This Healthy No Added Sugar Banana Bread is bursting with banana flavor and is made with no refined sugar. Dairy-free and just 5 grams of sugar per slice.

500 grams (~17.5 ounces) peeled, overripe bananas (about 2 1/2 cups mashed from about 5-6 medium; see notes)
1/4 cup melted coconut oil or neutral-flavored oil of choice
2 eggs
1 teaspoon vanilla or banana extract
1 ¾ cups white whole wheat flour (see notes)
1 ½ teaspoons baking powder
½ teaspoon baking soda
½ teaspoon kosher salt
1 teaspoon cinnamon
½ cup mix-ins such as chopped walnuts or pecans, raisins, chocolate chips (optional; see notes)

Steps:

  • Set oven to 325F and lightly grease a 9×5-inch loaf pan, or 3 mini loaf pans.
  • In a large bowl, combine the bananas, oil, eggs, and vanilla extract and mix with a whisk until well combined. If you have a food scale, you can skip the mashing! Weigh your bananas, then combine with the wet ingredients in a blender and puree until smooth.
  • Add the flour, baking soda, baking powder, salt, cinnamon, and any mix-ins; stir just until combined. Pour batter into your prepared loaf pan(s).
  • Bake for 60 to 75 minutes for a large loaf (35-40 minutes for mini loaves) or until a toothpick inserted into the center comes out completely clean. Allow the bread cool in the pan for 10 minutes, then transfer it to a wire rack and let it cool another 15-20 minutes before slicing.

I lost 150lbs. about 4 years ago eating a no refined sugar or white flour lifestyle. The weight fell off in 12 months! I taught classes and recipes on the subject and to date have over 100 people losing weight...whole families losing together. Sugar breaks down our skin cells (think what sugar does to fresh strawberries when we make shortcake...the juice is from the broken down strawberry skin, right? Well, same with our skin. I look 10 years younger since living this healthy lifestyle. But, I have lived in the kitchen perfecting recipes that we use everyday but yet without the sugars and white flour. Oh, I do use splenda to bake and sweeten. I hear people say they don't think this artificial sweetner is good for them. Well....I hear about thousands of people dying of sugar diabetes daily and never heard of anyone dying of splenda. This banana bread is delicious and very good for everyone, including diabetics. My motto: Eat like a diabetic and you never will become a diabetic!

1/2 cup(s) splenda
1 teaspoon(s) baking powder
1/2 teaspoon(s) baking soda

1 1/4 cup(s) very ripe mashed bananas with 1 teaspoon splenda added to them
1 tablespoon(s) vegetable oil
1/3 cup(s) skim milk
1/3 cup(s) sour cream, lite
2 teaspoon(s) vanilla extract
1 tablespoon(s) banana extract
1 cup(s) finely chopped walnuts or pecans

Steps:

  • In small bowl, blend together flour, splenda, powder and soda, salt, and cinnamon. In separate bowl, beat together with hand mixer, mashed bananas, oil, milk, sour cream, banana extract and vanilla. Beat until smooth. Pour the dry ingredients in the banana mixture and beat until blended. Add nuts and stir. Pour into a greased loaf pan. Bake at 350 degrees for 45 minutes. Check for doneness with toothpick.
  • NOTE: *WHITE whole wheat flour is made by the company King Authur and can be found in any grocery store usually. This is the best whole wheat flour because it's made with yellow wheat which is lighter than red wheat so it doesn't have that heavy taste. It's great for baking healthy and acts like regular flour but always add more moisture like vege oil or apple sauce, etc. when using any whole wheat flour. My family doesn't like whole wheat baked goods except when I use this kind of flour. Whole wheat pastas are also made with yellow as well as red wheat so if you don't want real heavy pasta try to find one that is lighter in color and that will be the one made with yellow wheat. I didn't know any of this until I started working as a secretary for a wheat mill in Quincy, MI.

