2 bananas
2 eggs
⅓ cup maple syrup
¼ teaspoon salt
2 teaspoons baking powder
2 teaspoons vanilla extract
1 tablespoon cinnamon
1 cup greek yogurt
3 cups oats
1 cup whole milk
topping of your choice, as desired

Steps:

  • Preheat the oven to 350˚F (180˚C).
  • In a medium bowl, mash bananas. Mix eggs, maple syrup, salt, baking powder, vanilla extract, cinnamon, and Greek yogurt into mixture.
  • Add oats and milk, and mix. Let the mixture sit for a few minutes, so the oats soak up the liquid and the consistency is like oatmeal.
  • Line muffin tins with muffin liners. Pour the mixture into each muffin cup about ¾ full. Add your preferred toppings and gently push your toppings into each muffin cup.
  • Bake for 30 minutes.
  • Let cool for 5 minutes before eating. Once cool, you can also store in an airtight container or freeze in a storage bag.

1 pinch salt
½ cup old-fashioned oats
½ cup chopped walnuts

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Line 12 muffin cups with papers liners.
  • Beat sugar and butter with an electric mixer in a large bowl until smooth and creamy. Beat first egg into the butter until completely blended; beat in the vanilla extract with the remaining egg.
  • Mix bananas, milk, and allspice together in a separate bowl; stir into the creamed butter mixture. Whisk flour, baking powder, and baking soda together in a separate bowl; slowly stir into banana-butter mixture until batter is just mixed. Fold oats and walnuts into batter. Scoop batter into the muffin cups using a large ice cream scoop.

1 1/2 cups unbleached all-purpose flour
1 cup rolled oats
1/2 cup granulated sugar
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 egg
3/4 cup milk
1/3 cup vegetable oil
1/2 teaspoon vanilla extract
1 cup mashed bananas
For the Crumble Topping:
1/2 cup rolled oats
1 teaspoon ground cinnamon
2 tablespoons butter

Steps:

  • Gather the ingredients.
  • Line a 12-cup muffin tin with paper baking cups. Preheat oven to 350 F. In a large bowl, combine the flour, rolled oats , sugar, baking powder, baking soda, and salt. Set aside.
  • In another large bowl, beat the egg lightly . Stir in the milk, oil, and vanilla.
  • Add the mashed banana and combine thoroughly.
  • Stir the flour mixture into the banana mixture until just combined.
  • Spoon the batter into the prepared muffin tin.
  • In a small bowl, stir together the oats and cinnamon. Using a pastry blender or a couple of knives, cut in the butter until the mixture resembles coarse crumbs.
  • Sprinkle the oat mixture on top of the muffin batter. Bake for 20 to 22 minutes, or until a toothpick inserted into the centers comes out clean.

1 teaspoon baking powder
1 teaspoon ground cinnamon

2 egg whites
1 cup mashed ripe bananas (about 2 medium)
1/2 cup packed brown sugar
1/4 cup fat-free milk
1/4 cup canola oil
1/2 cup chopped pecans

2 cups flour
1 cup quick-cooking oats
1 cup brown sugar
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon nutmeg
1 teaspoon cinnamon
1 1/2 cups bananas, mashed
2 eggs
1/3 cup butter, melted
1 teaspoon vanilla

Steps:

  • Preheat oven to 375°F In medium bowl, stir together the flour, oatmeal, sugar, baking powder, baking soda, salt, cinnamon and nutmeg. In a separate bowl, combine the mashed bananas, eggs, vanilla and butter. Add the banana mixture to the flour mixture, stirring just until the dry ingredients are moistened.
  • Spoon batter into greased muffin cups. Bake for 15 to 18 minutes (start watching around 12 minutes; oven temperatures vary) or until toothpick inserted into center muffin comes out clean. Let cool in pan on wire rack for 10 minutes. Remove muffins from pan and let cool on wire rack.

1/4 cup applesauce
1/4 teaspoon vanilla extract
1/2 cup mashed banana

Steps:

  • Preheat oven to 400 degrees F (205 degrees C).
  • In a bowl, combine flour, oats, sugar, baking powder, soda, and salt.
  • In another large bowl, mix together milk, applesauce, and vanilla.
  • Add the mashed bananas, and combine thoroughly.
  • Stir the flour mixture into the banana mixture until just combined.

2/3 cup brown sugar, packed
1/2 cup quick oats
1 tablespoon flax seed meal
1/2 teaspoon baking soda
1 1/2 teaspoons baking powder
1/4 teaspoon salt
1/4 teaspoon nutmeg
1/4 teaspoon ginger
1/2 cup buttermilk (or plain yogurt)
1/4 cup canola oil
2 eggs, beaten
1 teaspoon vanilla
1 cup banana, ripe, mashed (2 medium bananas)
1/4 cup walnuts, chopped fine
1 tablespoon brown sugar

Steps:

  • Preheat oven to 375 (350 if you are making a single loaf so the large inside area has time to bake). Spray pan with non-stick spray.
  • Mix topping ingredients together. Set aside.
  • Combine all dry ingredients (flour, sugar, oatmeal, baking soda, baking powder, salt, and spices). Note: I've used half Splenda mix for the sugar with great results.
  • Separately, in a 2 cup measure, combine all liquid ingredients (buttermilk, oil, eggs, vanilla, and banana).
  • Pour liquids into dry ingredients. Use a spatula to gently combine.
  • Fill 12 muffin tins to the rim (or 36 mini-muffins, or one loaf pan). Sprinkle with topping mixture.
  • Bake 375 degrees for 16-18 minutes (12 minutes for mini-muffins and 45 minutes at 350 degrees for a single loaf). Use toothpick test to make sure there's no wet area in the middle.

Steps:

  • Place 1 cup rolled oats in a food processor and process until ground. In a large bowl, combine ground oats with flour, 1 tablespoon rolled oats, chopped walnuts, baking powder, cinnamon and salt.
