BIG BASIL TURKEY BURGERS
I adapted this recipe from another one I had. Our family loves them. The Basil sauce makes all the difference.

Steps:
- Mix together ground turkey, chopped onion, garlic, soy sauce and egg. Mixture will be very wet. Plug in griddle and heat to 350, or you can fry them in a pan with a little cooking spray to keep from sticking.
- divide meat mixture into 6 portions and pat out to about 1/2 thickness. They will be about 4 to 6 inches round. They shrink up a lot so I pat them a little larger than the buns diameter. fry about 5 min and flip and fry on the other side about 5 minutes or until done.
- For sauce: mix together mayo, mustard, tabasco and about 1/2 to 1 cup chopped fresh basil. Place Burger on bun top with sauce, and add desired veggies. MMMM.

ACTUALLY DELICIOUS TURKEY BURGERS
This is a simple and delicious recipe. After making them the first time my husband said 'no more' to beef burgers. These are really good - any cooking method may be used, and they freeze very well. The recipe can also be used for meatballs or meat loaves.

- In a large bowl, mix ground turkey, seasoned bread crumbs, onion, egg whites, parsley, garlic, salt, and pepper. Form into 12 patties.
- Cook the patties in a medium skillet over medium heat, turning once, to an internal temperature of 180 degrees F (85 degrees C).

TOMATO & BASIL TURKEY BURGERS
I'd never used ground turkey before but saw this recipe in Recipes + and was itching to try it. These burgers are so easy & so full of flavour, you can use any flavour gourmet chunky dip, I used a mixture of the red pepper & basil ones. In Australia these dips are made by Wattle Valley and a few other companies, I'm not sure of the availability overseas but recipe #222384 or something similar could be used as the dip addition.

Steps:
- Combine mince, breadcrumbs, egg and dip together in a mixing bowl, season with salt & pepper.
- Shape into 4 large flat patties, cover & chill for 20 minutes.
- Heat a barbeque or non-stick frypan over moderate heat, cook for 3-4 mins each side or until tender but still moist.
- Stack patties on toasted buns (smeared with mayo if using) with greens, tomato & onion.
- Dollop with extra dip & serve.

- In a small bowl, combine the egg, bread crumbs, celery, onion, parsley, Worcestershire sauce and seasonings. Crumble turkey over mixture and mix well. - Gently mix together the ground turkey, feta crumbles, chopped basil, worcestershire sauce, salt, and pepper with your fingertips. Make sure not to overwork the meat, but rather to think of distributing the ingredients evenly.
- Form the meat mixture into 4 patties, keeping in mind that the burger will shrink up during cooking. For this reason, I usually make them flatter than I ultimately want, and a little bit wider than the bun. Don’t make the patties too thick or they’ll take too long to cook.
- To cook on the stove, heat up a cast iron skillet over medium high heat for a couple minutes. Once the pan is hot, add the turkey patties and cook for about 3 minutes on each side. Time will vary depending on how hot your pan is and how thick your patties are, but you want the center of the turkey burger to read at 165 degrees F. If you find that the burgers are browning too much before the interior is cooking through, you can put a lid on the pan, or pop the burgers into a hot oven for a few minutes to finish cooking.
- You may also grill the burgers either on an indoor or outdoor grill. About 3 minutes on each side as well, depending on how intense the heat is. Check for doneness using a thermometer, aiming for 165F.
