OATMEAL CHOCOLATE CHIP BARS
These oatmeal chocolate chip bars are a delicious treat. They're thick and chewy, full of sweet chocolate chips, and perfect for any occasion. Bonus that they're very easy to make!

Steps:
- Preheat your oven to 350 degrees. Butter a 9x9 or 9x13 baking dish then lightly dust it with flour.
- Cream the butter, brown sugar, and granulated sugar in a large bowl or stand mixer until light and fluffy, about 2 minutes.
- Add the eggs, milk, and vanilla and beat until combined.
- Add the flour, rolled oats, baking soda, and salt and stir until mostly mixed using a wooden spoon. Add ¾ cup of both the chocolate chunks and chocolate chips and stir until they are mixed into the batter.
- Transfer the batter to the baking dish and gently press the top down so that it is smooth. Top with the reserved ¼ cup of both the chocolate chunks and chocolate chips.
- Bake for 20-25 minutes if using a 9x13 inch pan or 25-30 minutes if using a 9x9 inch pan. The edges should be golden and the center not wiggly if you shake the pan. Let the bars cool completely before cutting them into squares.

- Preheat oven to 350 degrees. Line a 10 x 15-inch baking sheet** with parchment (for easy removal and cutting) or just lightly grease.
- Mix together the oatmeal, sugar, and nuts. Melt the butter or coconut oil and mix in the vanilla before adding to the oatmeal. Use the same measuring cup from the butter to measure the honey and add it to the oatmeal mixture, stirring all together.
- Press mixture firmly into the prepared pan and bake for 15-17 minutes, until browned. Rotate the pan halfway through baking if needed for even browning.
- Meanwhile, melt the chocolate and peanut butter together, on low on the stovetop or about one minute in the microwave and stirring to finish melting.
- Pour the chocolate topping over the warm bars, spreading evenly. Let cool before cutting into bars.

- Combine butter, brown sugar, and vanilla and beat until creamy.
- Beat in the eggs.
- Add the flour and oatmeal.
- Spread in a greased 9x13 pan.

- Cool slightly.
- Combine chocolate chips and shortening and melt in a double boiler or carefully in a saucepan.
- Spread over baked mixture.
- Sprinkle with chopped nuts.

- Preheat oven to 350 degrees F. Grease a 9 inch square baking pan.
- To prepare Filling: In a heavy pot, melt 2 tablespoons of the butter and chocolate chips. Add the evaporated milk and 1/4 cup of the white sugar. Bring to a rolling boil, stirring constantly. Remove from heat. Stir in nuts and cool.
- To prepare cookie base: Cream 1 1/2 cups of the butter and the brown sugar together. Add the vanilla and the egg, and beat until light and fluffy.
- Add the flour, baking soda, and 1 3/4 cups of the oats and blend well.
- Press 2/3 of this mixture into the bottom of the greased pan. Spread the cooled filling on top of the cookie crust.
- Mix the remaining 1/4 cup of oats with the remainder of the cookie base, and crumble over the filling. Bake for 25-30 minutes.

BEST EVER CHOCOLATE-TOPPED OATMEAL BARS

- Set oven to 350 defrees farenheit. Grease and lightly flour a 9x13 baking pan. Mix butter, sugars, and egg yolks thoroughly until it becomes creamy. Stir in flour and oatmeal. Spread batter in prepared pan. Bake cookies for 20-25 minutes, until golden brown on top. When you take the pan out of the oven, place the chocolate on top of the baked bar cookie... the heat of the cookie will melt the chocolate for you. After chocolate has softened, spread evenly across the bar cookie, then sprinkle walnuts evenly across pan. Let cookies cool for about 10 minutes, then slice cookies into squares while in the pan (we do 6 rows by 8 columns, to get 48 roughly-square cookies), but leave the cookies in the pan. Place pan in the refrigerator for another 20-30 minutes, until chocolate hardens. At this point, cookies can be removed from pan, if desired.
