2 -3 tablespoons peanut oil
400 g rice noodles
800 g rump steak (meat only weight)
4 teaspoons garlic (minced, 4-6 cloves)
1 cup broccoli (or 400 grams chinese broccoli cut into 3cm lengths)
1 carrot (large peeled and julienned)
1 cup cauliflower floret
3 tablespoons oyster sauce
1 large red fresh chili pepper (red large, deseeded and cut into strips)
2 tablespoons soy sauce

Steps:

  • Give vegetables a light steam or microwave for 1 minute.
  • Pour boiling water over noodles, separate them and once softened drain and set aside.
  • Cut fat of steak (I used 1.1k to get 800 grams), gently pound out and cut into small squares.
  • Heat the wok over high heat, add 1 tablespoon and cook the beef in batches until brown (you may need to add more oil as cooking) and set aside.
  • Reduce heat to medium and add the remaining oil and garlic and cook for 30 seconds and then add the noodles, chilli, soy sauce and oyster sauce and stire fry for 2 minutes.
  • Return beef to the wok and add the vegetables and cook to all is heated through.

I love this dish. It's full of flavor, and takes minutes to cook. This is definitely, one of my favorite suppers. This is essentially 3 stir fried dishes in one - stir fried spinach, beef in oyster sauce and mushrooms in tangy vinegar. This dish uses all my top store cupboard ingredients: groundnut oil for the stir-fry, light soy sauce, Shaohsing rice wine, Chinkiang black rice vinegar and dried chile flakes. It also has oyster sauce in it. Try and find an oyster sauce which doesn't have chemical additives or Monosodium Glutamate (MSG) in it - some people are allergic to MSG so check the label to make sure that it doesn't have flavor enhancers. This is a balanced dish because of the use of spinach - (yin) and meat and garlic (yang). Stir frying has a neutral element. You can serve this with plain Jasmine rice or just with the spinach and mushrooms.

12 ounces beef fillet (tenderloin), pounded and thinly sliced
1 teaspoon light soy sauce
1 1/2 tablespoons oyster sauce
Salt and freshly cracked black pepper
Pinch sugar
2 tablespoons groundnut oil (peanut), divided
3 cloves garlic, crushed and finely chopped
1 medium chile, seeded and finely chopped
7 ounces baby spinach leaves
1 tablespoon Shaohsing rice wine
Pinch dried chile flakes
1 teaspoon groundnut oil (peanut)
4 ounces oyster mushrooms
Water, as needed
1 tablespoon black rice vinegar* (recommended: Chinkiang) or balsamic vinegar
Dash light soy sauce

Steps:

  • To make the beef: Prepare the fillet of beef by hammering it with a meat cleaver, the side of a meat cleaver, the side of a Chinese cleaver or a rolling pin. Slice it thinly, and put the pieces into a bowl. Season the beef with the light soy sauce, oyster sauce, salt, black pepper, and sugar. Set aside.
  • Heat a wok over high heat, and add 1 tablespoon groundnut oil. Add the garlic, and chile, and toss quickly. Then, add the spinach leaves, and toss so they warm for 5 seconds. Scatter them onto a large serving plate.
  • Heat the wok over high heat, and add the remaining groundnut oil. Add the beef slices, and stir-fry for 1 to 2 minutes, adding a dash of Shaohsing rice wine. Season with a pinch of dried chile flakes. To serve, lay the beef over a bed of the garlic-spinach leaves.
  • To make the mushrooms: Reheat the wok, add the oil, then add the oyster mushrooms and stir fry for 1 minute. Add a small splash of water to create some steam to help cook. Season with the black rice vinegar, and light soy sauce. Spoon the mixture over the beef, and serve.

8 ounces beef filet, cut into 1/2 inch strips
2 tablespoons vegetable oil
1 onion, chopped
1 clove garlic, minced
1 teaspoon chopped fresh ginger root
1 green bell pepper, chopped
1 carrot, chopped
1 (10.5 ounce) can beef broth
1 tablespoon cornstarch
1 teaspoon white sugar
1 tablespoon soy sauce
1 tablespoon oyster sauce
salt and pepper to taste

Steps:

  • In a large skillet over medium high heat, saute the beef slices in the oil for 5 minutes, or until well browned. Add the onion, garlic and ginger and saute for 5 more minutes. Then add the green bell pepper, carrot and beef broth. Reduce heat to low and let simmer.
  • Meanwhile, in a separate small bowl, combine the corn flour, sugar, soy sauce and oyster sauce, if desired. Stir thoroughly, forming a smooth paste. Slowly add this to the simmering beef and vegetables, stirring well, and let simmer to desired thickness. Season with salt and pepper to taste.