3/4 cup uncooked rolled oats
2 teaspoons cinnamon
2 teaspoons baking powder
1 teaspoon baking soda

2 cups mashed ripe bananas (about 6 medium bananas)
3/4 cup thawed frozen unsweetened apple juice concentrate
4 eggs, beaten
1/2 cup butter or 1/2 cup margarine, melted
2 teaspoons vanilla
3/4 cup chopped walnuts
3 ounces cream cheese or 3 ounces reduced calorie cream cheese, softened
2 tablespoons thawed frozen unsweetened apple juice concentrate
1/4 teaspoon vanilla
1/8 teaspoon ground cinnamon

Steps:

  • Cake:.
  • Preheat oven to 350 degrees F.
  • Combine dry ingredients in large bowl. Add all remaining ingredients except walnuts and Cream Cheese Glaze; mix well. Stir in walnuts; spread into well-greased Bundt or tube pan.
  • Bake 50 to 55 minutes or until wooden pick inserted in center comes out clean. Cool in pan on wire rack 15 minutes; turn cake out onto wire rack. Cool completely.
  • If desired, prepare Cream Cheese Glaze. Spoon over top of cake, letting excess glaze drip down sides. Serve at room temperature or chilled.
  • Cream Cheese Glaze:.
  • Combine all ingredients in small bowl; beat until smooth.

2 cups sugar
1 teaspoon salt
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon ground cinnamon

4 large eggs, room temperature
2 cups mashed ripe bananas (3 to 4 medium)
1-1/3 cups canola oil
1 can (8 ounces) crushed pineapple, undrained
1-1/2 teaspoons vanilla extract
1-1/2 cups chopped walnuts
Optional toppings: Confectioners' sugar and whipped cream

Steps:

  • Preheat oven to 350°. Grease and flour a 10-in. tube pan. In a large bowl, whisk flour, sugar, salt, baking powder, baking soda, cinnamon and nutmeg. In another bowl, combine eggs, bananas, oil, pineapple and vanilla. Add to flour mixture; stir just until moistened. Fold in nuts. , Pour into prepared pan. Bake until a toothpick inserted in center comes out clean, 60-65 minutes. Cool in pan 15 minutes before removing to a wire rack to cool completely. 125g self-raising wholemeal flour
½ tsp baking powder
2 tsp ground cinnamon
75g sultana
50g butter, melted
2 tsp vanilla essence
1 egg
1 tbsp milk
3 ripe bananas, mashed
drizzle agave syrup, to serve (optional)

Steps:

  • Grown ups: Preheat the oven to 180C/ 160C fan/ gas mark 4. Grease and line a 450g loaf/1lb tin with baking parchment.
  • Children: Weigh the flour, baking powder, cinnamon and sultanas into a bowl and mix with a wooden spoon. Then weigh the butter, vanilla essence, egg, milk and mashed bananas and put into another bowl or jug and mix with a small balloon whisk or fork. Pour the 'wet' banana mixture into the 'dry' flour mixture and combine thoroughly with a wooden spoon. Weighing needs to be very accurate when baking so help older children to measure carefully. Younger children can also get involved by spooning or pouring into the scales with adult supervision. Younger children can also beat the egg with a fork and mash the banana with a potato masher.
  • Grown ups: Pour the cake mixture into the prepared tin and bake for 30 - 40 mins or until a skewer inserted in the middle comes out clean. Remove from the oven, allow to cool in the tin for 10 mins then turn out.

2 eggs
1 teaspoon baking soda
4 tablespoons buttermilk
½ cup butter
1 ½ cups white sugar
1 teaspoon vanilla extract
1 ½ cups all-purpose flour
3 ripe bananas, mashed
1 cup chopped pecans
3 tablespoons butter, softened
2 cups confectioners' sugar
3 tablespoons heavy whipping cream
¼ cup pecan halves, or to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour two 9 inch round cake pans.
  • Separate the eggs and set aside.
  • Stir the baking soda into the buttermilk. Cream 1/2 cup of the butter or margarine with the white sugar. Add the egg yolks, and vanilla, beating well. Add flour alternately with the mashed bananas. Stir in the buttermilk mixture.
  • Beat the egg whites until stiff. Stir the pecans into the cake batter then fold in the egg whites. Pour batter into prepared pans.
  • Bake at 350 degrees F (175 degrees C) for 25 minutes or until cakes test done. Let cakes cool in pans.
  • To Make Icing: Cream 3 tablespoons butter or margarine with the confectioners' sugar. Stir in the heavy cream until well blended. Spread icing on to cooled cake layers. Top with pecan halves if desired.
