- In a shallow bowl, combine the bread crumbs, sesame seeds, dill and salt. Place yogurt in another bowl. Dip fillets in yogurt; shake off excess, then dip in crumb mixture., Heat oil in a large nonstick skillet. Fry fillets over medium-high heat for 2-3 minutes on each side or until fish flakes easily with a fork. Serve with lemon if desired.

- Preheat grill to medium heat. Mix mayo, lemon zest, lemon juice and dill.
- Place fish on greased grill grate. Brush with half of the mayo mixture.
- Grill 5 min.; turn fish. Brush with the remaining mayo mixture. Grill an additional 5 to 8 min. or until fish flakes easily with fork.

LEMON PEPPER DILL FISH
Steps:
- Place fish filets in a microwave-safe dish. Cut butter into pieces and place all over fish. Sprinkle with dill weed and lemon pepper. Drizzle fresh lemon juice all over the fish.
- Cover and cook on high for 3 to 5 minutes or until the fish turns white.

A very tasty recipe for fish and a way for me to use all the dill in my garden. This is from a non-cooking friend, who found this recipe for a potluck dinner she attended. She got raves for this and I begged for the recipe.

Steps:
- Preheat oven to 375.
- Place dill in the bottom of a large baking pan, reserving one sprig for each fillet.
- Place fillets over dill.
- Put sprig of dill on each fillet.
- Mix lemon juice and wine.
- Pour over fish.
- Cut butter into bits, sprinking all over fillets.
- Cover and bake for 25 minutes.
- Uncover and bake for another 10-15 minutes.
- Place fillets on warmed serving platter.
- Cook sauce down until slightly thickened, pour over fish and serve.

SLOW-ROASTED FISH WITH MUSTARD AND DILL
What if, instead of my usual hot-roasting method, I wrapped a whole fish tightly in parchment and put it in a slow oven? It was a technique I had never seen in a cookbook, and when I described it to Eric Ripert, the chef and an owner of Le Bernardin, he said it was new to him. The experiment worked beautifully. A week later, to serve with Portuguese white wines, I had the opportunity for an encore. This time it was a two-pound porgy, and again, after exactly an hour, the bone lifted easily from the perfectly cooked, moist and silken flesh. Lemon, ginger, mustard and herbs brought it into harmony with the wines.

- Heat oven to 200 degrees. Cut lemon in half, juice half and set aside. Chop remaining half and mix in a bowl with half the ginger, half the dill and 1/2 teaspoon mustard seeds. Season with salt and pepper. Rub outside of fish with 1 tablespoon oil. Fill cavity with ginger, lemon and dill mixture.
- Cut 2 large sheets parchment a good 3 inches bigger, all around, than the fish. Place the fish on 1 sheet, cover with second and crimp the sheets together to enclose the fish tightly. Place package, crimped side down, on a baking sheet. Roast for 1 hour.
- Meanwhile, heat remaining oil in a small skillet, add rest of ginger and the shallot and sauté on low until shallot is translucent. Add remaining mustard seeds. Stir in reserved lemon juice and the wine. Cook on low 2 to 3 minutes, until slightly reduced. Stir in mustard and crème fraîche and cook another few minutes until sauce has thickened a bit. Season with salt and pepper and remove from heat.
- When fish is cooked, remove it to a large platter or cutting board, turning the package crimped side up. Remove top sheet of parchment. Use a spatula to lift off top layer of fish; place on a serving dish. Lift out bones. Place bottom layer of fish on dish. Gently reheat sauce, fold in remaining dill, spoon sauce down the center of each fillet and serve.

SPICY LIME AND DILL GRILLED FISH

- Preheat grill for medium heat and lightly oil the grate.
- Lay 4 8x10-inch pieces of aluminum foil onto a flat work surface and spray with cooking spray.
- Arrange equal amounts of the haddock into the center of each foil square.
- Stir butter, lime juice, dill, kosher salt, and red pepper flakes together in a small bowl; drizzle evenly over each portion of fish. Top each portion with onion slices.

- Preheat oven to 425 degrees F. Line two baking sheets with aluminum foil and spray the foil generously with nonstick cooking spray. Set aside.
- Place the flour in a wide shallow dish or pie plate. In another similar dish, combine plain panko bread crumbs, Old Bay, garlic powder, parsley, salt, pepper, and olive oil. In a third shallow dish, lightly beat the eggs.
- Dredge a piece of fish in all-purpose flour, coating both sides. Transfer to a separate piece of foil temporarily. Repeat with remaining pieces of fish.
