Glazed Beets image

My grandmother used this recipe to get us little vegetable haters to eat our beets! Her special dish made beets taste nearly as good as candy. With the tart-sweet scent of Glazed Beets in the air, it never took us long to jump down from the climbing tree out back when we were called to dinner.

Number Of Ingredients 6

1 can (16 ounces) sliced or diced beets
2 tablespoons sugar
1 tablespoon cornstarch
1/4 teaspoon salt
3 to 4 tablespoons white vinegar
2 tablespoons butter

Steps:

  • Drain beets, reserving 1/3 cup juice. In a saucepan, combine the sugar, cornstarch and salt. Stir in beet juice and vinegar; cook and stir over medium-high heat until thickened and bubbly. Cook and stir 2 minutes more. Add beets and butter; heat through.

3 tablespoons butter
1 chopped onion

Steps:

  • Peel and grate beets.
  • Put butter in a large skillet over medium-high heat. When it's hot, add onion and cook until tender, about 5 minutes. Add the beets, and stir occasionally until tender and lightly browned, about 10 minutes. Garnish with parsley.

  • Peel the Beet (1.5 pound)
  • Coarsely grate the beets.
  • Prepare Lime (1)
  • Melt 2 tablespoons of Butter (2 tablespoon) a large heavy skillet over medium-high heat. Add the beets and 1/2 teaspoon of lime zest, stirring until the beets are crisp and tender, about 5 minutes.
  • Remove skillet from heat and stir in the remaining Butter (1 tablespoon). 1 tablespoon of lime juice, Salt (3/4 teaspoon), and Ground Black Pepper (1/4 teaspoon). Serve hot or at room temperature.
