Now that our three children are grown, I am cooking just for my husband and me - though few weeks pass without visitors. 1 pound ground beef
3/4 cup onion
2 garlic cloves, minced
3 tablespoons canola oil, divided
1 cup chopped fresh mushrooms
1 tablespoon tomato paste
1/2 cup beef broth
2 teaspoons prepared horseradish
1 teaspoon ground mustard
1-1/2 teaspoons salt, divided
1/4 teaspoon pepper
1/2 cup diced green pepper
1/2 cup diced sweet red pepper
8 medium potatoes, peeled and cubed
1/3 cup hot whole milk
1 cup shredded cheddar cheese
2 large egg whites

Steps:

  • In a large skillet, brown beef, onion and garlic in 2 tablespoons of oil. Add the mushrooms. Cook and stir for 3 minutes; drain. Place the tomato paste in a bowl. Gradually whisk in broth until smooth. Stir in horseradish, mustard, 1 teaspoon salt and pepper. Add to meat mixture. Pour into a greased 11x7-in. baking pan; set aside. , In the same skillet, saute the peppers in remaining oil until tender, about 3 minutes. Drain and spoon over meat mixture. Cook potatoes in boiling salted water until tender; drain. Mash with milk, cheese and remaining salt. Beat egg whites until stiff peaks form; gently fold into potatoes. Spoon over pepper layer. Bake, uncovered, at 425° for 15 minutes. Reduce heat to 350°; bake 20 minutes longer or until meat layer is bubbly.

It's definitely our family comfort go-to food. 1 pound ground beef
2 cups sliced fresh mushrooms
1 small onion, chopped
1/2 teaspoon salt
1/2 teaspoon garlic powder
1/2 teaspoon pepper
1 can (14-1/2 ounces) petite diced tomatoes, drained
1 package (10 ounces) frozen corn
2 cups frozen cut green beans
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
3/4 cup water
1 pound Yukon Gold potatoes, thinly sliced (about 3 cups)
1 cup shredded cheddar cheese
3/4 cup french-fried onions, optional
1/2 cup bacon bits, optional

Steps:

  • Preheat oven to 375°. In a large skillet, cook beef, mushrooms and onion over medium-high heat 6-8 minutes or until beef is no longer pink, breaking beef into crumbles; drain., Stir in seasonings. Add tomatoes, corn and green beans; heat through, stirring occasionally. In a small bowl, mix soup and water., In a greased 13x9-in. baking dish, layer half each of the following: beef mixture, potatoes and soup mixture. Repeat layers. Sprinkle with cheese and, if desired, french-fried onions and bacon bits., Bake, covered, 1 to 1-1/4 hours or until bubbly and potatoes are tender. Let stand 10 minutes before serving.

Shepherd's Pie Casserole recipe comes together in just a few minutes. Browning the ground beef is as long as it takes to make when using instant mashed potatoes. Once you assemble the layers of beef, potatoes, corn and cheese you can heat it in the microwave to melt the cheese or if making a larger casserole in can be heated in the oven. Shepherd's Pie Casserole also makes a great freezer meal.

1 pound ground beef
6 Servings servings prepared instant mashed potatoes
1 Can can corn kernels (drained)
8 oz. medium cheddar cheese (grated)

Steps:

  • Brown the ground beef. add some spices. I like to use garlic salt and everglades seasoning. While cooking the ground beef cook the instant mashed potatoes following the directions on the box.
  • When the potatoes are done speread them evenly in the bottom of an 8x8 baking dish.
  • Drain the ground beef well.
  • Spread the seasoned ground beef over the mashed potatoes.
  • evenly spread the can of corn over the beef.
  • Sprinkle the shredded cheese over the top of the corn.
  • Bake on 375 until the cheese is melted or in the microwave for 15 minutes until the cheese is melted.

