garlic cloves, minced
1 tablespoon freshly ground pepper
1 teaspoon kosher salt
1 teaspoon ground allspice
1 Scotch bonnet pepper, seeded and minced, optional
2 tablespoons canola oil

Steps:

  • Preheat air fryer to 360°. In a large saucepan, bring 8 cups water to a boil. Add potatoes; cook, uncovered, just until water returns to a boil, about 5 minutes. Meanwhile, in a spice grinder, or with a mortar and pestle, combine thyme, garlic, pepper, salt, allspice and if desired, Scotch bonnet pepper; grind to a paste., Drain potatoes and pat dry. Transfer to a large bowl. Drizzle with oil; toss to coat. Stir in paste until potatoes are well coated. Place potatoes in greased air fryer. Cook for 8 minutes, shaking basket once. Increase temperature to 375°. Cook until fork-tender and crispy, 5-6 minutes longer, shaking basket once.
