LAMB CHOPS WITH POLENTA AND GRILLED SCALLION SAUCE



Lamb Chops with Polenta and Grilled Scallion Sauce image

Grill scallions and jalapeño alongside lamb chops and sliced polenta, then chop them up with fresh basil to make a zesty, spicy, smoky sauce that goes great with everything on the plate. A little bit of that sauce mixed with yogurt becomes an instant salad dressing for the accompanying salad of seasonal greens and cherries.

8 lamb rib or loin chops (about 2 pounds)
1 1/2 teaspoons plus 1/8 teaspoon kosher salt, divided
1/2 teaspoon freshly ground black pepper
1 pound prepared polenta, sliced into 1/2" rounds
1/2 cup olive oil, plus more for brushing
1 bunch of scallions, roots trimmed
1 jalapeño, halved lengthwise
1 cup basil leaves, finely chopped
1/4 cup fresh lemon juice
3 tablespoons plain yogurt
6 cups torn leafy lettuce, such as green leaf lettuce
1 cup cherries (about 6 ounces), pitted, halved

Steps:

  • Season lamb chops with 1 tsp. salt and 1/2 tsp. pepper. Prepare a grill or grill pan for medium-high heat. Brush polenta slices lightly with oil on both sides.
  • Working in batches if needed, grill scallions, jalapeño, lamb chops, and polenta slices until lightly charred and an instant-read thermometer inserted into the thickest part of lamb registers 125°F for medium-rare, 2-3 minutes per side. The scallions may take a couple minutes longer; you want them to be nice and tender before you remove them from the grill.
  • Finely chop scallions and jalapeño. Transfer to a medium bowl. Add basil, lemon juice, 1/2 cup oil, and 1/2 tsp. salt and whisk to combine. Transfer 1/4 cup scallion sauce to a large bowl and whisk in yogurt and remaining 1/8 tsp. salt. Add lettuce and cherries and gently toss with your hands until thoroughly coated.
  • Divide salad among plates. Arrange lamb and polenta alongside, then top both with remaining scallion sauce.
  • Do Ahead
  • Scallion sauce can be made 2 days ahead. Transfer to an airtight container and chill.

2 pounds (2 pints) plain yogurt (regular or low-fat)
1/2 cup good olive oil, plus more for brushing grill
1 lemon, zested
1/2 cup freshly squeezed lemon juice (3 lemons)
3/4 cup fresh whole rosemary leaves (2 large bunches)
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
1 (5-pound) butterflied leg of lamb (9 pounds bone-in)

Steps:

  • Combine the yogurt, olive oil, lemon zest and juice, rosemary, salt, and pepper in a large non-reactive bowl. Add the lamb, making sure it is covered with marinade. Marinate in the refrigerator, covered, overnight or for up to 3 days.
  • Bring the lamb to room temperature. Prepare a charcoal grill with hot coals. Scrape the marinade off the lamb, wipe the meat with paper towels, and season it generously with salt and pepper. Brush the grill with oil to keep the lamb from sticking, and grill on both sides until the internal temperature is 120 to 125 degrees for rare. This will take 40 minutes to 1 hour, depending on how hot the grill is.
  • Remove the lamb to a cutting board, cover with aluminum foil, and allow to rest for 20 minutes. Then slice and serve.

Here is a somewhat different take on lamb kebabs for the grill. The meat is bathed in a spicy-cool Asian marinade and threaded on skewers with whole scallions placed crosswise so all can be seared together. My butcher suggested top round of lamb, a cut I had never used, but he knew what he was talking about: It was excellent, lean and tender. The scallions become lightly charred and smoky. Romesco, the Spanish pepper, tomato and nut emulsion that's often served as a dip for grilled baby leeks, would be a perfect sauce alongside.

