- In a large skillet, combine the first 5 ingredients. Bring to a boil; cook and stir until thickened, 3-4 minutes. Add the beets; cook and stir until most of the liquid is absorbed, 6-8 minutes longer.

ROASTED BEETS AND ORANGES WITH HERB BUTTER
Herbs and orange juice add a distinctive flavor to roasted beets in this tasty side dish.

- Heat oven to 400°F. Cut 18x12-inch sheet of heavy-duty foil; spray foil with cooking spray. In large bowl, toss beets, orange slices, oil, salt and pepper. Spoon mixture in center of foil. Bring up 2 sides of foil over mixture so edges meet. Seal edges, making tight 1/2-inch fold; fold again, allowing space for heat circulation and expansion. Place packet on cookie sheet.
- Roast 45 minutes. Carefully unfold foil with tongs; roast 10 minutes longer or until beets are tender and browned.
- In 12-inch skillet, melt butter over medium-high heat. Stir in parsley, rosemary and orange juice with whisk; cook 1 to 2 minutes or until slightly thickened. Remove beets and oranges from foil and add to skillet; cook and stir until coated with butter mixture.

- Scrub beets and trim tops to 1 in. Place in a large saucepan; add water to cover. Bring to a boil. Reduce heat; simmer, covered, 25-30 minutes or until tender. - Preheat oven to 400°F. Wrap 2 beets together in foil. Repeat with remaining beets. Place on baking sheet. Bake until tender, about 1 hour 15 minutes. Cool. Peel beets. Cut each into 8 wedges.
- Combine beets and remaining ingredients in medium nonaluminum saucepan. Simmer over medium heat until sauce is syrupy, stirring often, about 8 minutes. Season with salt and pepper.
- (Can be made 1 day ahead. Chill. Rewarm over low heat, stirring often.) Serve hot.
ORANGE BUTTER
A great spread for pancakes, muffins and toast. This butter smells great and adds just a little orange flavor to what ever you use it on. For a pretty serving idea use half a hallowed out orange as a serving dish.

- Leaving root and 1 inch of stem on beets, trim tops and scrub with a brush.
- Place in a large saucepan, cover with water.
- Bring to boil, cover, reduce heat, and simmer for 1 hour or until tender.
- Drain and rinse with cold water.
- Drain, cool.
- Trim off beet roots, rub off skins.
- Cut beets into cubes to measure 3 1/2 cups.
- Melt butter in a large nonstick frypan over medium heat.
- Add beets, rind, and next 4 ingredients, (rind through pepper.) Bring to boil, cook until liquid is the consistency of a thin syrup (about 12 minutes), stirring occasionally.
- Sprinkle with almonds.

- Mix 1 tablespoon butter and 1/4 teaspoon orange peel in small bowl. Season to taste with salt and freshly ground black pepper. Heat 1/2 tablespoon oil in medium skillet over medium-high heat. Sprinkle chicken breasts with salt and pepper. Add to skillet and sauté until cooked through and golden brown, 4 to 5 minutes per side. Place 1 chicken breast in center of each plate; tent with foil to keep warm.
- Melt remaining 1/2 tablespoon butter with 1/2 tablespoon oil in same skillet over medium-high heat. Add shallots; stir until tender and beginning to brown, about 1 minute. Add beet greens; toss until leaves are tender but still bright green, about 2 minutes. Add 1 teaspoon Sherry wine vinegar; stir 30 seconds. Season to taste with salt and freshly ground black pepper. Spoon greens alongside chicken; cover to keep warm. Add grated beets and 1/3 cup water to same skillet; cover and cook 2 minutes, stirring occasionally. Uncover and continue cooking until beets are tender and water is almost evaporated, stirring often, about 1 minute. Add remaining 1 teaspoon vinegar; stir 30 seconds. Season to taste with salt and pepper.
- Spoon beets onto plates. Spoon orange butter atop chicken and serve.

- Oven-roast the beets: Preheat oven to 425°F. Line an 9 x 13-inch baking pan with foil. Scrub beets under cold water to remove any dirt. Cut the larger beets in half. Rub beets with vegetable oil and place into dish. Cover dish with foil, transfer to oven and bake for 1½ hours or until beets are soft. Remove from oven and leave covered for about 30 minutes until cool to the touch.
- Peel and prepare the beets: (TIP: Wear disposable gloves to avoid staining your hands.) Gently rub the outside of the beets with a dry paper towel to peel away the skins. Have a paring knife handy to assist with stubborn skins and to remove caps. Cut beets into 1-inch chunks. Set aside.
- Prepare sauce: Melt butter in a large skillet on medium-high heat. Add shallots and cook until soft and translucent. Sprinkle flour into skillet, stir and cook for 1 minute. Do the same with the Redpath® Dark Brown Sugar, stirring the sugar to incorporate. Add the orange juice, stir and heat until thickened. Add more orange juice for a thinner sauce.
- Assemble: Add the prepared beets to skillet stir to heat through. Add half of the prepared oranges, toss or stir and season to taste with salt and pepper.
