BARBECUE SAUCE FOR CANNING

Mom used to make this every year, and use it for braising, baking, grilling or broiling- mostly chicken, but I have used it on pork as well.

Yield 8 1/2 pint jars

Number Of Ingredients 11

5 lbs prepared tomatoes
2 cups coarsely chopped onions
1/2 cup brown sugar
1/2 teaspoon cayenne pepper
1 1/2 cups white vinegar
4 teaspoons coarse salt
2 cloves garlic, minced
1 teaspoon ground allspice
1 teaspoon ground cinnamon
1 teaspoon ground cloves
1 teaspoon ground ginger

Steps:

  • Blanch, peel and coarsely chop tomatoes to measure 10 cups.
  • Combine tomatoes, onion, sugar,and cayenne in a large saucepan.
  • Bring to a boil, stirring constantly.
  • Boil gently, stirring occasionally for about 1/2 hour.
  • Remove from heat and puree mixture.
  • Return mixture to saucepan stir in vinegar, salt,garlic, and spices.
  • Bring to a boil, stirring constantly.
  • Boil gently for about 1 hour, stirring occasionally.
  • Fill boiling water canner with water.
  • Place 8 clean 1/2 pint mason jars in canner over high heat.
  • Place lids and seals in boiling water, boil 5 min to soften seal.
  • Ladle sauce into hot jars, to within 1/4" of top rim.
  • Remove air bubbles with spatula, and re-fill to 1/4" wipe jar to remove any stickiness.
  • Place seal on jar, and apply screw band just until finger tight.
  • Place jars in canner.
  • Cover canner, return water to the boil, process 15 minute Remove jars, allow to cool for 24 hrs, and check seals.
  • Store in a cool dark place.

Here's what you need: tomato, onion, garlic, apple cider vinegar, bourbon, dark brown sugar, garlic powder, mustard powder, smoked paprika, cayenne pepper, chili flakes, salt

Number Of Ingredients 12

12 lb tomato, peeled- (about 5 quarts)
3 cups onion, finely chopped
4 cloves garlic, chopped
1 ½ cups apple cider vinegar
½ cup bourbon
2 cups dark brown sugar, packed
1 tablespoon garlic powder
1 tablespoon mustard powder
2 tablespoons smoked paprika
1 teaspoon cayenne pepper
2 teaspoons chili flakes,
2 tablespoons salt

Steps:

  • Combine tomatoes, onion, and garlic in a large stock pot and bring to a boil; lower heat and simmer 30 minutes or until vegetables are very soft. Working in batches, puree vegetables until smooth with Harvest Pro food mill or in the bowl of a food processor.
  • Return tomato mixture to the pot and add remaining ingredients, bring to a boil over high heat, stirring frequently. Lower heat and simmer until thickened and darker in color, about 1½-2 hours, stirring occasionally to prevent scorching.
  • Prepare boiling water canner while sauce is cooking. Heat jars in simmering water until ready to use. Do not boil. Wash lids in warm soapy water and set aside with bands.
  • Ladle hot BBQ sauce into a hot jar leaving a ½-inch headspace. Remove air bubbles. Wipe jar rim. Center lid on jar and apply band; adjust to fingertip tight. Place jar in boiling water canner. Repeat until all jars are filled.
  • Process jars for 20 minutes, adjusting for altitude. Turn off heat, remove lid, let jars stand 5 minutes. Remove jars and cool 12-24 hours. Check lids for seal. They should not flex when center is pressed.
  • Enjoy!

20 cups chopped cored peeled tomatoes
2 cups finely chopped onions
3 garlic cloves, finely chopped
1 tablespoon hot pepper flakes
1 tablespoon celery seed
1 1/2 cups lightly packed brown sugar
1 cup white vinegar
1/3 cup lemon juice
2 tablespoons salt
1 1/2 tablespoons nutmeg
1 tablespoon dry mustard
1 teaspoon ground ginger
1 teaspoon ground cinnamon

Steps:

  • In a saucepan combine onions, tomatoes, garlic, pepper flakes, and celery seeds. Bring to a boil over high heat, stirring constantly. Reduce heat, cover and boil gently until vegetables soften, about 30 minutes.
  • Working in batches, transfer mixture to a sieve placed over a glass or stainless steel bowl and press with the back of a spoon to extract all liquid and pulp. Discard solids.
  • Return liquid and pulp to saucepan. Add brown sugar, vinegar, lemon juice, salt, nutmeg, mustard, ginger, and cinnamon. Return to boil over medium-high heat, stirring occasionally. Reduce heat and boil gently, stirring frequently, until mixture is thickened to the consistency of a thin bbq sauce, about 30 minutes.
  • Prepare canner, jars and lids. Jar the sauce leaving 1/2 in headspace. Remove air bubbles, wipe rim, place lids and bands.
  • Process 20 minutes.