3 nests (about 200g) medium egg noodles
1l beef stock
thumb-sized piece ginger , cut into matchsticks
bunch of spring onions , white parts sliced thickly at an angle, green chopped
1 tsp Chinese five-spice powder
1 red chilli , deseeded and sliced
2 tbsp soy sauce
1 tbsp sesame oil
2 sirloin steaks (about 400g/14oz), trimmed of fat and thinly sliced across the grain
2-3 tbsp oyster sauce

Steps:

  • Put a kettle of water on to boil and the noodles in a bowl. Tip the stock, ginger, whites of the onions and the five-spice into a large pan and leave to simmer for 5 mins.
  • When the kettle boils, pour the water over the noodles and leave to soak for 3 mins (they should be softened, but not completely), then drain. Now add to the stock pan with the chilli, spring onion greens, soy sauce and half the sesame oil, and cook about 2 mins more.
  • Meanwhile, heat the remaining oil in a large wok. Add the beef and stir-fry over a high heat for about 1 min until it changes colour, but is still a little rare in the centre. Spoon in the oyster sauce and cook over the heat to coat the beef. Ladle the noodles and liquid into bowls and top with the oyster beef.

Beef, Black Beans and Rice Noodles With Oyster Sauce image

From famous Australian chef Neil Perry, these noodles from Wokpool Noodle Bar form a beautifully textured dish with a rich salty sweet flavour. My addition is the chilli! I hate mushrooms so don't use them, but I've included them in the recipe for all you mushy lovers out there! The technique of adding the sesame oil last leaves the most beautiful flavour; I usually use ground szechuan pepper and salt rather than the white pepper.

1/4 cup peanut oil
1 teaspoon ginger, finely chopped
1/2 teaspoon garlic, finely chopped
1 long red chili pepper, finely sliced on the diagonal
200 g filet of beef, finely sliced
2 tablespoons fermented black beans
4 shiitake mushrooms, stalks removed
6 oyster mushrooms
2 tablespoons rice wine (shao xing)
2 tablespoons palm sugar
2 tablespoons light soy sauce
4 tablespoons oyster sauce
1 kg fresh flat rice noodles or 1 kg vietnamese rolled rice noodles
1/2 cup gai lan (Chinese broccoli leaves)
2 spring onions, cut into 3cm lengths
1/4 teaspoon sesame oil
1 pinch white pepper

Steps:

  • Heat the oil in a wok until just smoking. Add the ginger, garlic and chilli and fry til fragrant.
  • Add the beef slices and stir-fry for one minute, then add the black beans, both sorts of mushrooms, shao xing, palm sugar, soy and oyster sauces and chicken stock. Stir fry for one minute.
  • Add the rice noodles, broccoli leaves and spring onions and cook for a further minute. Finally, add the sesame oil and remove from the heat.
  • Spoon into a large bowl or platter then sprinkle over the pepper.

1/4 teaspoon cinnamon
1 (14 1/2 ounce) can whole tomatoes
7 ounces rice noodles
1 teaspoon olive oil
1/4 cup beef stock

1/2 teaspoon pepper
1 teaspoon oregano

Steps:

  • Dice onion.
  • Peel and slice carrot thin.
  • In a large saucepan, add olive oil.
  • Over med heat cook onions and carrots till tender.
  • Add ground beef and cinnamon, cook about 5 Minutes.
  • Add juice from whole tomatoes and dice tomatoes, add and stir.
  • Add salt, pepper and beef stock,sugar,oregano stir.
  • Simmer for about 30 minutes.
  • Cook rice noodles according to package directions about 2-3 minutes.
  • Pour beef and tomato mixture over noodles.
  • ENJOY.

450g lean beef steak
1 tbsp light soy sauce
2 tsp sesame oil
1 tbsp Shaoxing rice wine or dry Sherry
2 tsp cornflour
3 tbsp groundnut oil
1 red pepper, cut into chunky dice
1 green pepper, cut into chunky dice
3 tbsp oyster sauce
2 spring onions, finely shredded, to garnish

Steps:

  • Cut the beef into slices 5cm long and 5mm thick, cutting against the grain of the meat. Put them in a bowl. Mix in the soy sauce, sesame oil, rice wine or Sherry and cornflour. Leave to marinate for 20 mins.
  • Heat a wok until it is very hot, then add the groundnut oil. When it is slightly smoking, add the beef slices and stir-fry for 5 mins or until lightly browned. Remove the meat from the wok and drain well in a colander set inside a bowl. Discard the drained oil.
  • Wipe the wok clean and reheat it over a high heat. Add the peppers, and cook for 3-4 mins or until softened. Add the oyster sauce and bring it to a simmer. Return the drained beef slices to the wok and toss them thoroughly with the oyster sauce. Turn the mixture on to a serving platter, top with the spring onions and serve immediately.