1 1/2 pounds well-trimmed boneless top round lamb
3 tablespoons extra-virgin olive oil
1 tablespoon grated ginger
1 teaspoon Chinese five-spice powder
1 teaspoon ground cumin
1/4 teaspoon ground black pepper
1/4 teaspoon salt, or to taste
1 tablespoon Vietnamese fish sauce
1 tablespoon soy sauce
3 limes
3 bunches scallions

Steps:

  • Cut lamb in 2-inch chunks; you should have about 20 pieces. In a bowl, combine 2 tablespoons oil with ginger, five-spice, cumin, pepper, salt, fish sauce, soy sauce and juice of 2 limes. Add lamb, mix to coat well and set aside at room temperature 3 hours.
  • Trim scallions of roots and outer layer of white and cut back green so scallions are 6 to 8 inches long. Coat with remaining oil and set aside. Light grill. Thread meat on long skewers, alternating each chunk of meat with a scallion by running skewers through the center of the scallions crosswise so the scallions stick out on either side of the skewer. Brush meat and scallions with some of remaining marinade.
  • Grill skewers of meat and scallions close to your source of heat, basting occasionally with marinade. Turn skewers once or twice, about 5 minutes per side, depending on the heat of the grill, until lamb is medium-rare and scallions are lightly charred. Arrange skewers on a platter and serve with wedges of remaining lime.

GRILLED LAMB WITH SCALLION PANCAKES



Grilled Lamb With Scallion Pancakes image

Here is a recipe for grilled lamb inspired by Northern China. It's treated to a five-spice and soy sauce rub, and served, in a nod to Peking duck, with cucumbers, hoisin sauce and pancakes. The pancakes are not the typically thin crepes served for wrapping slices of Peking duck. Instead they are classic scallion pancakes, a dim sum item usually eaten alone. Here they're spread with hoisin sauce and topped with slices of lamb and cucumber. Alternatively, you could serve the pancakes like tortillas, to wrap around the lamb, taco-style. Either way, it's party food.

1/2 leg of lamb, rump end, boned and butterflied (about 3 1/2 pounds)
2 tablespoons soy sauce
1 tablespoon five-spice powder
2 1/2 cups all-purpose flour, plus more for rolling
1 teaspoon salt
1 tablespoon toasted sesame oil
2 cups chopped scallions
Vegetable oil, preferably grapeseed, for frying
2 cucumbers, peeled, seeded and julienned
1/2 cup hoisin sauce

Steps:

  • Marinate the meat: Brush the lamb with soy sauce and coat with five-spice powder. Set aside for 1 hour at room temperature.
  • Make the pancakes: Whirl the flour and salt in a food processor. Boil 1 cup water. With the machine running, slowly pour the water in through the feed tube. Process briefly to form a smooth dough. Remove from the processor to a lightly floured work surface. Knead briefly. Cover with plastic wrap and let rest for 1 hour.
  • Divide dough in 8 pieces. On a lightly floured surface, roll each piece into a thin 10-inch round. Brush each round with sesame oil and scatter with scallions. Roll up each round into a tight cylinder, then coil each cylinder around like a bun. Slightly flatten each bun, then roll each into a round pancake about 6 inches in diameter. Set aside, covered with a towel.
  • Light a grill or broiler for medium heat. Grill or broil the lamb, turning once, until desired degree of doneness, about 12 minutes per side for medium-rare. It's an uneven cut, so you might remove some parts as they are done. Let rest 20 minutes before slicing.
  • Shortly before serving, heat 2 teaspoons vegetable oil in a small skillet on medium. Fry the pancakes one at a time, turning, until lightly browned a minute or so per side, adding more oil as needed. Stack cooked pancakes and wrap them in foil. If using a grill, place the pancakes to one side, away from direct heat to keep warm.
  • Thinly slice the lamb and arrange it on a platter. If serving the dish like tacos, cut the slices in 2-inch pieces. Stack the pancakes to one side of the platter. Pile cucumber slivers in a mound on the platter, and serve with hoisin sauce.

4 ripe tomatoes, cored and halved
Sea salt
Olive oil
1/2 pound thin green beans
1/2 pound yellow beans
1 can (15 1/2 ounces) white beans, drained and rinsed
2 scallions, thinly sliced
1 1/2 tablespoons chopped mint
2 tablespoons red wine vinegar
Freshly ground black pepper
2 pounds mild lamb sausages

Steps:

  • Heat oven to 350 degrees. On baking sheet with rim, place tomatoes cut-side up. Season with salt and sprinkle with olive oil. Roast about 3 hours, until lightly caramelized. Cool, then cut each into 4 wedges.
  • Bring a pot of salted water to a boil. Cook green beans 4 minutes, until just tender. Remove with slotted spoon, drain and run under very cold water. Repeat with yellow beans, cooking 6 minutes. Pat dry.
  • In a large bowl, combine all beans, tomatoes, scallions and mint. Sprinkle with vinegar and 3 tablespoons olive oil. Season with salt and pepper. Toss and let sit 1 hour.
  • Heat grill to medium. Grill sausages about 10 minutes, turning, until well browned. Serve with salad.

