A quick and easy, very tasty version of the teriyaki steak-on-a-stick that you get from a Chinese restaurant. It's great as an appetizer or even as finger food at a football watching party! I also use it for just plain old regular steaks to grill! Either way, it's awesome! My uncle came up with the recipe and gave it to my mother, who passed it on to me! LOVE it!

½ cup soy sauce
¼ cup olive oil
¼ cup water
2 tablespoons molasses
2 teaspoons mustard powder
1 teaspoon ground ginger
½ teaspoon garlic powder
½ teaspoon onion powder
2 pounds flank steak, cut into thin strips
32 wooden skewers (8 inch long) soaked in water

Steps:

  • In a large resealable bag, combine the soy sauce, olive oil, water, molasses, mustard powder, ginger, garlic powder and onion powder. Seal and shake the bag to mix together. Add steak strips to the bag and seal. Refrigerate for at least 8 hours to marinate.
  • Preheat the oven's broiler. Thread meat onto skewers and place on a broiling rack.
  • Broil the steak for 3 to 4 minutes on each side. Arrange on a platter to serve.

1 envelope taco seasoning
1 cup tomato juice
2 tablespoons canola oil
2 pounds beef top sirloin steak, cut into 1-inch cubes
1 medium green pepper, cut into chunks
1 medium sweet red pepper, cut into chunks
1 large onion, cut into wedges
16 cherry tomatoes
Salsa con queso or sour cream, optional

Steps:

  • In a large shallow dish, combine the taco seasoning, tomato juice and oil; mix well. Remove 1/2 cup for basting; refrigerate. Add beef and turn to coat. Cover; refrigerate for at least 5 hours., Drain and discard marinade from beef. On metal or soaked wooden skewers, alternately thread beef, peppers, onion and tomatoes. Grill, uncovered, over medium heat for 3 minutes on each side. Baste with reserved marinade. Continue turning and basting until meat reaches desired doneness, 8-10 minutes. If desired, serve with salsa con queso or sour cream.

When I make these I always think about "mystery meat on a stick" at fairs & carnivals, although I think these are much better! I use this as an appetizer but use it any way you like. Although the recipe calls for flank steak, I usually use sirloin steaks as I have it in the freezer more often.

1 beef flank steak (1-1/2 pounds)
1/2 cup reduced-sodium soy sauce
1/4 cup water
2 tablespoons molasses
2 teaspoons ground mustard

Steps:

  • Freeze steak for 1-1/2 hours. Cut diagonally into 1/4-in. slices. In a small bowl, combine the remaining ingredients. Pour 1/4 cup into another small bowl for basting; cover and refrigerate. Pour remaining marinade into shallow dish; add beef. Turn to coat; cover and refrigerate for at least 4 hours., Drain and discard marinade. Thread beef ribbon-style on 12 metal or soaked wooden skewers. 2 lbs cubed top butt sirloin (fat removed)
1 cup salsa (any one you choose)
1 1/2 teaspoons lemon pepper
1 teaspoon seasoned pepper
1 teaspoon garlic powder
1 cup oil (wesson, corn or canola)

Steps:

  • The meat may be cubed as you wish, we usually cube 1 1/2" to 2".
  • I pay the butcher to cut for me.
  • Mix all ingredients except meat in large bowl.
  • You may skewer meat to marinate if desired or skewer before cooking.
  • I prefer to skewer ahead of time.
  • Marinate at least 8-10 hours but may marinate for up to 3 days.
  • Turn often to make sure that all the meat gets equal time in marinade.
  • Cook on grill to desired doneness.
  • May be doubled, tripled, etc.
  • Have around 1/2 lb meat per person.

1 pound skirt steak
2 tablespoons spicy steak seasoning
2 tablespoons smoked paprika
24 bamboo skewers, soaked in water for 30 minutes
1 cantaloupe
1 cup mayonnaise
1 teaspoon hot sauce
1 tablespoon tomato paste
2 tablespoons chopped pimentos, plus 1 tablespoon juice
Salt and freshly ground black pepper
3 tablespoons olive oil
1 tablespoon dried parsley
1 tablespoon dried chives
1 teaspoon crushed garlic

Steps:

  • Slice the skirt steak against the grain into 1/2-inch thick pieces. Skewer each piece of steak onto the bamboo skewers. Push the skewer through so that steak is closest to the flat end of the skewer and the point of the skewer is at the bottom. Place onto a plate or baking sheet.
  • In a small bowl combine spicy steak seasoning and paprika and sprinkle over steak. Cook on preheated grill or grill pan over medium-high heat. Grill for 2 to 3 minutes per side.
  • Cut the ends off of the cantaloupe. Cut the cantaloupe in half, using a spoon scoop out the seeds. Place the cantaloupe halves onto plates with bottom ends down. Place a small ramekin into the opening of each half; this will hold the dipping sauce.
  • Remove the skewers from the grill and stick each skewer in the cantaloupe.
  • Round Table Remoulade Sauce:
  • In a medium bowl combine all ingredients. Mix well and transfer to the ramekin in the cantaloupe.
  • Medieval Steak Sauce:
  • In a medium bowl combine all ingredients. Mix well and transfer to the ramekin in the cantaloupe.

FULL FLAVORED STEAK

My husband is a steak man, and this is one of his very favorite ways to enjoy it. I have been making this for years, and I hope you enjoy it!

2 1/2 tablespoons brown sugar
1 1/2 tablespoons granulated sugar
1 tablespoon ground ginger
1 clove garlic, crushed
1/2 cup soy sauce
1 tablespoon tarragon vinegar
3 lbs beef t-bone steaks or 3 lbs rib eye steaks, approximately 1 1/2 inch thick

Steps:

  • Combine the sugars, ginger, garlic, soy sauce and vinegar together in a bowl.
  • Place meat in shallow dish for marinating (I use a Tupperware specifically made for marinating, where you can turn it over easily-- a freezer bag works well also).
  • Pour soy sauce mixture over meat.
  • Allow steak to marinate at least 30 minutes, basting frequently and turning once or twice.
  • The longer you are able to marinate it, the better.
  • When ready to grill remove meat from marinade, reserving liquid.
  • Place steak on grill about 3" from coals.
  • Grill about 6 minutes or until one side is browned, basting frequently with reserved marinade.
  • Turn and grill the other side about 6 minutes, or until done as desired.
  • Enjoy!

1 1/4 lbs boneless beef top sirloin steaks, cut 1 inch thick
1/3 cup prepared Italian dressing
3 tablespoons fresh lime juice
2 medium green bell peppers (use one of each color for a more colorful meal) or 2 medium red bell peppers, each cut lengthwise into quarters (use one of each color for a more colorful meal)
2 medium onions, each cut crosswise into 1/2 inch slices
salt
8 medium flour tortillas, warmed
prepared salsa

Steps:

  • Soak eight 9-inch bamboo skewers in enough water to cover for 10 minutes; drain.
  • Trim fat from beef steak.
  • Cut steak crosswise into 1/2-inch thick strips.
  • Thread an equal amount of beef, weaving back and forth, onto each skewer.
  • In small bowl, combine dressing and lime juice, mixing well; brush onto beef, pepper and onions.
  • Place vegetables on grill grid over medium ash-covered coals; grill peppers uncovered 12 to 15 minutes and onions 15 to 20 minutes or until tender, turning both twice.
  • Approximately 10 minutes before vegetables are done, move vegetables to outer edge of grid.
  • Place beef in center of grid; grill 8 to 10 minutes for medium rare to medium doneness, turning once.
  • Season beef with salt, as desired; remove beef from skewers.
  • Serve beef and vegetables in tortillas with salsa.
