Beer Batter Waffles image

These waffles are light and delicious. The beer replaces yeast and the honey gives them a nice crunch. My family loves them.

2 cups self-rising flour
1 (12 fluid ounce) beer
1/2 cup unsalted butter, melted
1/4 cup milk
2 eggs, separated
1 tablespoon honey
1 teaspoon vanilla extract

Steps:

  • Preheat a waffle iron according to manufacturer's instructions. Combine flour, beer, butter, milk, egg yolks, honey, and vanilla in a large bowl; stir until the mixture is smooth. In a separate bowl, beat egg whites until stiff peaks form. Gently fold egg whites into batter.
  • Spray preheated waffle iron with non-stick cooking spray. Ladle the batter into waffle iron. Cook the waffles until golden and crisp. Serve immediately.

This recipe is combination of Brussels waffles and Liege waffles. The sugar chunks caramelize as you cook, which makes them crunch and delicious. Light enough to serve with syrup for breakfast, but rich enough to serve with ice cream or sauces for dessert.

Number Of Ingredients 11

2 cups flour
2 tablespoons brown sugar
2 teaspoons baking powder
3/4 teaspoon salt
1 1/2 cups beer (preferably Belgian Wit)
1 (5 ounce) can evaporated milk
6 tablespoons of melted butter
2 eggs
2 teaspoons vanilla
1 tablespoon honey
1/2 cup of pearl sugar or 1/2 cup crushed sugar cube

Steps:

  • Whisk together dry ingredients, except pearl sugar.
  • Whisk together wet ingredients.
  • Combine wet and dry ingredients.
  • Pour batter into waffle iron, one at a time, then quickly sprinkle a handful of pearl sugar over the top before closing the top. This will evenly caramelize the sugar throughout the waffle.
  • These will cook sooner than the ordinary waffle because of the pearl sugar. Watch them closely and don't let the iron automatically tell you when they're done. This will result in over-caramelized (possibly burnt) sugar and an astringent aftertaste.

This is our favourite type of waffles. They normally are eaten hot, but the leftovers are very good cold as well.

1/2 liter milk
8 eggs, separated
250 g butter
150 g sugar
500 g flour
1 pinch salt

Steps:

  • Mix together flour, egg yolks, sugar, salt and the milk until you obtain a dough without lumps.
  • Add the melted butter and the whipped egg whites.
  • Bake in a hot waffle iron. You only need to grease it for the first waffle if you're using an non-stick waffle iron.
  • Serve hot with some powdered sugar on top.

1/2 teaspoon salt
4 large eggs, separated
2 tablespoons sugar
1/2 teaspoon vanilla extract
4 tablespoons unsalted butter, melted

Steps:

  • Preheat the waffle iron according to the manufacturer's instructions. In 1 medium bowl sift together flour, baking powder, and salt. Set aside. In a second bowl use the wooden spoon to beat together the egg yolks and sugar until sugar is completely dissolved and eggs have turned a pale yellow. Add the vanilla extract, melted butter, and milk to the eggs and whisk to combine. Combine the egg-milk mixture with the flour mixture and whisk just until blended. Do not over mix. In third bowl, beat the egg whites with an electric mixer until soft peaks form, about 1 minute. Using the rubber spatula, gently fold the egg whites into the waffle batter. Do not overmix! Coat the waffle iron with non-stick cooking spray and pour enough batter in iron to just cover waffle grid. Close and cook as per manufacturer's instructions until golden brown, about 2 to 3 minutes. Serve immediately.

1 package active dry yeast, 1 tablespoon
1/2 cup warm milk (100 to 105 degrees)
2 cups flour
1/4 cup granulated sugar
1/4 teaspoon salt

1 1/4 cups warm milk
1/2 teaspoon vanilla extract
2 eggs, separated

Steps:

  • Sprinkle yeast over the 1/2 cup warm milk in a small bowl; set aside about 5 minutes to soften.
  • In a large bowl, mix together flour, sugar and salt.
  • Lightly beat the egg yolks with a fork.
  • In a small bowl mix melted butter, 1 1/4 cup warm milk, vanilla, egg yolks.
