When a friend brought this to a gathering at church, I simply had to ask for the recipe-what a fast and fun way to serve potatoes! It's always good to find a recipe that can sneak in a few extra veggies; the kids never find the carrots hidden inside this one. -Cheryl Newendorp, Pella, Iowa

1/3 cup butter, cubed
1 small onion, chopped
1 small green pepper, chopped
1/2 cup all-purpose flour
3 cups 2% milk
1 medium carrot, shredded
1 cup shredded cheddar cheese, divided
1/3 cup diced pimientos, drained
1/2 teaspoon salt
1/8 teaspoon pepper
1 package (32 ounces) frozen french-fried potatoes

Steps:

  • Preheat oven to 375°. In a Dutch oven, heat butter over medium heat. Add onion and green pepper; cook and stir until tender, 3-4 minutes. Stir in flour until blended; gradually whisk in milk. Bring to a boil, stirring constantly; cook and stir until thickened, 2-3 minutes., Stir in carrot, 1/2 cup cheese, pimientos, salt and pepper until cheese is melted. Remove from heat. Place french-fried potatoes in a greased 13x9-in. baking dish; pour sauce over top. Bake, uncovered, until bubbly, 30 minutes. Sprinkle with remaining cheese; bake until cheese is melted, 3-5 minutes longer.

1 package (28 ounces) frozen steak fries
1 can (10-3/4 ounces) condensed cheddar cheese soup, undiluted
1/4 cup 2% milk
1/2 teaspoon garlic powder
1/4 teaspoon onion powder
Paprika

Steps:

  • Arrange the steak fries in a single layer in 2 greased 15x10x1-in. baking pans. Bake at 450° for 15-18 minutes or until tender and golden brown. , Meanwhile, in a small saucepan, combine the soup, milk, garlic powder and onion powder; heat through. Drizzle over fries; sprinkle with paprika.

4 cups spinach
2 cups of grated sharp cheddar cheese
3 cups of chopped bell peppers
1 tablespoon butter

Steps:

  • Lightly cover the bottom of a 10-inch non-stick skillet with butter. Heat butter over medium-low heat until hot.
  • Add one package Simply Potatoes Diced Potatoes with Onion to skillet. Cover with lid. Cook for 10 minutes, turning every 3 to 4 minutes.
  • Add 3 cups of chopped bell peppers. Cover with lid. Cook for 3-4 minutes, turning every 2 minutes.
  • Add 2 cups of grated sharp cheddar cheese and 4 cups of spinach. Cook for 2 minutes, turning constantly until cheese is melted and spinach is wilted.

225ml bag baby leaf spinach
6 large eggs
425ml milk
1 tbsp English mustard powder
200g bread (about 3 thick slices)
200g mature vegetarian cheddar
4 clusters of cherry tomatoes on the vine

Steps:

  • Preheat the oven to 190C/gas 5/fan 170C and butter a shallow 2-litre dish. Tip the spinach into a colander in the sink and pour a kettleful of boiling water over it. Leave it to wilt while you make the cheesy base. (Or microwave the spinach according to the packet instructions.)
  • Break the eggs into the bowl of a food processor, pour in the milk, add the mustard and 1 tsp salt. Tear in the bread, crusts and all, then whizz together until smooth. Tip the mixture into a large bowl and grate in three-quarters of the cheese.
  • Squeeze the spinach, to get rid of all the water, then stir it into the cheese mixture and tip into the dish. Grate over the remaining cheese, top with the tomato clusters and bake for 30-35 minutes until risen and golden. Cool and allow to settle a little before serving.

The other ingredients that my recipe contains were added because I love seasonings, along with the combined flavors with quality baked ham.

1 lb baked ham, cubed
1 small green pepper, diced
2 teaspoons Mrs. Dash table blend seasoning
1 cup garlic butter croutons

Steps:

  • To Microwave: Mix the baked ham, green pepper and seasoning into the Simply Macaroni and Cheese. Microwave on high for five (5) minutes. Remove from microwave and stir. Sprinkle croutons over the top of dish and microwave two additional minutes.
  • To Bake: Mix first four ingredients into 8" x 8" greased baking dish.
  • Bake at 350 degrees for 20 minutes. Remove dish from oven and stir.

2 cups monterey jack cheese
1 (10 ounce) can enchilada sauce
1 (20 ounce) bag Simply Potatoes Diced Potatoes with Onion
16 ounces chorizo sausage (Mexican sausage.)

Steps:

  • Roast poblanos over open flame. Put peppers in plastic bag and let peppers steam about 10 minutes.
  • Remove charred skin, slit peppers and remove veins and seeds. Set aside.
  • Grill Chorrizo in pan, breaking it up as it cooks. When almost ready, remove chorrizo and then add the potatoes to chorrizo lard. Coat potatoes and and cook until lightly brown, add chorrizo and mix together.Add a cup enchilada sauce, lower temperature, cover and cook about 10 minutes till potatoes are done.
  • Fill poblanos with potato mixture and set in a baking dish. Pour rest of enchilada sauce at bottom of dish and top poblanos with the cheese.
  • Bake in oven at 325 degrees for about 20 minutes until cheese melted.
