NEW ENGLAND CLAM CAKES
New England Clam cakes are often served at restaurants and roadside stands and are eaten as a finger food.

Steps:
- Heat the oil to 350°F.
- Mix all the liquid ingredients together. Mix all the dry ingredients together. When your oil is hot, add the liquid ingredients into the dry ingredients and mix until just combined.
- Drop a tablespoon of batter into the hot oil at a time. Do not crowd the pot. Fry until golden brown on both sides, about 5 minutes.
- Drain on paper towels and sprinkle with sea salt while still hot.

CLAMCAKES
Steps:
- Mix the flour, baking powder, salt, and white pepper in large bowl. Add the remaining ingredients and mix until well blended.
- In a pot fitted with a oil thermometer, heat the canola oil to 350 degrees. Using a 1/2 cup measure, scoop some clamcake mixture and carefully drop clamcakes into the hot oil. Deep fry in canola oil until golden brown.
MAINE CLAM CAKES
Still one of the most popular seafood items in the state and kids love them too! This picture depicts more of the clam fritter shape, but you can make them either way.

Steps:
- 1. Mix the clams and the cracker crumbs together. If you don't have fresh chopped clams available in your area, you can used canned clams to equal one pint.
- 2. Add eggs, one at a time and mix well.
- 3. Let stand for a few minutes so the crumbs absorb the liquid. The mixute should hold together and be moist.
- 4. Fry in butter in a frypan, by dropping in large spoonfuls. Press down with the back of a spoon to make the cakes about 3/4 of an inch thick.
- 5. Turn the cake over when brown on the bottom and brown the other side. Put them on paper towels and service with ketchup and tarter sauce.

- 1. Chop clams very fine.
- 2. Make a batter by beating eggs, add flour gradually. Add milk slowly, salt and pepper, then the chopped clams. Stir all together.
- 3. Drop by spoonfuls into deep hot fat that will color a 1-inch cube of bread golden brown in 60 seconds (365 degree on fat, thermometer) ; or cook in frying pan holding 1 1/2 inches of hot fat. When brown turn and brown on reverse side.

Digging through my recipe file I came across this one. The card is well-used, so we must have liked them, but there are no notes on the card. I probably made these when we were first married and times were tough. But I'm going to try them again soon!
