TRIPLE BERRY BROWNIE

1 box Betty Crocker™ fudge brownie mix
Water, vegetable oil and eggs as called for on brownie mix box
1 package (8 oz) cream cheese, softened
1/2 cup powdered sugar
1 teaspoon vanilla
1 cup frozen whipped topping, thawed
1 1/3 cups halved fresh strawberries
1 cup fresh blueberries
1/2 cup fresh raspberries

Steps:

  • Heat oven to 350° F (325° F for dark or nonstick pan). Grease or spray bottom only of 12-inch pizza pan. Make brownies as directed. Spread in pan.
  • Bake 20 to 26 minutes or until toothpick inserted 2 inches from side of pan comes out clean. Cool completely.
  • In medium bowl, beat cream cheese, powdered sugar and vanilla with electric mixer on high speed until smooth and creamy. Fold in whipped topping; spread on brownie. Arrange berries over cream cheese mixture. Refrigerate 1 hour. Store covered in refrigerator.

In the mood for a little indulgence? Try this bite sized fudgy chocolate brownie topped with fresh berries.

1 box Betty Crocker™ fudge brownie mix
1/2 cup water
1/4 cup applesauce
2 eggs
1/4 cup margarine or butter, softened
1 1/2 cups powdered sugar
1/3 cup dark chocolate chips, melted (2 oz)
1/2 teaspoon vanilla
1 to 2 tablespoons fat-free (skim) milk
3 cups raspberries or strawberries
Powdered sugar, if desired

Steps:

  • Heat oven to 350°F. Grease or spray bottom only of 13x9-inch pan. In medium bowl, stir brownie ingredients with spoon until well blended. Spread batter in pan.
  • Bake 28 to 30 minutes or until brownies are set and begin to pull away from sides of pan. DO NOT OVERBAKE. Cool completely, about 45 minutes.
  • In small bowl, beat 1/4 cup margarine with electric mixer on medium speed until light and fluffy. Beat in remaining frosting ingredients, adding enough milk for desired spreading consistency. Spread over cooled brownies.
  • Cut into 8 rows by 6 rows. Top each serving with raspberries, and sprinkle with powdered sugar.

4 eggs
8 ounces semi-sweet chocolate chips
1/2 teaspoon salt
2 cups sugar
1 teaspoon vanilla extract
1 cup flour
1 cup dried blueberries
lemon zest, grated (from one lemon)

Steps:

  • Melt chocolate and butter together in a double boiler and allow to cool slightly.
  • In a large bowl, whisk eggs, salt, lemon zest, sugar and vanilla. Whisk in chocolate mixture slowly. Fold in flour, then blueberries.
  • Pour batter into greased 9x13 inch baking pan, bake for 40 minutes at 325 degrees.
  • Let cool before cutting to prevent too much breakage.
