Easy Flan Recipe image

An easy flan recipe made with only 5 simple ingredients! This creamy custard dessert is topped with caramel and popular in Mexico, Spain and Latin America.

Provided by Isabel Eats

Categories     Dessert

Time 5h35m

Number Of Ingredients 5

3/4 cup granulated sugar
4 large eggs
1 14-ounce can sweetened condensed milk
1 1/4 cup whole milk
1 tablespoon vanilla extract

Steps:

  • Preheat oven to 350°F.
  • Pour the sugar into a skillet over medium heat. Stir the sugar continually until it begins to brown and clump together. Keep stirring until the sugar completely melts and dissolves into a golden-brown syrup. Remove the syrup from the heat as soon as it has dissolves as it can burn.
  • Working quickly, carefully pour the caramel into a 7-inch round pan or a special flan pan (flanera) as shown in the photos in the blog post. Pour the caramel evenly into the bottom of the pan so the entire bottom is coated. If you need to, use an oven mitt or potholders to move the pan from side to side to get the caramel evenly distributed. If the caramel hardens too quickly, you can carefully reheat the pan by placing it directly on the stove or on the skillet for a few seconds.
  • Set the caramel-coated pan aside to cool and harden.
  • In a large mixing bowl, add the eggs, sweetened condensed milk, whole milk and vanilla extract. Whisk together until everything is fully combined, but try not to overwhisk so that there aren't too many air bubbles in the mixture.
  • Pour the custard mixture into the caramel-coated pan. Cover the top of the pan with the lid (if using a flanera) or tightly with aluminum foil.
  • Place the flan pan in a large baking dish and pour enough water in the dish until it reaches about halfway up the pan. Carefully place the baking dish in the oven and bake for 1 hour and 15 minutes.
  • Carefully remove the dish from the oven, and then lift the flan pan out of the water bath. Remove the lid or aluminum foil and let it cool to room temperature. The flan may still be a little jiggly, but that's okay - it will continue to cook with the residual heat.
  • Once it's cooled, cover with the lid or aluminum foil and refrigerate for 4 hours or overnight.
  • To serve, remove the lid or aluminum foil and slide a knife along the edges of the pan to loosen it up. Place a plate or platter on top of the flan, grab a hold of both the plate and the pan and quickly and securely flip it over so that the flan is now upside down. Carefully lift off the flan pan. Your flan should be sitting in the caramel on the plate, ready to enjoy!
  • Carefully lift the flan pan up. The flan should be on the plate - if it's not, place the pan back down and let it sit for a few minutes. Don't freak out! It will loosen up and slide out. You could try tapping the sides of the pan a bit or even giving the sides a squeeze.
  • Slice the flan and serve with the rich caramel sauce!

Categories     Buffet, Dinner, Lunch, Main course, Side dish, Starter, Supper, Vegetable

Time 1h5m

Number Of Ingredients 9

2 large red onions , thinly sliced
2 tbsp olive oil
1 tbsp balsamic vinegar
12 pitted black olives
2 red peppers (choose tapered, heart-shaped ones if possible)
200g ready-made shortcrust pastry
150-200g / 5-7oz log firm goat's cheese , such as Sainte-Maure de Touraine or Capricorn
250g cherry tomato
few oregano or basil leaves

Steps:

  • Cook the onions in the oil for 6-7 mins, until they are softened and lightly coloured, then add the balsamic vinegar and 1 tbsp water. Cook for a further 2-3 mins. Roughly chop the olives and stir in. Leave to cool.
  • Halve the peppers, remove the seeds and core. Put under a hot grill, skin side up, until the skins are charred. Remove and put into a food bag until cool enough to handle, then peel off the skins.
  • Heat oven to 200C/fan 180C/gas 6. Roll out the pastry and line a 23-24cm deep flan tin. Line with baking paper and beans, then bake for 10 mins. Remove the paper and beans, then bake for 5 mins more, until the pastry is golden and crisp.
  • Spread the onion mix over the base of the pastry case. Put the halved peppers on top, cut side up with tapered ends towards the centre. Slice the goat's cheese and put a few slices in each pepper half. Tuck the tomatoes in the gaps between the peppers.
  • Bake for 20-25 mins until the cheese is lightly tinged brown and the tomatoes have burst. Scatter over the herb leaves and serve warm or at room temperature.

  • Put the peppers in an oven dish and bake whole at 180°C (350°F) for 45 minutes. Leave to cool, then peel off the skin, remove the green stem and scrape of the seeds with your fingers. This step can also be done 1 - 2 days before you make the flans.
  • Heat the oven to 180°C (350°F) . Grease a muffin tray very well with butter or oil and cut rounds of baking paper to place in the bottom of each well. Fill a roasting pan with water so that it comes approximately half-way up the muffin cups.
  • Warm them for 5 minutes in the oven or 1 -2 minutes in the microwave.. Put each flan on an individual serving plate. Drizzle the anchovy sauce over the flans, then chop the chives and sprinkle them over the top .

  • Line an oven tray with three pieces of aluminium foil so that they're slightly overlapping. Wash and dry the red peppers and place them on the oven tray so that they're each on a single aluminium foil. Bake in the oven for 1 hour at 200°C turning them every 15 minutes. When the baking time is up, take the whole tray out of the oven and wrap the roasted peppers individually in aluminium. Let cool wrapped for one hour or overnight.
  • Peel and seed the roasted peppers, discard any excess water or oil depending on type used. The optimal quantity of cleaned roasted pepper slices to be used is about 250 grams.
  • As the flans bake in the oven, prepare the cheese sauce. Add the flour to a small saucepan and set on medium heat. Let the flour toast for a couple of minutes, then add the butter and quickly mix to make a roux. Add the cold milk and stir to combine. Do not worry if the difference in temperature causes lumps; stirring will dissolve them. Stir until the mixture reaches boiling temperature, then remove the sauce form the heat and fold in the grated pecorino. Pecorino cheese is quite salty, so there is no need to add any salt to the cheese sauce. Add freshly cracked black pepper to taste.
