VEGAN CREPES



Vegan Crepes image

Vegan crepes are easy 5-ingredient French-style thin pancakes for breakfast or dessert.

2 cups All-Purpose Flour (or half all-purpose half wholewheat flour for healthier crepes )
2 1/4 cups Soy Milk ( at room temperature, or oat milk or unsweetened almond milk )
2 tablespoons Avocado Oil (at room temperature, or light olive oil or melted coconut oil)
2-4 tablespoons Sugar (or coconut sugar or monk fruit sugar if sugar-free - add 4 tablespoons for very sweet crepes)
1 tablespoon Vanilla
1 teaspoon Cinnamon (optional, to add some flavor)
2 oz Dark Chocolate (>70% cocoa, I used 85% cocoa chocolate)
1/4 cup Peanut Butter (or sunflower seed butter)
1 teaspoon Hemp powder

Steps:

  • Before you start, make sure all the ingredients are at room temperature. If you are using cold milk, you will create flour lumps that will require an electric beater to be dissolved.
  • In a large mixing bowl, add flour of your choice - I recommend all-purpose wheat or spelt flour for best results. Whisk for a few seconds to remove any big lumps. You don't need to sift the flour.
  • Add vanilla, sugar, avocado oil, and soy milk (all at room temperature).
  • Whisk vigorously until the crepe batter forms, with no lumps. It is ok to have a few small lumps at the end for a crepe recipe. If you really don't like these lumps, use an electric beater to get a smoother batter. The batter should be slightly thick but runnier than a pancake batter.
  • Warm a non-stick crepe pan or non-stick pancake griddle under medium/high heat.
  • Rub avocado oil onto the pan using a piece of absorbent paper. I used about 1 teaspoon of oil placed on a piece of absorbent paper. Then, I rub the crepe pan. This avoids leaving drops of oil on the pan that will fry the crepes, so always use this technique to avoid too much oil in the pan.
  • Scoop the batter onto the pan, then tip and rotate it to spread the batter as thinly as possible. Note that 1/2 cup of crepe batter perfectly covers a 28 cm (11 inches) crepe pan and makes a thin crepe.
  • Brown 2-3 minutes on one side. You know it's ready to flip the crepe when the underside is getting crispy and unsticks by itself.
  • Loosen sides with a flat tool and then slide a spatula under the crepe to flip on the other side.
  • Cook for 1 more minute on the other side, then put on a plate and repeat this until no more batter is left. You will make 8 large 11-inch crepes with this recipe.

These are delicious dessert or breakfast crepes with banana flavor within the crepe itself. They are really good with Recipe #209347. I like to use a paper towel with a little butter on it to swipe the pan before adding the batter. This recipe works best with a non-stick pan or a crepe maker. You must use a very ripe banana to get the full banana flavor. The recipes include very detailed instructions which are great if this is your first time to make crepes. From Crepes & Omelettes.

2 eggs
1 1/4 cups milk
3 tablespoons oil
1/2 teaspoon vanilla
1 very ripe banana
3 tablespoons sugar
1 cup all-purpose flour
1/4 teaspoon salt

Steps:

  • Place ingredients in blender or food processor container in the order listed.
  • Cover and blend on high 20 to 30 seconds. Scrape sides of container. Blend a few more seconds.
  • PAN PREPARATION: If using a non-stick spray shortening, spray pan before heating. Before cooking the first crepe put 1/2 teaspoons butter into pan. If the pan is well seasoned it should not be necessary to add more butter for each crepe.
  • PAN TEMPERATURE: Crepe pan is at the correct temperature when the batter sizzles slightly when poured into the pan, and a crepe will cook on one side in approximately 1 minute. (On my stovetop I set to medium-low). Crepes should be pale in color, not dark brown.
  • TO COOK CREPES: Two or three tablespoons of batter is usually enough to cover the bottom of a 6 to 7 inch crepe pan. ( I use a 10 inch pan with scant 1/4 cup batter). If necessary adjust the amount needed for the pan you are using.
  • Pour in the batter and quickly tilt the pan so the batter covers the bottom entirely. If you put in more than just a thin coating, pour the excess back into the bowl. This will leave a small flap on the crepe but it won't be noticed when the crepe is filled and folded. (Caution: If crepe pan is not hot enough, the whole crepe may fall back into the batter when you pour out the excess. It is important to have the pan at the correct temperature before starting to cook.).
  • WHEN TO TURN: The crepe is ready to turn when it begins to set and crisp around the edges. Loosen around the edge with a long thin spatula or knife so you have a starting place to pick up the crepe with your fingers (or the spatula) then simply flip it over. Should it start to tear when picked up, it may not be cooked enough to turn. Cook a few seconds longer and try again.
  • Crepe is ready when the second side is set (not wet).
  • IF PAN STICKS IN ONE SPOT: Put more butter or oil in the pan and wipe with a paper towel. Once a crepe pan is seasoned, it should not be necessary to add more butter or oil for each crepe. It may be necessary to discard the first crepe or two until the pan is properly seasoned and the temperature is right.
  • AFTER THE CREPES ARE COOKED: Stack cooked crepes on a plate. They will be easier to separate if they are not placed squarely on top of each other. It is not necessary to put foil or waxed paper between each crepe.
  • PRESENTATION: Crepes can be filled and rolled or folded into quarters.

2 large eggs, room temperature
3/4 cup 2% milk
1/2 cup all-purpose flour
1 tablespoon butter, melted

FILLING:
1/2 cup butter, cubed
2/3 cup sugar
4 teaspoons grated orange zest
2/3 cup orange juice
6 medium firm bananas, peeled and sliced
Fresh raspberries, optional

Steps:

  • In a bowl, whisk together first 6 ingredients; let stand 20 minutes. , Heat a lightly greased 8-in. nonstick skillet over medium heat. Fill a 1/4-cup measure halfway with batter; pour into center of pan. Quickly lift, tilt and rotate pan to coat bottom evenly. Cook crepe until top appears dry; turn over and cook until bottom is cooked, 15-20 seconds longer. Remove to a wire rack. Repeat with remaining batter, greasing pan as needed. , For filling, place butter, sugar, orange zest and orange juice in a large skillet; bring to a boil, stirring to dissolve sugar. Reduce heat to medium; add bananas to warm., To serve, spoon bananas onto crepes; fold into quarters. Top with remaining filling and, if desired, raspberries.

These gluten-free crepes get their special sweetness from bananas and can have the same texture as normal crepes, depending on the equipment you use. They are very easy to make and cheap too!

1 cup oat flour
1 cup milk (rice or soy milk)
1/2 cup water
3/4 cup mashed banana (very ripe)
2 eggs
1/2 teaspoon ground cinnamon
1/4 teaspoon salt

Steps:

  • Blend all ingredients in a blender until smooth and let stand in fridge for 15 minutes.
  • Heat a greased skillet on medium heat and pour 1/3 cup batches on the pan, swirling it very quickly to distribute the batter.
  • Cook until the bottom starts to turn golden and it is easily flippable, then flip and cook other side until done to your preference. Garnish with maple syrup, chocolate sauce, berries, jam or mashed bananas as filling and topping.
  • ****You can make your own with a blender, using about 1 1/2 cups quick oats to make 1 cup oat flour. If you`re going to leave your crepe mixture in the fridge for quite a while it will thicken so just add water to the desired consistency. If you`re going to blend it, do so just for a second and let the mixture rest a couple of minutes before cooking them or else you may end up with airey crepes.
