CHOCOLATE FUDGE
Good old-fashioned fudge! It'll take care of your sweet tooth and chocolate cravings all at once.

Steps:
- Grease bottom and sides of 8-inch square pan with butter.
- In 3-quart saucepan, cook sugar, milk, corn syrup, salt and chocolate over medium heat, stirring constantly, until chocolate is melted and sugar is dissolved. Cook, stirring occasionally, to 234°F on candy thermometer or until small amount of mixture dropped into cup of very cold water forms a soft ball that flattens when removed from water; remove from heat. Stir in butter.
- Cool mixture without stirring to 120°F, about 1 hour. (Bottom of saucepan will be lukewarm.) Add vanilla. Beat vigorously and continuously 5 to 10 minutes, using wooden spoon, until mixture is thick and no longer glossy. (Mixture will hold its shape when dropped from a spoon.)
- Quickly stir in nuts. Spread in pan. Let stand about 1 hour or until firm. Cut into 1-inch squares.

Chocolate fudge that comes from the dog-eared pages of this cookbook. To this day, my family can down a whole pan of these before they have completely set. Yummy, especially licking the bowl. *Please Note*, add extra milk (a teaspoon at a time) if mixture is to thick. Time includes setting time, that is; if this fudge makes it that long. Exceptional tasting for a simple recipe, and easy for your children to make too.

Steps:
- Mix sugar and cocoa in a saucepan.
- Stir in butter, milk, and light corn syrup.
- Bring to boil. Boil 3 minutes stirring constantly. Take from heat.
- Immediately add confectioners' sugar, vanilla, and chopped nuts (if using).
- Stir until sugar is completely blended. Turn into 8 inch square pan and pat out with fingers. Cool. Cut into squares.

- Melt butter in skillet. Add green pepper and onion and cook until tender.
- Stir in soups and water. Heat to boiling. Then turn down heat and simmer sauce, stirring occasionally.
- While this sauce cooks, make meatballs. Beat egg slightly in bowl. Add ground beef, bread, evaporated milk and salt and mix well.
- Shape meat into balls about the size of ping-pong balls.
- Drop balls into simmering sauce and cook slowly about 1 hour, or until sauce has thickened.

BETTY CROCKER'S SUGAR COOKIES FOR BOYS AND GIRLS
One of the many benefits in moving is finding long lost recipes. Case in point;-this sugar cookie recipe which has been missing for at least ten years. The only real change was reducing the temperature by 50°. From the { original } Betty Crocker's Boys and Girls Cookbook from the 1950's. My brother's copy is tattered and torn; both front and back covers are missing but the recipe survived thankfully.

Steps:
- Preheat oven to 350°.
- Lightly grease a baking sheet or line with parchment paper.
- In a large mixing bowl, using a pastry blender blend the shortening, salt, lemon zest and sugar.
- Beat in the egg and milk until mixture is pale yellow.
- Sift the flour together with the baking powder and soda. Stir into the dough.
- Drop by rounded tablespoonfuls onto the baking sheet.
- Grease the bottom of a drinking glass. Dip the glass in sugar and flatten each cookie.
- Sprinkle cookies with nutmeg.
- Bake 10 minutes or until light golden brown around the edges.
- Cool on wire rack.
