I made this delicious salad for a potluck the other day and everyone loved it. You can use peaches instead of nectarines. Try to find ripe heirloom tomatoes for extra flavor.

Ingredients

3 nectarines, pitted and chopped
2 large heirloom tomatoes, chopped
2 (4 ounce) balls Burrata cheese, cut into 3/4-inch pieces
2 tablespoons fresh basil, chopped, or to taste
5 tablespoons extra-virgin olive oil
3 tablespoons white wine vinegar
1 teaspoon Dijon mustard
½ teaspoon honey
salt and freshly ground black pepper to taste

Steps:

Combine nectarines, tomatoes, burrata cheese, and basil in a bowl.
Stir together olive oil, vinegar, mustard, and honey. Season with salt and pepper. Drizzle dressing over salad.

Tear the burrata into pieces and scatter over the salads, or place the whole ball in the middle of the platter and dig into it with a serving spoon if you like.
Garnish with basil leaves, a drizzle of olive oil and balsamic and some flaky sea salt. Serve immediately.