Cooking lamb chops hot and fast keeps them juicy and perfectly pink inside. Here, they're first marinated in an herby garlic paste, then grilled or broiled and served with crisp lettuce hearts and a tangy ranch dressing (made from more of that same herb garlic paste). Quick and easy enough for a weeknight, these chops are also always an impressive meal to serve to guests. You'll probably have some ranch dressing left over. It will keep for a week in the fridge and is also excellent as a sauce for grilled chicken, or as a dip for vegetables and crackers.

4 scallions, white and green parts, thinly sliced, plus more for serving
1/3 cup fresh basil leaves, packed
3 packed tablespoons chopped mint, dill, cilantro or a combination
2 packed tablespoons chopped parsley
2 tablespoons extra-virgin olive oil, plus more as needed
Kosher salt and freshly ground black pepper
3 garlic cloves, finely grated or mashed to a paste
2 teaspoons Worcestershire sauce
3/4 cup mayonnaise
1/2 cup buttermilk, or use 1/4 cup each milk and plain yogurt
1 lemon, cut into wedges
2 pounds bone-in lamb chops, about 1-inch thick (any cut)
Romaine lettuce hearts, large leaves torn and small ones left whole, for serving
Sliced radishes, for serving

Steps:

  • In a blender or mini food processor, combine half the scallions, the herbs, 2 tablespoons olive oil, a pinch of salt and a lot of pepper. Blend until you get a rough paste, scraping down the sides of the blender with a spatula as needed. (It's not a lot of liquid so you may need to stop the blender a few times to scrape the sides.)
  • Transfer 2 1/2 tablespoons of the herb mix to a small bowl. Mix in about two-thirds of the grated garlic (2 cloves) and the Worcestershire, and set it aside.
  • To the blender, add the remaining garlic, the mayonnaise, buttermilk and the juice of 1 lemon wedge, and purée until the mixture is quite smooth. Taste and add more salt and lemon juice, as needed. Store dressing in the refrigerator until serving.
  • Season lamb chops all over with salt, then rub them with the reserved herb paste. Refrigerate the chops for at least 30 minutes and up to overnight.
  • Light the grill to high heat. (If broiling, set a rack 4-inches away from the heat source and heat your broiler to high.) Drizzle chops with a little oil, then grill or broil until done to taste, 2 to 5 minutes per side for medium-rare.
  • To serve, put the lettuce hearts on a platter, drizzle with ranch dressing, and top with sliced radishes and scallion. Serve along with the lamb chops and more ranch dressing and lemon wedges on the side.

Steps:

  • In a bowl whisk together hoisin sauce, vinegar, soy sauce, garlic, minces scallion, honey, and salt.
  • Trim as much remaining fat as possible from lamb and in a shallow dish large enough to hold lamb flat spread marinade over both sides of it. Marinate lamb, covered and chilled, at least 4 hours or overnight.
  • Prepare grill.
  • Bring lamb to room temperature and grill on an oiled rack set 5 to 6 inches over glowing coals 12 to 15 minutes on each side, or until meat thermometer registers 140°F. for medium-rate meat. (Alternatively, lamb may be broiled under preheated broiler about 4 inches from heat for approximately the same time on each side as for grilling.) Transfer lamb to a cutting board and let stand 20 minutes before carving.
  • Holding a sharp knife at a 45° angle, cut lamb across grain into thin slices. (If planning to make lamb salad, reserve one-third unsliced lamb, covered and chilled.)
  • To make scallion brushes:
  • Trim roots and green parts from scallions, leaving about 2 1/2-inch stalks. Make 1/2-inch lengthwise cuts at both ends of stalks and spread fringed ends gently. Put scallions in a bowl of ice and cold water and chill 2 hours, or until fringed ends have curled. Drain scallions well.
  • Garnish lamb with scallion brushes and serve with eggplant.
