LEMON-BASIL MOJITO MOCKTAILS
In this twist on the classic summer beverage, lemon and basil take the place of mint. For a grown-up version, just add your favorite rum or vodka. -Cheryl Perry, Hertford, North Carolina

Steps:
- In a small saucepan, bring sugar and water to a boil. Cook and stir until sugar is dissolved. Place half the basil in a small bowl. With a pestle or wooden spoon, crush basil until its aroma is released. Stir into sugar mixture. Remove from heat; cool completely. Strain; refrigerate until cold., Place 2 cups crushed ice and remaining basil in a 4-qt. pitcher. Using a muddler or a wooden spoon, press basil leaves against ice until their aroma is released. Stir in basil syrup and soda. Serve over crushed ice in tall glasses; squeeze lemon wedges into drink.

- In a tumbler, muddle 1 lime wedge and the basil. Fill tumbler with ice. Add rum and syrup. Top with club soda. Stir well. Garnish with remaining lime wedge.

STRAWBERRY-BASIL MOJITOS

- For the strawberry-basil puree: To make the simple syrup, heat the sugar and 2 cups water in a saucepan over medium heat, stirring as needed, until the sugar has completely dissolved. Set aside and allow to cool completely.
- Add half of the strawberries, lime juice and basil to the bowl of a food processor. Pulse until you reach a consistency that makes you happy. I do 10 to 15 pulses, which leaves a good bit of texture. Transfer to a pitcher or container. Repeat with the other half and add to the same container. Pour in the room temperature simple syrup, mix and chill for at least 30 minutes.
- For the strawberry-basil mojitos: Pour 1/2 cup of the strawberry basil puree into each glass. Top with 2 ounces of your favorite light rum, add ice and stir gently to combine. Top off each glass with a splash of soda. Garnish each drink with a stalk of basil and a lime wedge.
MOJITO WITH BASIL
Steps:
- In a tall glass with back of a spoon crush mint and basil with sugar and lime juice until sugar is dissolved and stir in rum. Add ice cubes and top off drink with club soda or seltzer water.
- Stir drink well and garnish with mint, basil, and lime.
STRAWBERRY BASIL MOJITO
We're right in the middle of bountiful strawberry season. We eat strawberries on everything in the summer, don't you? Did you know that most strawberry farmers have to use organic growing conditions ANYWAY to get strawberries to grow, even if their farm is not certified organic? And that frozen, fresh, organic or not, just EAT THEM anyway you can get them in your body. The nutritional value is the same. I'm sharing one of my favorite items from a Strawberry Get-Together with you. Cuz it's awesome. And because a lot of people have been bugging me for this recipe.

- Combine lime juice and basil leaves in the bottom of a highball glass; use a wooden spoon to muddle the basil.
- Stir in rum and strawberries.
- Fill glass with ice cubes and top with club soda.
- Garnish with a lime slice and a whole strawberry, and serve.
- Makes 1 cocktail.

- Place 1/4 cup of sugar and 4 basil leaves in the blender or food processor and process until well blended. (You can also make the basil sugar using this method.) Pour the sugar onto a plate and set aside.
- Put the remaining basil leaves in a large shaker along with the lime juice and a tablespoon or so of the remaining sugar. Muddle this mixture until the basil leaves have broken into little pieces. Add the rum and several ice cubes. Cover and shake until well chilled.
- Rub a lime wedge along the rim of two short glasses. Dip in the basil sugar. Add a couple ice cubes to each glass and divide the drink between them. Top off with club soda and stir. Taste and add a bit more sugar, if desired. Garnish with a lime wedge. Enjoy!
- * We made Strawberry Basil Mojitos too! Muddle the basil with 1/2 ounce of Strawberry Simple Syrup instead of the tablespoon of white sugar. Add more syrup to taste, after you have filled each glass.

- Whirl 2 basil leaves and 1/4 cup sugar in a food processor until well blended; transfer to a plate and set aside.
- Put 6 to 8 remaining basil leaves in a large cocktail shaker with a few ice cubes, the remaining 4 tsp. sugar, and lime juice. Muddle the mixture with the back of a thick wooden spoon, keeping your hand over the top to prevent spilling, until basil has broken up.
- Add rum and a few more ice cubes to shaker, cover, and shake to blend. Rub a lime wedge along rim of 2 lowball glasses and dip in basil sugar (reserve remaining sugar for more cocktails). Add a few ice cubes to each glass. Remove top from shaker (do not strain), and divide mixture between glasses. Top off each with club soda and stir. Garnish with a lime wedge.
