When I was in high school, my best friend's mom used to make this light berry dessert and I fell in love with it! Now I fix it for my family on special occasions. Yogurt gives it a deliciously tangy taste. -Deb Sandoval, Colorado Springs, Colorado

Number Of Ingredients 9

1 package (3 ounces) strawberry gelatin
1 package (3 ounces) raspberry gelatin
2 cups boiling water
2 cups cold water
1 cup strawberry yogurt
1 cup raspberry yogurt
2 cups sliced fresh or frozen unsweetened strawberries
1 carton (12 ounces) frozen whipped topping, thawed
Additional fresh strawberries, optional

Steps:

  • In a large bowl, dissolve strawberry and raspberry gelatin in boiling water. Stir in cold water and strawberry and raspberry yogurt until blended. Chill until syrupy, about 1 hour., Fold in strawberries and whipped topping. Spoon into individual dishes. Chill until firm, about 4 hours. Serve with fresh berries if desired.

This is a simple, lovely way to serve fresh summer berries. I made this for brunch today and found it a refreshing end to the meal. This dish could also be made year-round using unsweetened frozen berries that have been thawed. Note: Preparation time includes time needed for berries to sit at room temperature.

1/2 cup blackberry
1/2 cup raspberries
1/2 cup strawberry, hulled and quartered
1/2 cup blueberries
1 teaspoon lemon zest
2 tablespoons granulated sugar
1/4 cup light cream (or half-and-half or milk)

Steps:

  • In a medium bowl, combine berries, lemon zest and sugar. Gently toss, being careful not to break the blackberries and raspberries too much.
  • Allow berry mixture to sit at room temperature for 30 minutes until berries begin to create their own juice, and sugar is dissolved.
  • Serve in four small serving bowls (or dessert bowls) with around 2 tbs. cream drizzled attop per bowl.

I came across this recipe recently in an old magazine. It's perfect for summer! Low fat and sugar free products can be used if desired. Chill times are not included in prep or cook times.

1 (3 ounce) package strawberry gelatin
1 (3 ounce) package raspberry gelatin powder
2 cups boiling water
2 cups cold water
1 (8 ounce) carton strawberry yogurt
1 (8 ounce) carton raspberry yogurt
2 cups sliced fresh strawberries
1 (12 ounce) carton Cool Whip

Steps:

  • In a large bowl, dissolve strawberry and raspberry gelatin in boiling water. Stir in cold water and both yogurts. Stir until well blended. Chill until mixture is syrupy, about 1 hour.
  • Fold in strawberries and whipped topping. Spoon into individual dishes. Chill until firm, about 4 hours.
  • Garnish with fresh berries if desired.

1/2 cup ricotta cheese
2 teaspoons lemon juice
4 cups fresh blueberries
Whipped cream, optional

Steps:

  • In a large bowl, combine the cracker crumbs, walnuts, sugar and cinnamon. Stir in butter; set aside. In another large bowl, beat cream cheese and confectioners' sugar until smooth. Beat in ricotta cheese and lemon juice., Place 1/2 cup blueberries in each of 4 dessert dishes. Top with cream cheese mixture, crumbs and remaining blueberries. Garnish with whipped cream if desired.
