One Skillet Beef Tips with Peppers and Onions image

This easy one skillet recipe for beef tips with peppers and onions is hearty, full of flavor, and exactly what you need for a quick weeknight dinner. Not only is this recipe easy and delicious, it is also Whole30 compliant, Paleo friendly, and gluten free. It is sure to be a new family favorite.

1 ½ tbsp ghee or avocado oil
1 pound sirloin steak, cut into small bite sized pieces
2 tsp salt
½ tsp black pepper
1 tbsp apple cider vinegar
3 cloves garlic, minced
1 red bell pepper, diced into large chunks
1 orange bell pepper, diced into large chunks
½ yellow onion, sliced
1 ½ cups sliced baby bella mushrooms
¼ cup sliced green onion, for garnish

Steps:

  • Add the steak to a mixing bowl and season with salt and pepper. Stir until well combined.
  • Heat a large skillet over medium-high heat. Once the skillet is hot, you can add in the ghee. Next, add the steak bites to the skillet cook for 3-5 minutes until browned on all sides. Remove the meat from the pan and set aside.
  • Add the apple cider vinegar to the skillet to deglaze the pan. Then, add the minced garlic, onion, mushrooms, and diced peppers. Cook the veggies for 10-12 more minutes until the sliced onion is translucent and the bell peppers are tender yet crisp.
  • Add the steak and its juices back to the skillet. When the beef is back in the pan, give everything a good stir until well combined and cook for 2-3 more minutes until the steak is hot.
  • Remove the skillet from the heat and garnish with fresh sliced green onion before serving.

2 tablespoons vegetable oil
1-1/4 pounds beef top round steak or top sirloin steak, cut into 1-inch cubes
1 garlic clove, minced
1 medium onion, cut into wedges
1 medium red bell pepper, seeded and cut into strips
1 medium green bell pepper, seeded and cut into strips
1 can (10-1/2 ounces) beef broth
1/4 cup water
3 tablespoons cornstarch
Salt and pepper to taste
Hot cooked rice

Steps:

  • Heat oil in skillet, brown beef on all sides. Add the garlic and continue to cook for 2 minutes. Add onion, peppers and broth; cover and simmer 20 minutes. , Combine water and cornstarch; stir into broth. Cook and stir until gravy is thick and shiny. Add seasonings. Serve over hot cooked rice.

1-1/2 pounds beef top sirloin steak, cut into thin strips
1 teaspoon salt
1/4 teaspoon pepper
2 teaspoons olive oil, divided
2 medium onions, thinly sliced
1 garlic clove, minced
1 can (14-1/2 ounces) diced tomatoes, undrained
1/2 cup reduced-sodium beef broth
1/3 cup dry red wine or additional reduced-sodium beef broth
1 bay leaf
1/2 teaspoon dried basil
1/2 teaspoon dried thyme
3 cups hot cooked brown rice

Steps:

  • Sprinkle beef strips with salt and pepper. In a large nonstick skillet, brown beef in 1 teaspoon oil. Remove and keep warm. , In the same skillet, saute onions in remaining oil until tender. Add garlic; cook 1 minute longer. Stir in the tomatoes, broth, wine, bay leaf, basil and thyme. Bring to a boil. Reduce heat; simmer, uncovered, for 10 minutes. , Return beef to the pan; cook for 2-4 minutes or until tender. Discard bay leaf. Serve with rice. Freeze option: Freeze cooled beef mixture in freezer containers. To use, partially thaw in refrigerator overnight. A Sunday dinner staple, braised beef with tomatoes and onions offers big flavor and melt-in-your-mouth texture with minimal hands-on time.

2 lb. to 3 lb. boneless chuck roast, boneless short ribs, or pork shoulder, cut into 3-by-4-inch pieces
Kosher salt and freshly ground black pepper
2 tbsp. olive oil
4 onions, quartered
1 head garlic, halved and peeled
Several sprigs fresh herbs (such as rosemary, oregano, or thyme)
1 28-ounce) can whole peeled tomatoes

Steps:

  • Season beef with salt and pepper. Heat oil in a large, heavy pot or Dutch oven over medium-high. Add beef and cook, turning occasionally, until browned, 8 to 10 minutes. Transfer to a plate.
  • Add onions, garlic, and herbs to pot. Cook, stirring often, until onions and garlic begin to brown, 4 to 6 minutes. Add tomatoes, crushing with your hands as you add them. Fill tomato can halfway with water, and add to pot, stirring to combine and scraping any browned bits from bottom of pot.
  • Return meat to pot, nestling it in onion mixture and spooning some tomatoes on top; return to a simmer. Cover and cook until meat is very tender when pierced with a fork, 1 1/2 to 2 hours (check occasionally to ensure it's simmering steadily). Uncover pot, increase heat to medium-high, and simmer vigorously until sauce is thickened, 15 to 20 minutes.
  • Remove meat from pot and slice or shred. (Alternatively, let meat cool in sauce.) Meat can be braised up to 4 days ahead of serving. Reheat in sauce.

1 pound beef top sirloin steak
¼ cup soy sauce
2 tablespoons white sugar
2 tablespoons cornstarch
½ teaspoon ground ginger
3 tablespoons vegetable oil, divided
1 red onion, cut into 1-inch squares
1 green bell pepper, cut into 1-inch squares
2 tomatoes, cut into wedges

Steps:

  • Slice the steak into 1/2-inch thick slices across the grain.
  • Whisk together soy sauce, sugar, cornstarch, and ginger in a bowl until the sugar has dissolved and the mixture is smooth. Place the steak slices into the marinade, and stir until well-coated.
  • Heat 1 tablespoon of vegetable oil in a wok or large skillet over medium-high heat, and place 1/3 of the steak strips into the hot oil. Cook and stir until the beef is well-browned, about 3 minutes, and remove the beef from the wok to a bowl. Repeat twice more, with the remaining beef, and set the cooked beef aside.
  • Return all the cooked beef to the hot wok, and stir in the onion. Toss the beef and onion together until the onion begins to soften, about 2 minutes, then stir in the green pepper. Cook and stir the mixture until the pepper has turned bright green and started to become tender, about 2 minutes, then add the tomatoes, stir everything together, and serve.

3 teaspoons olive oil or vegetable oil
1 teaspoon Maggi seasoning extract or Worcestershire sauce
1 clove garlic (medium), minced
1 large white onion, coarsely chopped
4 medium tomatoes, peeled and coarsely chopped, or 1 (14-ounce) can diced tomatoes, drained
3 , Anaheim or poblano chile kimmy, , roasted and peeled

Raise heat to medium and cook, stirring frequently, until the tomatoes soften 4 to 5 minutes. Add the meat and the juices from the bowl. Season with salt and pepper.
