Homemade Black Bean Veggie Burgers image

You will never want to eat frozen veggie burgers again. These are so easy, and you'll be proud to have created such a vegetarian delight.

1 (16 ounce) can black beans, drained and rinsed
½ green bell pepper, cut into 2 inch pieces
½ onion, cut into wedges
3 cloves garlic, peeled
1 egg
1 tablespoon chili powder
1 tablespoon cumin
1 teaspoon Thai chili sauce or hot sauce
½ cup bread crumbs

Steps:

  • If grilling, preheat an outdoor grill for high heat, and lightly oil a sheet of aluminum foil. If baking, preheat oven to 375 degrees F (190 degrees C), and lightly oil a baking sheet.
  • In a medium bowl, mash black beans with a fork until thick and pasty.
  • In a food processor, finely chop bell pepper, onion, and garlic. Then stir into mashed beans.
  • In a small bowl, stir together egg, chili powder, cumin, and chili sauce.
  • Stir the egg mixture into the mashed beans. Mix in bread crumbs until the mixture is sticky and holds together. Divide mixture into four patties.
  • If grilling, place patties on foil, and grill about 8 minutes on each side. If baking, place patties on baking sheet, and bake about 10 minutes on each side.

1 cup canned beans, such as pinto, kidney or black beans, rinsed and drained
1/2 cup walnuts
1/2 cup panko breadcrumbs
1 teaspoon kosher salt
1 teaspoon onion powder
1/2 teaspoon garlic powder
1/4 teaspoon freshly ground black pepper
1 large egg, lightly beaten
3 tablespoons BBQ sauce
1 tablespoon olive oil
4 slices your favorite cheese, optional
4 burger buns
Desired toppings, for serving

Steps:

  • In a food processor, pulse the beans until coarsely chopped, then transfer to a large mixing bowl. Pulse the walnuts in the food processor until finely chopped, then transfer to the mixing bowl with the beans. Add the breadcrumbs, salt, onion powder, garlic powder, pepper, egg and 2 tablespoons of the BBQ sauce and mix well. Divide the mixture into 4 equal parts. Shape into burger patties and refrigerate for 30 minutes.
  • Heat a nonstick skillet over medium-high heat. Add the olive oil. Brush the top of each burger with the remaining 1 tablespoon BBQ sauce. Cook the burgers BBQ sauce-side down for 3 minutes. Flip and top each with a slice of cheese if using. Cover and cook until the cheese is melted and the burgers are heated through, about 3 minutes. Place the burgers on the buns and top with desired toppings.

Moist, delicious vegetarian alternative to boring frozen veggie burgers. These are easy to make and taste wonderful on whole-grain buns with some cheddar cheese, tomato and lettuce for crunch. Be watchful while cooking these ... the sugar content in the barbecue sauce can cause the burgers to blacken kind of quickly. Tastes great on the grill, too ... just keep an eye on them!

1 teaspoon olive oil
1/2 cup minced onion
1/2 cup chopped and seeded plum tomato
1 teaspoon minced jalapeno chiles, more if you like or 1 teaspoon serrano pepper
1 clove garlic, minced
1 teaspoon chili powder
1 (15 ounce) can kidney beans, rinsed,well drained
1/4 cup dry breadcrumbs
2 tablespoons barbecue sauce (I like homemade or Uncle Dougie's, a brand out of Barrington, IL)
1 egg white, beaten
4 whole grain buns, toasted
4 slices cheddar cheese
4 leaves lettuce
4 slices thick tomatoes
avocado, slices
barbecue sauce (Whatever else floats your boat ... sour cream?)

Steps:

  • Heat oil in nonstick skillet over medium heat.
  • Add next onion, plum tomato, jalapeno, garlic and chili powder; sauté 5 minutes.
  • Cool slightly.
  • Using fork, coarsely mash beans in bowl.
  • Combine with onion mixture, breadcrumbs, 2 tablespoons of the barbecue sauce and egg white.
  • Shape mixture into four 1/2-inch-thick patties.
  • (Can be prepared 4 hours ahead. Cover and chill.) It will look as though these little burgers will just fall apart and turn to mush, but they stay together really well once they"hit the pan"!
  • If grilling, oil the rack or spray grill rack with nonstick spray, then fire up coals to medium heat.
  • If pan-frying, heat a little olive oil over medium heat.
  • Place patties on grill or in skillet and cook until golden brown and heated through, about three minutes per side.
  • Place burgers on buns.
  • Serve with more barbecue sauce, and cheese, tomato, lettuce, avocado, or whatever topping you like!

1 cup sweet potato, peeled and sliced into 1/4 in thick half moons
3 ½ tablespoons olive oil, divided
⅔ cup raw walnut
1 can black beans, drained, rinsed, and air-dried
2 cups cremini mushroom, washed and stemmed
1 ¼ teaspoons kosher salt, divided, plus more to taste
1 cup cooked quinoa, cooled, divided
2 ½ teaspoons McCormick® chili powder, plus more to taste
1 teaspoon McCormick® Smoked Paprika, plus more to taste
1 teaspoon Mccormick® ground cumin, plus more to taste
1 cup Stubb's® Original BBQ Sauce, divided
4 burger buns, sliced and toasted
4 butter lettuce leaves
1 avocado, peeled, pitted, and thinly sliced
1 cup shredded red cabbage

Steps:

  • Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
  • Arrange the sweet potato in a single layer on one third of the baking sheet. Drizzle with ½ tablespoon of olive oil and toss to coat. Bake for 10 minutes, then remove the baking sheet from the oven and spread the walnuts next to the sweet potatoes, taking up another third of the baking sheet. Return to the oven for 5 minutes, then remove the baking sheet from the oven. Flip the sweet potatoes and stir the walnuts, then spread the black beans in a single layer on the remaining third of the baking sheet. Return the baking sheet to the oven and bake for another 5 minutes, until the black beans are dry and cracked open, the walnuts are golden brown, and the sweet potatoes are cooked through and browning around the edges. Remove from the oven and set aside to cool slightly. Leave the oven on.
  • Heat 1 tablespoon of olive oil in a large cast iron skillet or grill pan over medium-high heat. Add the mushrooms and ¼ teaspoon salt and cook for 4-5 minutes, stirring occasionally, until the mushrooms are browned and have shrunk to half of their original size. Transfer the mushrooms to a bowl. Set aside the pan for cooking the burgers (no need to wipe it out).
  • Add the roasted black beans and walnuts to a food processor and pulse 3-4 times, until the mixture is just crumbly (do not overprocess). Add the mushrooms, sweet potatoes, ½ cup quinoa, McCormick® Chili Powder, McCormick® Smoked Paprika, McCormick® Ground Cumin, remaining teaspoon of salt, and ¼ cup Stubb's® Original BBQ Sauce and pulse until the sweet potatoes and mushrooms are broken down into smaller pieces and the mixture is well combined but still has some texture; do not overprocess into a paste.
  • Transfer the black bean mixture to a large bowl and stir in the remaining ½ cup quinoa. Season with more salt, chili powder, paprika, and/or cumin to taste.
  • Line the baking sheet with a clean sheet of parchment paper.
  • Using a ½-cup measuring cup and wet hands, pack the black bean mixture into the measuring cup, then tap out onto the palm of one hand. Use the other hand to gently press into a ½-inch-thick patty. Carefully place on the prepared baking sheet, then repeat to make 3 more patties. Chill the patties in the refrigerator, uncovered, for 30 minutes.
  • In the same pan used for the mushrooms, heat the remaining 2 tablespoons of olive oil over medium-high heat until shimmering. Carefully add the burgers to the pan and cook for 8-10 minutes, carefully flipping halfway, until browned on both sides. Brush the top of each patty with 1 tablespoon of Stubb's® Original BBQ Sauce, then transfer the pan to the oven for 10 minutes, or until the sauce starts to brown.
  • To assemble, place a leaf of butter lettuce on the bottom half of a toasted bun, then top with a black bean patty, ¼ of the avocado, and ¼ cup red cabbage and drizzle with 2 tablespoons of Stubb's® Original BBQ Sauce. Finish with the top bun. Repeat with the remaining ingredients.
  • Enjoy!

PULLED BBQ AUBERGINE & BLACK BEAN BURGERS

2 large aubergines, pricked all over with a fork
1 tbsp olive oil
1 large onion, thinly sliced
1 heaped tsp garlic granules
2 tsp smoked paprika
1 tbsp demerara sugar
1 tsp dried oregano
5 tbsp barbecue sauce
400g can black beans, drained
4 burger buns, toasted and lightly buttered
red onion or pink pickled onion, shredded lettuce, coleslaw and corn on the cob, to serve (optional)

Steps:

  • Heat the grill to high and grill the aubergine, turning occasionally, until blackened and soft all over, about 20-30 mins. Set aside to cool.
  • Meanwhile, heat the oil in a large ovenproof pan over a medium heat, add the onion and fry until softened and golden, about 10 mins. Heat the oven to 200C/180C fan/gas 6.
  • Peel the skin from the cooled aubergine and discard it, or scoop out the flesh using a spoon, then put in the pan with the onion. Add the garlic granules, paprika, sugar, oregano, 1 tsp sea salt and 1 tsp black pepper. Stir until aromatic, then mix in the barbecue sauce along with the black beans. Season and bake until the sauce is rich and thick, and the aubergine resembles pulled pork - about 10-15 mins.
  • Pile into the burger buns with the red onion or pink pickled onion and any other burger fillings you like. Enjoy with coleslaw and corn on the cob on the side, if you like.

I've looked at other bean burger recipes on Zaar, but none can quite compare. This is a yummy concoction with its own BBQ sauce, but you can of course use bottled.

1/2 cup adzuki beans
1/2 cup black-eyed peas
6 tablespoons vegetable oil
1 onion, finely chopped
1 teaspoon yeast extract
3/4 cup grated carrot
1 1/2 cups whole wheat bread crumbs
2 tablespoons whole wheat flour
1 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon chili powder
1 teaspoon celery salt
2 tablespoons muscovado sugar
2 tablespoons red wine vinegar
2 tablespoons Worcestershire sauce (vegetarian)
3 tablespoons tomato paste
1 dash Tabasco sauce

Steps:

  • Soak beans and bring to a boil unless canned. Drain and rinse well.
  • In mixing bowl, slightly mash beans and set aside.
  • Heat 1 tablespoon oil in skillet and cook onion 3-4 minutes. Mix in beans, yeast, carrot, bread crumbs, and seasoning. Mix until binds well.
  • With wet hands, divide into 6 parts and form into burgers. Put flour on a plate and coat burgers.
  • For sauce, mix all ingredients until well blended.
  • Cook burgers on grill 3-4 minutes each side, brushing with oil from time to time. Serve on buns with a spoonful of BBQ sauce.
