Steps:
- In a medium bowl, combine the first 10 ingredients; mix well. Stir in raisins (dough will be stiff). Drop by tablespoonfuls onto baking sheets that have been coated with cooking spray. Bake at 375° for 8-10 minutes or until lightly browned.

LOW FAT CHEWY CHOCOLATE CHIP OATMEAL COOKIES
Steps:
- Preheat oven to 350°F; line two baking sheets with parchment paper or use a silpat.
- In a medium bowl, whisk together flour, baking powder, baking soda, salt and cinnamon.
- In a large bowl, with a mixer, cream together the butter and the sugars on medium speed.
- Add the egg, followed by the applesauce and vanilla extract.
- Working by hand, stir in the flour mixture and the oats until just combined and no streaks of flour remain; stir in the chocolate chips.
- Drop heaping tablespoonfuls (approx 1 tbsp each) of the dough onto prepared baking sheets, flattening each cookie slightly (I forgot to do this).
- Bake for about 10-12 minutes, or until cookies become light brown at the edges.
- Let cool on baking sheet for 3 or 4 minutes, then transfer to a wire rack to cool completely.
- Store in an airtight container so you don't eat them all in one sitting!

Steps:
- 1. Using a fork, smash the ripe bananas in a medium bowl.
- 2. Mix in applesauce and almond milk.
- 3. Blend in cinnamon and vanilla.
- 4. Stir in oats and raisins, just mixing until all ingredients are well incorporated.
- 5. Spoon onto cookie sheet by Tablespoon and bake in preheated oven at 350 degrees for 15 mins.

Steps:
- Beat butter in the bowl of a stand mixer (or using an electric beater) for about 30 seconds. Add sugars and beat until light and fluffy (pause to scrape down sides and bottom of bowl, if needed).
- Add eggs, one at a time, beating until combined.
- Stir in vanilla extract.
- In a separate bowl, whisk together flour, cornstarch, baking soda, salt, and cinnamon.
- Gradually add flour mixture to butter mixture until completely combined. Be sure to scrape the sides and bottom of the bowl so ingredients are well-mixed.
- Gradually stir in oats until completely combined. If using raisins or chocolate chips, stir them in at this point.
- Chill dough in refrigerator for 30 minutes.
- Preheat oven to 375F (190C) and prepare cookie sheets by lining with parchment paper.
- Drop cookie by rounded 2-3 Tablespoon-sized ball onto parchment paper, spacing at least 2" apart.
- Bake on 375F (190C) for 10-12 (edges should be slightly browned, centers may still be slightly underbaked but shouldn't be raw, they'll bake completely as they cool).
- Allow cookies to cool completely on cookie sheet before serving and enjoying.

BIG LOW FAT OATMEAL COOKIES
I found a lowfat oatmeal cookie recipe on foodfit.com and made some changes - added eggbeaters and light butter, rather than real eggs and full-fat butter - to make them even lower in fat/cholesterol. Don't overcook them - they will dry out. Add raisins or chocolate chips - both very yummy in these cookies. ENJOY!!!

- Preheat oven to 375°F; lightly spray two baking sheets with the cooking spray.
- In a large bowl, combine the flour, baking powder, baking soda and salt.
- In another bowl, cream the butter and both sugars together with an electric mixer. Beat until smooth, about 1 minute. Add the applesauce, egg and vanilla and mix until blended about 2 minutes. Add the flour mixture to the applesauce mixture and mix well together. Stir in the oats.
- Drop rounded tablespoonfuls onto the baking sheets about two inches apart.
- Bake until slightly golden, about 12-14 minutes.
- Remove from the oven and cool on for 5 minutes.

BIG FAT OATMEAL RAISIN COOKIES
These are chunky yet crunchy oatmeal raisin cookies with a wonderful natural sweetness and a hint of cinnamon. I like these a lot and hope so will you! Feel free to add some chopped nuts of your choice if you like (but make sure to add some more liquid to the dough then).

Steps:
- In a small bowl mix flour, baking soda, cinnamon and salt.
- In a big bowl cream butter with sugar. Add egg and honey and beat well.
- Little by little add the flour mixture. Knead into a dough (should stick together well but still be a bit crumbly).
- Fold in oatmeal and raisins.
- Shape the dough into balls of desired size (I make these big and fat as stated above--> balls the size of an egg). Place on a paper-lined baking sheet and flatten lightly.
- Bake in the preheated oven at 180°C (~350°F) for 15-20 minutes (will vary according to size of your cookies).
