CREAMY PARMESAN-GARLIC CHICKEN WINGS



Creamy Parmesan-Garlic Chicken Wings image

It's amazing how adding roasted garlic and grated lemon peel to purchased Alfredo sauce transforms these baked chicken wings into something truly special.

1 bulb garlic
2 teaspoons olive or vegetable oil
1 container (10 oz) fresh Alfredo sauce
1 teaspoon freshly grated lemon peel
1 tablespoon vegetable oil
1/2 teaspoon kosher (coarse) salt
1/4 teaspoon freshly cracked pepper
3 lb chicken wingettes and drummettes

Steps:

  • Heat oven to 425°F. Line cookie sheet with sides with heavy-duty foil; spray with cooking spray.
  • To roast the garlic: Carefully peel paper-like skin from around bulb of garlic, leaving just enough to hold garlic cloves together. Cut 1/4 to 1/2 inch from top of bulb to expose cloves. Place cut side up on 12-inch square of foil. Drizzle bulb with 2 teaspoons oil. Wrap securely in foil. Place in pie plate or shallow baking pan.
  • In 1-gallon resealable food-storage plastic bag, mix 1 tablespoon oil, the salt, pepper and chicken. Seal bag; shake to coat.
  • Place pie plate with foil-wrapped garlic in oven on lower rack. Place chicken on cookie sheet. Bake uncovered 30 minutes; turn chicken. Bake garlic about 15 minutes longer or until garlic is tender when pierced with toothpick or fork. Cool slightly. Bake chicken 5 to 15 minutes longer or until golden brown and juice of chicken is clear when thickest part is cut to bone (at least 165°F).
  • Gently squeeze soft garlic out of cloves, and press half of the garlic through a garlic press into 1-quart saucepan. Save remaining garlic for another use. Beat in Alfredo sauce and lemon peel with whisk; gently heat over medium-low heat 5 minutes, stirring frequently. Remove from heat; set aside. Toss chicken with half of the sauce. Serve warm with remaining sauce for dipping.

12 chicken wings (2 1/2 pounds)
2 tablespoons chili powder
1 1/2 teaspoons dried oregano leaves
1 1/4 teaspoons ground red pepper (cayenne)
1 teaspoon garlic salt
1 teaspoon ground cumin
1 teaspoon pepper
Sour cream, if desired

Steps:

  • Fold tips of chicken wings under opposite ends to form triangles.
  • Place remaining ingredients except sour cream in heavy-duty resealable plastic food-storage bag. Seal bag and shake to blend seasonings. Add chicken. Seal bag and shake until chicken is coated with seasonings. Refrigerate at least 30 minutes but no longer than 24 hours.
  • Heat coals or gas grill for direct heat.
  • Remove chicken from bag. Cover and grill chicken 4 to 6 inches from medium heat 20 to 25 minutes, turning after 10 minutes, until juice of chicken is no longer pink when centers of thickest pieces are cut. Serve with sour cream.

2 lb chicken wings
1 can (16 oz) jellied cranberry sauce
1/2 cup mesquite smoke marinade or hickory smoke barbecue sauce
1/3 cup chopped onion

Steps:

  • Cut each chicken wing at joints to make 3 pieces; discard tip. Cut off and discard excess skin.
  • In large bowl, mix remaining ingredients. Add chicken; stir to coat well. Cover and refrigerate 2 to 3 hours, stirring occasionally.
  • Heat oven to 375°F. Line 15x10x1-inch pan with foil or cooking parchment paper; lightly spray foil or paper with cooking spray. Remove chicken from marinade; reserve marinade. Place chicken in pan.
  • Bake 50 to 60 minutes or until well browned and no longer pink in center. Meanwhile, in 1-quart saucepan, heat marinade to boiling over medium-high heat. Reduce heat to medium; cook 3 to 4 minutes longer, stirring occasionally, until slightly thickened. Brush chicken with sauce halfway through baking.

2 pounds chicken drummettes (24)
2 tablespoons honey
2 tablespoons ketchup
1 tablespoon red pepper sauce
1 tablespoon Worcestershire sauce
Paprika
2/3 cup ranch dressing

Steps:

  • Heat oven to 350°F. Line jelly roll pan, 15 1/2x10 1/2x1 inch, with aluminum foil. Remove skin from chicken.
  • Mix honey, ketchup, pepper sauce and Worcestershire sauce in resealable plastic bag. Add chicken. Seal bag and refrigerate, turning occasionally, at least 15 minutes but no longer than 24 hours.
  • Place chicken in pan; sprinkle with paprika. Bake uncovered about 30 minutes or until crisp and juice of chicken is no longer pink when centers of thickest pieces are cut. Serve with dressing.

3 lbs chicken wings (use the plumpest chicken wings you can find)
1/2 cup margarine or 1/2 cup butter
1 cup soy sauce
1 cup brown sugar
3/4 cup water
1/2 teaspoon dry mustard
3/4 teaspoon garlic powder (optional)

Steps:

  • Arrange wings in shallow baking pan.
  • Heat butter, soy sauce, sugar, water mustard and garlic powder if using, until butter and sugar melt.
  • Cool; pour over wings and marinate at least 2 hours, turning once or twice.
  • Bake in same pan at 375F for 1-1/4 to 1-1/2 hours, turning occasionally. (Use the plumpest chicken wings you can find; if your market only has the normal scrawny ones, don't cook longer than 75 minutes)
  • Drain on paper towels and serve.
