BASIL PARMESAN BREAD

Steps:
- In a large bowl, dissolve yeast in warm water. Add milk, sugar, oil, salt and 4 cups flour. Beat on medium speed until smooth. Stir in cheese, tomatoes, basil, pepper sauce and enough remaining flour to form a soft dough (dough will be sticky)., Turn dough onto a floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease the top. Cover with plastic wrap and let rise in a warm place until doubled, about 1-1/2 hours., Punch down dough. Divide in half and shape into loaves. Place in two greased 9x5-in. loaf pans. Cover with kitchen towels; let rise in a warm place until doubled, about 1 hour. Preheat oven to 375°., Bake until golden brown, 25-30 minutes. Remove from pans to wire racks to cool.

BASIL PARMESAN SPREAD

Steps:
- 1) Line a medium sized bowl with plastic wrap leaving a 4-inch overhang. 2) In food processor or blender combine spinach, olive oil, basil, garlic and parmesan cheese. Blend until almost smooth. 3)In a separate bowl mix the cream cheese and goat cheese until blended and smooth. (Mixing with fork will suffice.) 4) In the bowl lined with plastic wrap, layer, in thirds, the cheese mixture and spinach. Top with walnuts and sun-dried tomatoes. Repeat for additional layers. When you have used all of your ingredients, fold the edge of the plastic wrap over the cheese ball. Mold into a mound. Refrigerate for at least an hour or two before serving.
BASIL SPREAD FOR SANDWICHES
This basil spread is great on sandwiches instead of using plain mayo. The Wholefoods market I go to uses it on some of their sandwiches but I have not made it myself. The recipe comes from their "American Summer Style" recipe booklet. In the booklet it is used on their grilled veggie sandwich but I have had it on their salmon sandwich among many others and it is very good.

Steps:
- In a food processor, blend the spinach, basil and garlic. Gradually mix in the olive oil and Parmesan cheese. Process until smooth. Salt and pepper to taste.
- Blend cream cheese and feta cheese in a medium bowl.
- Line a separate medium bowl with plastic wrap. Spread 1/2 the cream cheese mixture in the bowl. Top with sun-dried tomato paste and the spinach mixture. Cover with remaining cream cheese mixture. Pat together, cover and chill in the refrigerator at least 1 hour before serving. Flip out of the plastic lined bowl onto a medium serving dish to serve.

Steps:
- Blend spinach, basil and garlic in a food processor.
- Gradually add oil and parmesan cheese.
- Process until smooth. Add salt and pepper to taste if desired.
- In a seperate bowl, blend cream and feta cheeses.
- In a serving dish, spread half of the cheese mixture.
- On top of this, spread the tomato paste, and then the spinach mixture.
- Spread the remaining cheese mixture on top.
- Refrigerate before serving.
