1 package (8 ounces) cream cheese, softened
3/4 cup shredded cheddar cheese
3/4 cup shredded Monterey Jack cheese
6 bacon strips, cooked and crumbled
1/4 teaspoon salt
1/4 teaspoon garlic powder
1/4 teaspoon chili powder
1/4 teaspoon smoked paprika
1 pound fresh jalapenos, halved lengthwise and seeded
1/2 cup dry bread crumbs
Optional: Sour cream, French onion dip and ranch salad dressing

Steps:

  • Preheat air fryer to 325°. In a large bowl, combine the cheeses, bacon and seasonings; mix well. Spoon 1-1/2 to 2 tablespoons into each pepper half. Roll in bread crumbs., Spritz fryer basket with cooking spray. Working in batches if needed, place poppers in a single layer in basket. Cook until cheese is melted and heated through, 15-20 minutes. If desired, serve with sour cream, dip or dressing.

1 banana, sliced into 1/8-inch thick diagonals
avocado oil cooking spray

Steps:

  • Line air fryer basket with parchment paper.
  • Preheat an air fryer to 375 degrees F (190 degrees C).
  • Place banana slices into the basket, making sure that they are not touching; cook in batches if necessary. Mist banana slices with avocado oil.
  • Cook in the air fryer for 5 minuets. Remove basket and flip banana slices carefully (they will be soft). Cook until banana slices are browning and caramelized, an additional 2 to 3 minutes. Carefully remove from basket.

1/4 cup butter, softened
3/4 cup sugar
1 large egg, room temperature
1 cup all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
2/3 cup mashed ripe banana (about 1 medium)
1/2 cup chopped pecans

Steps:

  • Preheat air fryer to 325°. In a large bowl, cream butter and sugar until light and fluffy, 3-4 minutes. Beat in egg. In another bowl, whisk flour, baking soda and salt; add to creamed mixture alternately with banana, beating well after each addition. Fold in pecans., Transfer to a greased 8-in. round baking pan that will fit in the air fryer. Cover with foil. Cook 25 minutes. Uncover; cook until a toothpick inserted in center comes out clean, 8-10 minutes. Cool in pan on a wire rack for 10 minutes before removing from pan.

This recipe comes from my long time friend, Tracy. I really can not believe she shared it with me.....all this time, I thought she cast some magic spell over the frying pan to make them taste so good! Turns out it was just the saltine crackers! The mystery is over...... Do keep in mind, that this is NOT a "batter" recipe (if you love breading, you may want to try something else). The coating is light and crispy and you end up with more coverage on the 'interior' part of the pepper than the exterior. I think they are wonderful this way!

10 banana peppers (washed, sliced lengthwise and seeds removed)
1 cup buttermilk
1 cup cornmeal
1 cup saltine crackers, crushed
vegetable oil (for frying)

Steps:

  • Heat vegetable oil in frying pan over medium heat.
  • In medium bowl, mix together equal parts corn meal and crushed saltines.
  • Prepare another shallow bowl of buttermilk.
  • Dip banana peppers in buttermilk.
  • Coat with cornmeal/cracker mixture.
  • Fry in veg oil over medium heat until golden brown.
  • Drain/cool slightly on paper towels.
  • Enjoy alone or with cocktail sauce!
