This ground beef casserole with rice is the perfect casserole for using whatever you have lying around in your fridge.

1 pound lean ground beef
1 medium green bell pepper, diced
1 medium tomato, chopped
4 tablespoons Worcestershire sauce
1 (28 ounce) can diced tomatoes, undrained
1 tablespoon minced onion
1 teaspoon minced garlic
1 teaspoon dried oregano
1 teaspoon dried basil
salt and ground black pepper to taste
2 cups cooked rice
½ cup shredded Cheddar cheese

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Heat a large skillet over medium-high heat. Cook and stir ground beef in the hot skillet until browned and crumbly, 5 to 7 minutes. Add bell pepper, tomato, and Worcestershire sauce. Cook and stir until pepper has slightly softened, about 5 minutes. Strain 1/2 of the liquid from the canned diced tomatoes into the mixture.
  • Stir diced tomatoes, onion, garlic, oregano, basil, salt, and pepper into the ground beef mixture. Simmer until some of the liquid has reduced, about 10 minutes. Add rice and mix well. Transfer to a casserole dish and sprinkle Cheddar cheese on top.
  • Bake in the preheated oven until filling is heated through and cheese is melted, about 45 minutes.

1 teaspoon Worcestershire sauce
1 teaspoon prepared mustard
3/4 teaspoon salt
1/8 teaspoon garlic powder
1 cup shredded cheddar cheese

2 tablespoons salted butter
1 medium onion, chopped
1 cup shredded rotisserie chicken
1 (15.25 ounce) can Mexican-style corn, drained
1 (15 ounce) can black beans, rinsed and drained
1 (14.5 ounce) can chili-seasoned diced tomatoes
1 cup instant brown rice, uncooked
1 (4 ounce) can diced green chiles
1 tablespoon ground cumin
1 teaspoon garlic powder
salt and ground black pepper to taste
1 cup salsa

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Heat butter in a large skillet over medium heat. Add onion and cook and stir until tender, 5 to 7 minutes. Add shredded chicken and cook until heated through, 3 to 5 minutes.

1 small green pepper, chopped
1 garlic clove, minced

1 can (15-ounce) chili con carne with beans
2/3 cup mayonnaise
Few drops hot pepper sauce
1/2 teaspoon salt
1 can (14-1/2-ounce) Mexican-style stewed tomatoes
1 to 2 cups shredded cheddar cheese
4 cups corn chips

Steps:

  • In a skillet, cook ground beef, celery, onion, green pepper and garlic until meat is browned and vegetables are tender; drain. Stir in rice, chili, mayonnaise, hot pepper sauce, salt and tomatoes. Pour mixture into a 2-1/2-qt. casserole. Bake at 350° for 35-45 minutes or until heated through. Top with cheese and corn chips. 1/2 teaspoon salt
2 cups milk
8 oz Kraft™ Velveeta™ original cheese product, cut into cubes
3 cups shredded Cheddar cheese (12 oz)
4 cups cooked white rice
1 can (4.5 oz) Old El Paso™ chopped green chiles

Steps:

  • Heat oven to 350°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray.
  • In 5-quart Dutch oven, cook beef, onions, bell pepper and jalapeño chile over medium-high heat 5 to 7 minutes, stirring frequently, until beef is thoroughly cooked; drain. Add flour, taco seasoning mix and salt; cook and stir 2 minutes. Gradually stir in milk, scraping bottom of pan. Heat to boiling; cook and stir 2 to 3 minutes or until slightly thickened. 2 cups instant white rice (such as Minute®)
¼ cup shredded extra-sharp Cheddar cheese

Steps:

  • Cook and stir ground beef in a nonstick skillet over medium-high heat until browned and crumbly, 5 to 7 minutes. Drain and discard grease.
