Pesto Bean Soup image

This is one of my favorite vegetarian recipes, especially on those cold winter evenings. I make large batches and freeze it. Homemade pesto is tasty, but you can use store-bought to make the recipe really simple. Serve the soup with garlic toast and a green salad. -Liz Bellville, Jacksonville, North Carolina

Yield 8 servings (2-1/2 quarts).

Number Of Ingredients 8

1 carton (32 ounces) reduced-sodium vegetable broth
1 large white onion, chopped
4 garlic cloves, minced
2-1/2 cups sliced baby portobello mushrooms
3 cans (15 to 15-1/2 ounces each) cannellini beans, rinsed and drained
3/4 cup prepared pesto, divided
1/4 cup grated Parmigiano Reggiano cheese
Optional: Additional pesto and cheese

Steps:

  • In a 4-qt. slow cooker, combine the first 5 ingredients. Stir in 1/2 cup pesto. Cook, covered, on low until vegetables are tender, 4-6 hours. Before serving, stir in remaining pesto and the cheese. If desired, serve with additional pesto and cheese.

Add a generous dollop of pesto to the standard sausage and mash - an easy way to liven up your midweek meal

3 large white potatoes
olive oil , for frying
4 pork sausages
200g cherry tomatoes on the vine
½ tub fresh pesto

Steps:

  • Peel and quarter the potatoes, then cook in a large pan of salted, boiling water for 15 mins. Drain and set aside.
  • Pour a glug of olive oil into a large frying pan over a medium heat and cook the sausages for 15 mins. Add the tomatoes to the pan for the final 5 mins. Mash the potatoes well and mix in the pesto. Season and serve with the sausages and tomatoes.

  • Heat oil and cook onion and garlic until soft.
  • Add beans and stir until heated through.
  • Stir in pesto & parsley to serve.

  • Add the drained beans to a saucepan with the vegetable stock, and place over a medium-low heat. Simmer gently for around 5-10 minutes, until the beans are hot and very soft. Mash with a potato masher (I left mine a little chunky for texture, but you can make them completely smooth if you prefer).
  • Remove from the heat, and add the parmesan and pesto, along with plenty of black pepper (you probably won't need any salt unless you used low-sodium stock). Mix until well combined.
  • Serve immediately drizzled with a little extra virgin olive oil, if desired - or, keep in the fridge to reheat in the microwave later.
