ROASTED ZUCCHINI SLICES



Roasted Zucchini Slices image

Quick easy and delicious, this oven roasted zucchini slices is the perfect summer vegetable side dish. Seasoned and roasted with parmesan, they are perfectly cheesy!

2 medium zucchini (sliced in ½" thick slices)
1 tablespoon olive oil
1 teaspoon salt
½ teaspoon pepper
1 teaspoon garlic powder
½ cup grated parmesan

Steps:

  • Preheat the oven to 425 F. Line a baking sheet with parchment paper and place a rack on top of it.
  • In a large bowl mix oil, salt, pepper, and garlic powder. Add zucchini slices and toss to coat.
  • Line zucchini slices in a single layer on the rack in the baking sheet and sprinkle each slice with finely grated parmesan cheese on top. Bake for 15 - 20 minutes, or until golden brown on top.

2 small zucchini, halved lengthwise and sliced (about 2 cups)
1 tablespoon water
1/4 teaspoon salt
Dash pepper
1/3 cup shredded cheddar cheese
1/3 cup sour cream

Steps:

  • Place zucchini and water in a microwave-safe dish. Microwave, uncovered, on high for 2-3 minutes or until crisp-tender. Add the salt, pepper and cheese. Cook 30-60 seconds longer or until cheese is melted. Dollop with sour cream.

Simple, quick and very tasty. The zucchini is layered with brick cheese & herbs & bakes to a savory goodness. Freezes beautifully. If using fresh herbs, double quantities used.

5 lbs zucchini
1 1/2 lbs sliced brick cheese
1 -1 1/2 cup all-purpose flour
1 teaspoon dried basil
1 teaspoon dried dill
1 teaspoon dried parsley
salt & freshly ground black pepper
3 tablespoons oil
paprika (to garnish)

Steps:

  • Wash & slice zucchini into thin slices. Don't peel unless humungus;
  • Dredge slices liberally with flour.
  • Place one layer in greased 9"x13"x2" pan; sprinkle with salt, pepper, some basil, dill & parsley. Cover with some cheese slices.
  • Repeat layering squash, spices, cheese until zucchini is all used.
  • Cover top completely with cheese slices.
  • Score thru ingredients in 6 or 8 places with knife.
  • Pour oil over top.
  • Sprinkle with paprika.
  • Bake in 350 degree oven for 1 to 1-1/2 hours or until nicely browned & knife inserted goes through squash gently.
  • Allow to rest about 20 minutes before cutting.

  • In a small 1.5 quart (1.5 L) casserole dish, arrange the zucchini slices in several overlapping rows, sprinkly very lightly with half of shredded cheese between rows. You'll use about 3/4 cup cheese total. Season lightly with black pepper. (They already have salt at this point.)
  • Combine the brie, cream, milk, butter, and garlic in a small saucepan. Heat for a few minutes on the stove over low to medium-low heat, stirring frequently, until the cheese melts and the mixture is smooth. If desired, add sea salt to taste. Pour the mixture evenly over the zucchini.
