2 (1 pint) cups low fat cottage cheese
2 tablespoons sugar
1 teaspoon vanilla extract
1 teaspoon freshly grated fresh lemon rind
1 teaspoon freshly squeezed lemon juice
4 bananas
4 graham cracker squares, crumbled
ground cinnamon, for garnish

Steps:

  • Combine the cottage cheese, sugar, vanilla, lemon rind and lemon juice in a food processor and blend until smooth.
  • Spread the blended cheese mixture in a shallow 7-by-12-inch glass baking dish or put 1/4 cup of the mixture into each of 8 individual au gratin dishes.
  • Thinly slice the bananas, and spread the slices evenly on top of the cheese mixture.
  • If using individual dishes, put half a sliced banana on top of each serving.
  • Sprinkle the top evenly with the graham-cracker crumbs and then sprinkle lightly with cinnamon.
  • Place under the broiler until hot and lightly browned.

The first recipe I created all by myself. A great, easy, and healthy dessert! This recipe can easily be customized by adding new toppings according to favorite tastes. Serve with ice cream!

4 banana, peeled and halved lengthwise
1 tablespoon brown sugar
2 teaspoons lemon juice
2 teaspoons honey
splash of orange juice

Steps:

  • Preheat oven to 450 degrees F (230 degrees C). Line a baking sheet with aluminum foil.
  • Arrange bananas onto the prepared baking sheet. Sprinkle brown sugar, lemon juice, honey, and orange juice over the bananas; cover with aluminum foil.
  • Bake for 5 minutes. Remove foil and continue baking until golden brown, about 3 to 5 minutes.

2 firm-ripe bananas, thinly sliced crosswise
1 cup sour cream
2 teaspoons vanilla
1/4 cup turbinado sugar such as Sugar in the Raw
Special Equipment
4 (6- by 4-inch) gratin dishes or 1 (1- to 1 1/2-qt) gratin dish

Steps:

  • Preheat broiler. Divide bananas among gratin dishes. Stir together sour cream and vanilla in a bowl, then spoon over bananas, covering them and smoothing tops. Sprinkle each gratin with 1 tablespoon sugar and broil on a baking sheet 3 to 5 inches from heat until sugar is melted but not caramelized, about 3 minutes.

This is one of my adopted recipes. I love plaintains! It looks like a dish my family and I would enjoy, so I hope to make it and edit it in the future.

3 lbs green plantains, or other green bananas, peeled
salt
2 cups chicken stock
ground nutmeg
2 tablespoons butter
1 pinch cinnamon
1 small onion, chopped
1 cup grated cheddar cheese
1 cup light cream or 1 cup milk
1/2 cup fresh breadcrumb
2 eggs, beaten

Steps:

  • (Grated Gruyere cheese can be used instead of cheddar cheese.)
  • Place bananas in saucepan and add just enough chicken stock to cover.
  • Bring to a boil, reduce heat and simmer until bananas are tender, about 20 to 25 minutes.
  • Using a potato masher, mash until smooth (chicken stock will be absorbed).
  • Let cool slightly.
  • Meanwhile, heat butter in a small frypan and saute onions until tender.
  • Add the onions, cream, beaten eggs to cooked bananas until combined; season with salt, nutmeg and cinnamon to taste.
  • Mixture will be quite moist.
  • Place banana mixture in a buttered shallow baking dish.
  • Combine cheese with bread crumbs; sprinkle over top.
  • Bake at 350 for 35 - 40 minutes or until top is golden.

2 large grapefruit, the zest, pith, and membranes cut away with a serrated knife and the flesh cut into sections
1 large banana, cut crosswise into 1/4-inch-thick slices
1 cup milk
1/2 vanilla bean, split lengthwise
1 large whole egg
1 large egg yolk
1/2 cup granulated sugar
3 tablespoons all-purpose flour
2 tablespoons dark rum, or to taste
1/3 cup well-chilled heavy cream
sifted confectioners' sugar for sprinkling the gratins

Steps:

  • Divide the grapefruit sections and the banana slices among four 6-inch (1- to 1 1/4-cup-capacity) gratin dishes. In a small saucepan combine the milk and the vanilla bean and bring the milk just to a boil. While the milk is heating, in a metal bowl whisk together the whole egg, the egg yolk, the granulated sugar, the flour, sifted, and a pinch of salt. Add the milk mixture in a stream, whisking. Transfer the pastry cream to the pan, bring it to a boil, and simmer it, whisking, for 2 minutes.
  • Force the pastry cream through a fine sieve into a bowl, discarding the vanilla bean, whisk in the rum, and let the pastry cream cool slightly. In another bowl with an electric mixer beat the heavy cream until it holds stiff peaks, whisk a small amount of the whipped cream into the pastry cream, and fold in the remaining whipped cream gently but thoroughly. Pour one forth of the cream mixture into each gratin dish, spreading it to cover the fruit completely, and sprinkle each gratin with some of the confectioners' sugar. Arrange the gratins in a large baking pan and broil them under a preheated broiler about 4 inches from the heat for 2 to 4 minutes, or until they are browned and heated through.
