PEACH PIE THE OLD FASHIONED TWO CRUST WAY
This is a simple, quick, old fashioned, baked, two crust peach pie made with fresh peaches and simple ingredients. It's great during summer peach season.

Steps:
- Preheat the oven to 450 degrees F (220 degrees C).
- Line the bottom and sides of a 9 inch pie plate with one of the pie crusts. Brush with some of the beaten egg to keep the dough from becoming soggy later.
- Place the sliced peaches in a large bowl, and sprinkle with lemon juice. Mix gently. In a separate bowl, mix together the flour, sugar, cinnamon, nutmeg and salt. Pour over the peaches, and mix gently. Pour into the pie crust, and dot with butter. Cover with the other pie crust, and fold the edges under. Flute the edges to seal or press the edges with the tines of a fork dipped in egg. Brush the remaining egg over the top crust. Cut several slits in the top crust to vent steam.
- Bake for 10 minutes in the preheated oven, then reduce the heat to 350 degrees F (175 degrees C) and bake for an additional 30 to 35 minutes, until the crust is brown and the juice begins to bubble through the vents. If the edges brown to fast, cover them with strips of aluminum foil about halfway through baking. Cool before serving. This tastes better warm than hot.

OLD-FASHIONED PEACH CREAM PIE
This is an old recipe handed down to me by my grandmother. It's really one of the best pies I've ever tasted.

- Preheat oven to 400 degrees F (200 degrees C).
- Whisk together the 3/4 cup sugar, the 2 tablespoons flour, and salt. Beat in the sour cream, egg, and vanilla. Stir in the sliced peaches. Pour the mixture into the pie crust.
- Bake in the preheated oven for 12 minutes. Reduce the oven temperature to 350 degrees F (175 degrees C), and continue baking until the filling is set, about 30 minutes. Remove from oven.
- Raise oven temperature to 400 degrees F (200 degrees C).
- Whisk together the 1/3 cup flour, 1/3 cup sugar, and cinnamon in a small bowl. Mix in the butter with a fork until mixture resembles coarse crumbs. Sprinkle the crumb topping evenly over the pie.
- Return the pie to the preheated oven and bake until topping is golden, about 10 minutes. Let pie cool slightly before slicing.

Serve this pie when it's at its best - the day it's made. It tastes of pure summer all on its own, but you're welcome to pour on some heavy cream or top it with a scoop of vanilla ice cream.

- To make crust in food processor: Stir water and yolk in a 1-cup measure or small bowl until blended. Pulse flour and butter until coarse crumbs form. With motor running, add egg mixture. Process just until dough leaves sides of bowl. Remove blade, then dough. By hand: mix water and yolk until blended. Put flour in a medium bowl. Cut in butter with a pastry blender or 2 knives until mixture resembles coarse crumbs. Add yolk mixture and stir with a fork until crumbs clump together to form a dough.
- Gather dough into a ball, divide in half, flatten each half into a disk and wrap in waxed paper. Refrigerate 30 minutes or until firm enough to roll out.
- Filling: Mix 1 cup of sugar and flour in a large bowl. Add peaches, sprinkle with lemon juice and toss with sugar mixture until evenly coated.
- Heat oven to 375 degrees Fahrenheit. Have a 9-inch pie plate ready.
- On a lightly floured surface with a lightly floured rolling pin, roll out half the dough to a 12-inch circle. Fit circle into pie plate.
- Spoon filling into pie shell and dot with 2 tablespoons butter.
- Roll remaining dough into a 10-inch circle. Cut with a pastry wheel or sharp knife in twelve 3/4-inch-wide strips. Arrange 6 strips across filling, using longest in center. Lay remaining strips on top in opposite direction, weaving them under bottom strips if desired. Trim ends to inner edge of pie plate. Press ends to edge of of bottom crust. Roll overhang of bottom crust up over edges of strips to form an even rim. Flute or crimp edge. Brush lattice with egg-white mixture, then sprinkle with 1/4 cup sugar.
- Bake 45 to 50 minutes until pastry is golden-brown and peaches are tender when pierced. Remove to a wire rack. Cool at least 1 hour before serving.
- NOTE: To peel peaches easily, immerse them in boiling water 20 to 30 seconds, then immediately plunge them into ice water to stop cooking. Peel off skin, with your fingers or a small knife.

OLD-FASHIONED PEACH PIE
This is a variation on a pie recipe from a Farmer's cookbook I got years ago. If you can buy fresh peaches in bulk in the summer, as we can here in Colorado, you must make this pie. To easily peel peaches, cut "x's" in their bottoms, drop in boiling water for 1 minute, then plunge into an ice-water bath. The skins will peel right off. (This works great for tomatoes too.)

- Preheat oven to 425 degrees. Line a 9" pastry dish with one of the crusts.
- Combine sugar, flour, nutmeg and salt and whisk to blend. Add this to the peaches. Sprinkle on lemon juice and almond extract.
- Pour into the pastry-lined pan. Dot with butter.
- Adjust top crust, crimp edges and cut steam vents, or use a lattice top.
- Bake for 40-45 minutes, or until crust is browned and peaches are tender.
