BISQUICK CINNAMON BISCUITS image

Quick and easy cinnamon biscuits start with baking mix. Just four simple ingredients to this tasty breakfast.

3 cups baking mix (like Bisquick)
¾ to 1 cup whole milk (add ¾ mix and see if you need the rest.)
2 and ½ tablespoons granulated sugar
2 teaspoons ground cinnamon
2-3 tablespoons whipping cream
1 cup powdered sugar (sifted)
½ teaspoon vanilla extract

Steps:

  • Preheat your oven to 425°F..
  • Add the biscuit mix, milk, sugar, and cinnamon to a large bowl. Mix everything together until combined. Don't over-mix.
  • Drop the biscuits onto a baking sheet or large skillet about 1 to 2 inches apart. (I had mine in the photos about ½-inch apart and they touched each other when baking. I prefer to have them not touch.)
  • Bake at 425° for 12-15 minutes or until the biscuits turn golden brown. The size of your biscuits will determine cooking time. I used a ¼ cup spring release scoop for my biscuits.
  • Whisk the sifted powdered sugar, whipping cream, and vanilla extract in a medium mixing bowl.
  • When the biscuits are done, remove them from the oven and drizzle the glaze over them while they're still hot. Serve warm and enjoy!

2 teaspoons ground cinnamon
3 1/2 cups buttermilk biscuit mix
1 cup water
2 tablespoons salted butter (softened)
1/2 teaspoon vanilla extract
3 cups powdered sugar
1/4 cup whole milk

Steps:

  • Pre-heat the oven to 425° F.
  • In a small mixing bowl, mix together the sugar and cinnamon.
  • In a separate large mixing bowl, add the cinnamon sugar, biscuit mix, and water. Mix everything together well.
  • Drop the biscuits onto an un-greased baking sheet, about 1 to 2 inches apart.
  • Bake at 425° F for 8 to 11 minutes (oven times may vary), until the biscuits turn golden brown.
  • Meanwhile, mix up the icing in a large mixing bowl, combining the softened butter, vanilla extract, powdered sugar, and milk.
  • When the biscuits are done, remove them from the oven. While they're still hot, brush on the icing, and let it melt into each biscuit.
  • Serve immediately while warm.

This recipe will produce the biggest biscuits in the history of the world! Serve these gems with butter, preserves, honey, gravy or they can also be used as dinner rolls...you get the picture. The dough can also be prepared several hours, and up to a day ahead of time. If so, turn dough out onto aluminum foil that has been either floured, lightly buttered or lightly sprayed with cooking spray. Roll up foil until it is sealed, and refrigerate. Don't be surprised if your biscuits rise even higher because the baking powder has had more time to act in the dough. You may have to make a few batches before you get desired results: desired results equals huge mongo biscuits.

1 tablespoon baking powder
1 teaspoon salt
1 tablespoon white sugar
⅓ cup shortening
1 cup milk

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • In a large bowl, whisk together the flour, baking powder, salt, and sugar. Cut in the shortening until the mixture resembles coarse meal. Gradually stir in milk until dough pulls away from the side of the bowl.
  • Turn out onto a floured surface, and knead 15 to 20 times. Pat or roll dough out to 1 inch thick. Cut biscuits with a large cutter or juice glass dipped in flour. Repeat until all dough is used. Brush off the excess flour, and place biscuits onto an ungreased baking sheet.
  • Bake for 13 to 15 minutes in the preheated oven, or until edges begin to brown.

These cinnamon flavoured Christmas biscuits are great for getting the kids involved in cooking, and they will look great on the tree too

175g dark muscovado sugar
85g golden syrup
100g butter
3 tsp ground ginger
1 tsp ground cinnamon
350g plain flour, plus extra for dusting
1 tsp bicarbonate of soda
1 egg, lightly beaten
100g white chocolate
edible silver balls

Steps:

  • Heat the sugar, golden syrup and butter until melted. Mix the spices and flour in a large bowl. Dissolve the bicarbonate of soda in 1 tsp cold water. Make a well in the centre of the dry ingredients, add the melted sugar mix, egg and bicarbonate of soda. Mix well. At this stage the mix will be soft but will firm up on cooling.
  • Cover the surface of the biscuit mix with wrapping and leave to cool, then put in the fridge for at least 1 hr to become firm enough to roll out.
  • Heat oven to 190C/170C fan/gas 5. Turn the dough out onto a lightly floured surface and knead briefly. (At this stage the dough can be put into a food bag and kept in the fridge for up to a week.) Cut the dough in half. Thinly roll out one half on a lightly floured surface. Cut into shapes with cutters, such as gifts, trees and hearts, then transfer to baking sheets, leaving a little room for them to spread. If you plan to hang the biscuits up, make a small hole in the top of each one using a skewer. Repeat with remaining dough.
  • Bake for 12-15 mins until they darken slightly. If the holes you have made have closed up, remake them while the biscuits are warm and soft using a skewer. Cool for a few mins on the baking sheets, then transfer to a wire rack to cool and harden up completely.
  • Break up the chocolate and melt in the microwave on Medium for 1-2 mins, or in a small heatproof bowl over simmering water. Drizzle the chocolate over the biscuits, or pipe on shapes or names, then stick a few silver balls into the chocolate. If hung up on the tree, the biscuits will be edible for about a week, but will last a lot longer as decorations.

120g softened salted butter
50g light brown muscovado sugar
150g golden caster sugar
3 tsp ground cinnamon
1 egg, lightly beaten
220g plain flour
50g raisins (optional)
1 tbsp icing sugar

Steps:

  • Beat the butter, muscovado sugar, caster sugar and 2 tsp cinnamon together with an electric whisk for 2-3 mins until well-combined. Add the egg, flour, baking powder and raisins, if using, and continue to beat until the mixture becomes a uniform dough. Roll tablespoons of the dough into balls between the palms your hands (you should have 12-15). Chill in the fridge for at least 2 hrs until firm, or overnight. The unbaked dough balls will keep in an airtight container in the freezer for up to three months (see tip, below).
  • Heat the oven to 180C/160C fan/ gas 4 and line two large baking trays with baking parchment. Place the dough balls 3-4cm apart on the prepared baking trays to allow the mixture to spread without touching. Bake for 10-12 mins until lightly golden at the edges but still soft and gooey in the centre. Leave to cool completely on the baking trays.
  • Mix the icing sugar with the remaining cinnamon, then dust over the cookies. Will keep in an airtight container for up to five days.

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Butter the bottom of an 8-inch round or square baking pan and sprinkle with 2 tablespoons brown sugar.
  • Combine white sugar, cinnamon, 2 tablespoons brown sugar, and vanilla extract in a bowl. Mix filling well.
  • Combine confectioners' sugar and milk for glaze in another bowl until well mixed.
  • Separate biscuits and roll or punch down each one until flat. Coat with melted butter and sprinkle each with filling mixture to coat. Roll up each piece of dough and cut in 1/2, placing each cut-side down into the prepared pan, yielding 20 pieces.
  • Bake in the preheated oven until biscuit portion on top of rolls begins to brown, about 15 minutes. Remove from the oven and glaze.
