1 sweet potato
1 teaspoon oil
½ onion, chopped
⅓ cup low-sugar bbq sauce
salt, to taste
1 head red cabbage, shredded
2 carrots, shredded
2 tablespoons apple cider vinegar
salt, to taste
pepper, to taste
1 cup greek yogurt
2 cloves garlic, chopped
½ teaspoon fresh dill
salt, to taste
pepper, to taste
½ lemon, juiced
7 slider buns

Steps:

  • On a cutting board, use a box grater to shred the sweet potato.
  • Heat a large pan with oil over medium heat. Add the sweet potatoes to the hot pan and cook, stirring occasionally, until they begin to soften, about 2-3 minutes.
  • Add the onions to the pan with the shredded sweet potatoes, and cook until golden brown for about 2-3 minutes.
  • Add the BBQ sauce, salt, and pepper to the sweet potatoes and onions, and stir until fully incorporated. Cook for 3-5 minutes until browned.
  • Add the red cabbage, carrots, apple cider vinegar, salt, and pepper to a bowl and stir to combine. Refrigerate until ready to serve.
  • Add the Greek yogurt, garlic, lemon juice, dill, salt, and pepper to a small bowl and mix to combine. Refrigerate until ready to serve.
  • Add the Greek yogurt sauce onto the bun, top with the BBQ sweet potatoes and slaw.

3 tablespoons olive oil
1 ½ cups BBQ sauce
3 tablespoons lemon juice
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon paprika
¼ teaspoon cayenne
pepper, to taste
salt, to taste
3 cups chicken, cooked, shredded
2 cups red cabbage, chopped
1 ½ cups shredded carrot
½ cup green onion, chopped
2 tablespoons jalapeño, chopped
½ teaspoon paprika
pepper, to taste
1 teaspoon garlic powder
salt, to taste
¼ cup lemon juice
3 tablespoons apple cider vinegar
½ cup olive oil
1 tablespoon honey

Steps:

  • Mix together cabbage, carrots, green onions, jalapeños, paprika, pepper, garlic powder, salt, lemon juice, apple cider vinegar, olive oil, and honey. Chill until ready to use.
  • Heat a skillet over medium heat. Add olive oil, BBQ sauce, lemon juice, onion powder, garlic powder, paprika, cayenne, pepper, and salt. Stir until sauce begins to bubble and thicken.
  • Mix in chicken and stir until fully incorporated.
  • Place BBQ chicken on top of bottom slider bun. Top with slaw. Place top bun. Serve immediately.

12 dinner rolls or Hawaiian sweet rolls
3 cups shredded cooked chicken
⅓ cup barbecue sauce
½ red onion, thinly sliced
6 slices pepper jack cheese
¼ cup fresh parsley, finely chopped
2 tablespoons butter

Steps:

  • Preheat the oven to 350°F (180°C).
  • Slice the rolls in half lengthwise. Place the bottom half in a 9 x 13-inch (23 x 33 cm) rimmed baking dish. Spread the chicken evenly over the rolls, followed by the barbecue sauce, red onion, Pepper Jack cheese, and parsley. Top with the remaining rolls.
  • Brush the tops of the rolls with melted butter. Bake for 20 minutes, until the bread is golden brown. Slice into individual sliders, then serve.

½ yellow onion, sliced
1 pork loin, cut into 2-inch (5-cm) thick rounds
salt, to taste
pepper, to taste
3 cloves garlic, minced
2 cups BBQ sauce, plus more for drizzling
3 sweet potatoes
olive oil, to taste
1 cup shredded carrots
½ purple cabbage
green onion, for garnish

Steps:

  • Layer bottom of crock pot with onion and lay pork loin on top. Season with salt, pepper, and garlic. Top with BBQ sauce.
  • Cook on high for 4 hours or low for 8 hours.
  • "Pull apart" the pork loin using two forks. Cover and let sit and move on to sweet potatoes.
  • Preheat oven to 400˚F (200˚C).
  • Using a fork, poke holes down one side of each sweet potato. Microwave for 3-5 minutes, or until softened. Let sweet potatoes cool before handling.
  • Next, cut sweet potatoes in half and carve out the centers with a spoon, leaving a rim around the outside of each sweet potato.
  • Place sweet potatoes on a baking sheet covered in parchment paper, drizzle with olive oil and season with salt and pepper.
  • Bake for 20 minutes.
  • Add shredded carrots and purple cabbage to the shredded pork and combine.
  • Fill sweet potatoes with pork, drizzle with BBQ sauce, and garnish with green onion.

2 tablespoons olive oil
1 small yellow onion, sliced
4 cloves garlic, minced
1 ¼ teaspoons salt
1 ½ teaspoons pepper
20 oz young green jackfruit, 3 cans, in brine or water
1 ½ teaspoons chili powder
1 ½ teaspoons paprika
1 ½ teaspoons cumin
1 ½ teaspoons liquid smoke
1 ½ cups vegetable broth
1 ¼ cups barbecue sauce
3 cups green cabbage, chopped
3 cups red cabbage, chopped
1 cup carrot, shredded
¾ cup vegan mayonnaise
1 tablespoon dijon mustard
2 tablespoons apple cider vinegar
½ teaspoon salt
¼ teaspoon pepper
12 slider buns, or dinner rolls

Steps:

  • Drain and rinse the jackfruit, then cut into smaller pieces, removing the core.
  • In a medium saucepan, heat the olive oil over medium heat. Once the oil begins to shimmer, add the onion and cook for 4-5 minutes, until semi-translucent.
  • Add the garlic, salt, and pepper, and cook for 2-3 minutes, until the garlic is fragrant. Add the jackfruit, chili powder, paprika, cumin, and liquid smoke, and mix well. Add the vegetable broth, cover, and cook for 15 minutes, until the jackfruit is soft enough to be mashed.
  • Preheat the oven to 400ºF (200ºC). Line a baking sheet with parchment paper.
  • Mash the jackfruit with potato masher or a couple of forks, until it looks pulled or shredded.
  • Transfer the jackfruit to the baking sheet and spread in an even layer.
  • Bake for 25 minutes, until the jackfruit is slightly browned and crispy.
  • Make the coleslaw: add green and red cabbage and carrots to a large bowl. In a small liquid measuring cup, combine the mayo, mustard, apple cider vinegar, salt, and pepper, and mix until creamy. Pour the dressing over the vegetables and toss the coleslaw until the dressing is well-distributed. Set aside.
  • Remove the jackfruit from the oven, and pour the BBQ sauce over. Mix well.
  • Return to the oven, and bake for another 10 minutes, until the edges are slightly crispy.
  • Use a large bread knife to cut the whole sheet of slider buns in half. Remove the top and set aside. Spread the BBQ jackfruit on the bottom half of the buns, then top with coleslaw.
  • Add the top buns, then slice into 12 sliders.
  • Enjoy!
