Steps:
- In a large skillet, crumble beef and cook with onion and pepper over medium-high heat until no longer pink, 5-7 minutes; drain., Stir in seasonings, vegetables, water and rice; bring to a boil. Reduce heat; simmer, covered, until rice is tender, 10-15 minutes. Sprinkle with cheese. Remove from heat; let stand until cheese is melted.

ZUCCHINI TOMATO CASSEROLE WITH GROUND BEEF
Zucchini Tomato Casserole with Ground Beef is a simple summer garden vegetable bake that is light and fresh without a heavy sauce to weigh you down. Our version features zucchini, onion, corn and tomatoes, but yours can be individualized to your own personal taste.

Steps:
- Brown and drain ground beef. Season to taste with salt and pepper. Set aside.
- In a 13 x 9 inch baking dish that has been sprayed with nonstick cooking spray layer sliced zucchini so that they are overlapping and covering the entire bottom of the pan.
- Sprinkle with chopped onion and frozen corn. Arrange tomato slices over the casserole.
- Sprinkle with sugar, salt, pepper and dried oregano.
- Add the cooked and drained ground beef over the casserole. Top with shredded cheese and bread crumbs.
- Bake in a preheated 400 degree F oven for 20- 25 minutes. The casserole is done with the zucchini is fork tender and the cheese is melted.

STIR-FRIED ZUCCHINI AND BEEF
My version of a recipe from a book titled Quick & Easy Korean Cooking for Everyone, via RecipeSource.com. The recipe originally called for cucumbers instead of zucchini; somehow I bought the zucchinis instead (I know, I know...) and I loved the end result, so here it is! The directions are a little vague, but I am a beginner cook and managed just fine. Enjoy over rice, with Sriracha.

- Heat oil. Quickly stir-fry beef over high, and season with garlic, salt and pepper. Remove from pan/wok with a slotted spoon and set aside.
- Add zucchini and stir-fry briefly. Season with green onion, sesame seeds and oil, soy sauce, chili pepper, and salt.
- Return beef to pan, stir once to combine, and transfer to serving plate. Garnish with shredded chili.

- Heat a large skillet over medium-high heat. Cook and stir ground beef and onion in the hot skillet until beef is browned and crumbly, 5 to 7 minutes. Drain and discard grease.
- Stir mushrooms, tomato sauce, olives, and garlic into the skillet. Crush stewed tomatoes into smaller pieces and add to the mixture. Season with salt and white pepper. Let simmer, uncovered, until liquid reduces, 20 to 30 minutes.
- Slice zucchini lengthwise; cut into 1/2-inch slices and add to the skillet. Cook, covered, until firm yet tender to the bite, 5 to 7 minutes. Stir in Cheddar cheese and cook, covered, until melted, 3 to 4 minutes. Serve.

BEEF STRIPS WITH ZUCCHINI AND TOMATOES
I wanted a recipe for round steak strips, but did not want a stroganoff or stir fry type recipe. i just kind of threw this together with what i had. i was planning on doing a pan fried steak, corn on cob and baked potato, but got home late from work, and just wanted something i could do in my electric skillet. this is what i came up with. let me know what you think, be honest, and any suggestions for improvement. all measures are approximate, like i said i just threw together at last minute, this served me and my husband, with one lunch serving leftover. we had texas toast with this. some optional ingredients are included, we found this quite tasty and very filling. it was also very easy and quick, which i need at times, as i have an hour and a half commute each way to work everyday, and hubby just does not and can not cook.

- In electric skillet or frying pan brown beef strips (can use pam spray, i did not use).
- when browned add seasonings.
- add canned zucchini and tomatoes.
- simmer ( i left mine for 30 minutes in electric skillet) can be put on low and left to simmer, only melds flavors.
- stir occasionally.
- meanwhile cook egg noodles according to package directions.
- add small amount of water to beef mixture if needed.
- drain egg noodles.
- serve beef mixture over egg noodles with juice.

BEEF, POTATO, ZUCCHINI AND TOMATO STEW

- Heat nonstick skillet until it is hot; add beef, and saute over medium-high heat until beef browns, stirring to separate.
- Chop whole onion, and when beef is cooked, push it to the side of the pan and saute the onion over medium heat until it softens, just a couple of minutes.
- Wash, trim and coarsely chop tomatoes, and add to the pan.
- Scrub potatoes, cut into 1/4-inch dice and add to pan. Cover, and cook over medium-low heat.
- Meanwhile scrub, trim and cut zucchini into 1/4-inch rounds, and add to pan along with the tomato paste with salt and pepper.
- Wash and chop basil. A couple of minutes before vegetables are tender but still firm, stir in basil and finish cooking.
