1/2 cup bacardi o flavored rum
2 cups minute maid orange juice
1/4 cup soy sauce
2 oranges, zest of
2 tablespoons chopped of fresh mint
2 tablespoons chopped fresh cilantro
2 teaspoons minced garlic
1/2 teaspoon curry powder
1 roasting chicken, cut into pieces

Steps:

  • Combine BACARDI® O, Minute Maid orange juice, soy sauce, orange zest, mint, cilantro, garlic and curry in a shallow baking dish.
  • Add chicken pieces, turning to coat.
  • Grill chicken over medium-hot fire, basting with marinade during the first 10 minutes of cooking, until cooked thoroughly.

3 ounces red bliss potatoes, halved
Kosher salt and freshly ground black pepper
3 ounces grapeseed oil
1 teaspoon garlic powder
1 teaspoon paprika
1/2 chicken
1 cup store-bought BBQ sauce, such as Cattlemen's, plus more if needed
3 ounces broccoli florets

Steps:

  • Preheat the oven to 350 degrees F.
  • Season the potatoes with 1 1/2 teaspoons salt and 1 teaspoon pepper and coat with 1/2-ounce of the oil. Roast the potatoes for 15 minutes.
  • Preheat the oven to 375 degrees F.
  • Mix 1 1/2 teaspoons salt, 1 teaspoon pepper, the garlic powder and paprika. Sprinkle the seasoning on the chicken, then sear skin-side-down in a hot pan with 1/2-ounce oil.
  • Brush the chicken with the BBQ sauce then roast skin-side-up until the internal temperature of the breast is 160 degrees F, 15 to 20 minutes. Rest the chicken for 5 minutes.
  • Bring a pot of salted water to a boil. Blanch the broccoli until bright green and tender, 1 to 2 minutes, then shock in an ice bath to stop the cooking and preserve the vibrant color.
  • Saute the roasted potatoes with the broccoli in 1/2-ounce oil, adding up to 1 1/2-ounces more oil if needed, and season with some salt and pepper.
  • Pour some BBQ sauce on the plate, then place the chicken on top and garnish with the sauteed potatoes and broccoli.

6 boneless chicken breast halves
pepper
salt (optional, I don't use)
1 teaspoon minced garlic
2 tablespoons butter or 2 tablespoons margarine
2 teaspoons finely shredded lime peel
1/4 cup fresh lime juice
1/2 teaspoon ground ginger
1/4 teaspoon crushed red pepper flakes
2 medium oranges, peeled

Steps:

  • Rinse chicken, pat dry with paper towels. Season with pepper and salt (optional).
  • Cook chicken and garlic in butter in skillet over medium heat for 8-10 minutes, or until chicken is tender and juices run clear. Turn chicken at least once and stir garlic occasionally.
  • While chicken is cooking, combine lime peel, lime juice, ginger, and crushed red pepper.
  • Peel oranges, removing pith. Reserving juice, cut oranges in half lengthwise, then cut crosswise into thin slices.
  • Add any reserved orange juice and the lime juice mixture to skillet.
  • Place orange slices on top of chicken. Cover and cook 1-2 minutes or until heated through.
  • To serve, spoon any drippings over chicken.

1 cup butter or 1 cup margarine
1 1/2 cups bacardi white rum or 1 1/2 cups bacardi golden rum
1 1/2 cups ketchup
1 cup orange juice
2/3 cup honey
1/2 cup fresh lemon juice
2 tablespoons minced garlic
1 teaspoon salt
1/2 teaspoon black pepper
1/4 teaspoon cayenne pepper

Steps:

  • Over medium-high heat, melt butter in saucepan. Stir in rum, ketchup, orange juice, honey, lemon juice, garlic and seasonings.
  • Lower heat and cook, stirring occasionally, about 40 minutes or until thickened.