½ cup milk
810 medium white potatoes
1 lb ground beef
1 can peaches & cream corn
1 can peas & carrots
1 can cream soup (any kind)
3 tbsp Cindy's Garlic Balsamic Vinegar
2 tbsp Cindy's Signature Blend Olive Oil
¼ cup parmesan cheese
2 eggs
salt & pepper to taste

Steps:

  • Preheat oven to 350 degrees.
  • Fry ground beef, drain and set aside.
  • Cut up potatoes, boil until cooked, drain and set aside.
  • In a bowl combine soup, eggs, Garlic balsamic, and salt & pepper. Whisk until well blended.
  • In another bowl, add potatoes, milk, salt, pepper and Signature Blend olive oil. Using a hand mixer, beat until blended then add parmesan cheese. Continue to mix until blended (you can add more milk if desired).
  • In a glass baking dish, mix contents of wet ingredients, ground beef and vegetables.
  • Top off with your mashed potatoes and bake at 350 degrees for 30-35 minutes.

5 pounds potatoes (about 10 medium), peeled and cubed
2 pounds ground beef
2 large onions, chopped
2 garlic cloves, minced
2 cans (15-1/2 ounces each) whole kernel corn, drained
1-1/2 cups barbecue sauce
2 packages (8 ounces each) cream cheese, softened
1/4 cup butter, cubed
1 teaspoon salt
1/4 teaspoon pepper
2 cups shredded cheddar cheese

Steps:

  • Preheat oven to 350°. Place potatoes in a stockpot and cover with water. Bring to a boil. Reduce heat; cover and cook until tender, 15 minutes., Meanwhile, cook beef, onions and garlic in a Dutch oven until meat is no longer pink; drain. Stir in corn and barbecue sauce., Drain potatoes; mash with cream cheese, butter, salt and pepper. Spoon meat mixture into 2 greased 13x9-in. baking dishes. Spread mashed potatoes over tops; sprinkle with cheese. , Bake, uncovered, until bubbly, 25-30 minutes. Freeze option: Cool unbaked casseroles; cover and freeze up to 3 months. To use, partially thaw in refrigerator overnight. Remove from refrigerator 30 minutes before baking. Preheat oven to 350°. Cover and bake until bubbly, about 1-1/4 hours. Uncover; bake until cheese is melted and a thermometer inserted in center reads 165°, 5-10 minutes longer.

The best breakfast casserole I've ever made. I combine a few different recipes and this is my picky hubby's most favorite!

cooking spray
1 (12 ounce) package bacon
1 teaspoon butter, or as desired
1 (20 ounce) package frozen cubed hash brown potatoes
salt and ground black pepper to taste
1 (12 ounce) package sliced fresh mushrooms
3 green onions, minced
2 cups shredded Cheddar cheese, divided
10 eggs
2 cups milk
1 teaspoon salt

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Spray a 9x13-inch baking dish with cooking spray. Arrange bacon slices in a single layer on a baking sheet.
  • Bake in the preheated oven until browned and crisp, 20 to 25 minutes. Drain bacon slices on paper towels and transfer 1 to 2 tablespoons bacon grease to a skillet, reserving the remaining bacon grease. Add butter to skillet.
  • Cook and stir potatoes in the hot bacon grease-butter until lightly browned, about 10 minutes; season with salt and black pepper. Transfer potatoes to the prepared baking dish.
  • Heat about 1 tablespoon reserved bacon grease in the skillet over medium heat; cook and stir mushrooms until softened, 5 to 10 minutes. Layer mushrooms over potatoes.
  • Place green onions in the same skillet and remove from heat. Allow green onions to soften from the residual heat in skillet; layer over mushrooms. Crumble bacon over green onion layer; top with 1 cup Cheddar cheese.
  • Blend eggs, milk, and 1 teaspoon salt in a blender until smooth; pour over Cheddar cheese layer. Top casserole with remaining 1 cup Cheddar cheese.
  • Bake in the preheated oven until casserole is set and a knife inserted in the middle comes out clean, 30 to 40 minutes.
