Gruyère and Black Pepper Scones image

A generous amount of Gruyère and toasty walnuts give these scones a savory richness, which is surprising and delicious. The little cubes of cheese melt into the dough as it bakes, but some sneak out the sides, creating irresistible bits of fricolike crispy cheese. To make the most of your time, you can toast the walnuts on a sheet pan in the oven for 5 to 10 minutes while it's heating, just until they're golden and fragrant. Chives freshen up the mix, but chopped fresh thyme or rosemary would work well, too. Eat the scones warm for maximum enjoyment.

2 cups/256 grams all-purpose flour, plus more as needed
1 tablespoon granulated sugar
1 tablespoon baking powder
2 teaspoons freshly ground black pepper, plus more for finishing
1/2 teaspoon kosher salt (Diamond Crystal)
8 tablespoons/113 grams unsalted butter, cold and cut into 1/2-inch cubes
3 1/2 ounces/100 grams Gruyère cheese, chopped into 1/4-inch pieces
3/4 cup/65 grams toasted walnuts, chopped
2 teaspoons chopped fresh chives
1 cup/105 grams cold buttermilk, plus more as needed
Flaky salt

Steps:

  • Set a rack in the center of the oven and heat the oven to 400 degrees. Line a baking sheet with parchment paper.
  • In a large bowl, add the flour, sugar, baking powder, black pepper and salt, and stir to combine. Add the butter to the bowl and toss to coat the cubes in the flour.
  • Use your fingers to smash each cube of butter into a flat sheet, tossing to coat in flour and break up the butter a bit as you go. You will have some flat pea-size pieces of butter, and some will be worked into the flour completely. Add the cheese, walnuts and chives, and toss to combine.
  • Make a well in the center of the butter and flour mixture, and add the buttermilk. Very gently stir until just combined and shaggy, but don't overmix. If the mixture seems very dry, add another tablespoon or two of buttermilk. If the mixture seems very wet, add a tablespoon or two of flour.
  • Turn the dough out onto a lightly floured surface and pat into a 1/2-inch-thick rectangle. Fold the rectangle in half, then shape it into an 8-inch circle. Cut the dough into 8 equal triangular wedges, and carefully transfer them to the baking sheet; they will be fragile. Brush the tops of the scones with the dregs of buttermilk left in the measuring cup (add a little more if necessary), then sprinkle the scones with flaky salt and more pepper.
  • Bake the scones until golden brown, 19 to 23 minutes. These are best the day they are made, but will last a day or two on the counter in an airtight container. Alternatively, let them cool completely, then transfer to an airtight container and freeze for up to a month. In either instance, warm before serving.

GRUYèRE FONDUE WITH CARAMELIZED SHALLOTS

1 tablespoon butter
1 1/4 cups thinly sliced shallots (about 6 ounces)
1 teaspoon sugar
1 1/2 cups (or more) dry white wine
14 ounces grated Gruy(re cheese (about 3 1/2 cups packed)
2 tablespoons all purpose flour
Generous pinch of ground nutmeg
1 sourdough baguette, cut into 1-inch cubes

Steps:

  • Melt butter in heavy medium skillet over medium heat. Add thinly sliced shallots and sauté 3 minutes. Reduce heat to low; sprinkle shallots with sugar, salt and pepper. Sauté until shallots are caramelized, about 15 minutes. Transfer shallots to small bowl. Add 1 1/2 cups wine to skillet; boil 1 minute.
  • Pour wine into heavy medium saucepan; set over medium-low heat. Toss cheese with flour in medium bowl to coat. Add half of caramelized shallots to wine; add cheese mixture by handfuls, stirring until cheese melts and is smooth before adding more. Thin with more wine if mixture is too thick. Season with nutmeg, salt and pepper.
  • Transfer cheese mixture to fondue pot. Set pot over candle or canned heat burner. Top fondue with remaining caramelized shallots. Serve with bread cubes.

BREAKFAST-SAUSAGE-AND-GRUYERE DROP BISCUITS

4 1/2 ounces breakfast-sausage patties or links, casings removed (from about 4)
2 cups unbleached all-purpose flour
1 3/4 teaspoons baking powder
1/4 teaspoon baking soda
1 1/4 teaspoons kosher salt (we use Diamond Crystal)
1 teaspoon chopped fresh thyme, plus sprigs for sprinkling (optional)
1/4 teaspoon red-pepper flakes
6 tablespoons cold unsalted butter, cut into pieces
3 ounces Gruyère, grated (1 cup)
1 1/4 cups cold buttermilk, plus more for brushing

Steps:

  • Preheat oven to 425°F. Line a baking sheet with parchment, then crumble sausage onto it. Roast until cooked through, 10 to 15 minutes. Let cool 10 minutes, then remove sausage from pan and break into small pieces (you should have 3/4 cup).
  • In a large bowl, whisk together flour, baking powder, baking soda, salt, thyme, and red-pepper flakes. Cut in butter until mixture resembles coarse meal with a few pea-size pieces remaining. Stir in cooked sausage and cheese.
  • Add buttermilk and stir to create a thick, sticky batter (do not overmix). Using two spoons, scoop and drop 8 (approximately 1/2-cup) biscuits onto same baking sheet, leaving about 2 inches between them.
  • Brush tops with buttermilk and sprinkle with thyme sprigs. Bake until golden brown and cooked through, 20 to 25 minutes. Let cool 10 minutes before serving. Biscuits are best eaten still warm from the oven, but can be stored at room temperature, lightly covered, up to 1 day, or frozen up to 1 month. Reheat (after defrosting if frozen) in a 350° oven to refresh, about 10 minutes.

  • Stir in 1 cup buttermilk until it forms a soft, slightly sticky ball.
  • Using lightly floured hands divide dough in to twelve pieces.
  • Form pieces in to balls and place balls onto an ungreased baking sheet, spacing about an inch apart.
  • Brush tops with remaining buttermilk.
  • Bake 15-20 minutes, until tops are light brown.
  • Serve warm.
