I'm told this is the guacamole from Chipotle's. I'm also told that Haas avocados are the key, but I really have no idea if that's a set in stone fact. I've never had Chipotle's guacamole, as there are none near me, but I have had this, and I sure do like it, no matter who came up with it.

1 large ripe Hass avocado, pitted and peeled
2 teaspoons fresh lime juice
2 tablespoons chopped fresh cilantro
1/4 cup finely chopped red onion
2 garlic cloves, finely minced
1 serrano chili, seeded and chopped
1/4 teaspoon salt

Steps:

  • Mash up avocado with a fork.
  • Add lime juice.
  • Add all other ingredients and blend well.
  • Serve with tortilla chips.

This guacamole recipe is inspired by chipotle's recipe. It has a few minor tweaks that I personally think make the guacamole much better

2 Hass avocadoes
1 red onion
canned jalapeno slices
jalapeno juice
cilantro
pink himalayan salt
2 lemons
1 lime

Steps:

  • mash up the 2 avocados in a large bowl.
  • chop the red onion and add to the bowl with the avocado.
  • add the jalapeño slices and the jalapeño juice (don't need very much of the jalapeño juice).
  • add as much cilantro as you'd like. I use a lot because the cilantro helps cool the heat from the jalapeño juice. also adds great flavor.
  • squeeze the juice from the 2 lemons and the 1 lime into the bowl.
  • mash and stir all the ingredients.
  • add as much pink himalayan salt as you'd like. I personally use a little extra than normal.
  • your guacamole is ready to serve. it should have a nice smooth, juicy texture. best served with black bean and quinoa chips from trader joes.
